Ingredients

  • 1 & 1/4 teaspoon ground cinnamon
  • 1 recipe Snickerdoodle Blondies, baked and completely cooled

For Dipping:

  • 2 cups semi-sweet chocolate chips*
  • 2 tablespoons coconut oil*
  • Sprinkles, optional, for decoration

Instructions

  1. Prepare the Ganache: In a small microwave-safe bowl, heat the heavy cream for approximately 1 minute, or until small bubbles begin to form around the edges. Remove from microwave, add the chocolate chips and cinnamon, and stir continuously until the mixture is smooth and fully combined.
  2. Portion the Ganache: Line a baking sheet with wax paper or parchment paper. Using a small spoon or a mini cookie scoop, dollop 1-2 teaspoons of the ganache onto the prepared baking sheet. Aim for about 30-35 individual portions.
  3. Chill the Ganache: Place the baking sheet with ganache portions into the freezer or refrigerator for 1-2 hours, or until the ganache is firm and solid. This step is crucial for easy handling.
  4. Prepare the Blondies: Bake the Snickerdoodle Blondies according to the recipe instructions, being careful not to overbake them, as this can make them dry. Allow the blondies to cool completely. Once cooled, cut them into small squares, roughly 35 pieces. Gently break off any tougher edges of the blondies with your fingers; this makes them easier to flatten and shape.
  5. Assemble the Truffles: Take one square of blondie and use your hands to flatten it out into a disc. Place one frozen ganache ball in the center of the flattened blondie.
