The Heart of the Bread: California Walnuts

It’s no exaggeration to say that California is the heartland of walnuts. In fact, if you have a bag of walnuts in your pantry right now, there’s a strong possibility they originated from the fertile valleys of California. Having grown up in California, surrounded by vast orchards—my own grandfather was an almond farmer, and my grandma still resides deep within the agricultural landscape—I have an innate connection to these incredible nuts. It’s a heritage that’s quite literally in my blood, and the orchards we visited were just a stone’s throw, about 20 minutes, from my childhood home.

A while back, I received an invitation from Diamond of California to tour their orchards during the peak harvest season and visit their processing plant. The offer to enjoy nuts alongside a group of fellow food enthusiasts was an irresistible opportunity! I jumped at the chance, eager to delve deeper into the journey of these remarkable nuts from tree to table.

The experience was genuinely fascinating. I had the pleasure of connecting with other amazing food bloggers and listening to various nut growers share mind-boggling statistics about the scale of their operations. It’s one of those moments where the numbers are so vast, your brain struggles to comprehend them, much like trying to grasp the immense distances in outer space. While I confess to not being the best at taking notes, the overwhelming takeaway was clear: California produces an astronomical amount of nuts!

Among the many highlights, witnessing the tree shakers in action was particularly memorable. These specialized trucks drive up to each walnut tree, gripping its trunk with a high-tech claw, then vigorously shake it until a cascade of walnuts rains down onto the ground. It truly resembles a surreal “walnut rain.” It made me appreciate modern farming methods, especially when considering that in days gone by, farmers would climb the trees and use heavy mallets to knock the nuts loose. I’ll gladly choose the walnut rain over that labor-intensive approach, thank you very much!

The subsequent visit to the processing plant, where all the nuts are packaged, was equally impressive. The sheer size of the facility was astounding; I had never seen so many nuts in one place! Although cameras were not permitted inside, I managed to snap a quick photo of myself and Sarah from Snixy Kitchen donning our hard hats. It was an awesome sight, offering a unique glimpse into the journey of these delicious walnuts before they make their way to our kitchens.

The Inspiration: Cranberry Orange Walnut French Toast

The inspiration for this delectable Cranberry Orange Walnut Bread stems from a truly unforgettable breakfast experience. Once upon a time, my husband Eric and I found ourselves waiting nearly two hours for a table at a renowned breakfast spot in San Francisco. After such a long wait, you start to question if any breakfast could truly be worth the patience. But then, we tasted it: CRANBERRY ORANGE WALNUT FRENCH TOAST. Oh, my friends, it was nothing short of heavenly. That divine combination of tart cranberries, bright orange, and crunchy walnuts created a flavor profile that lingered long after the last bite.

I yearned to recreate that magical flavor, but to my dismay, I hadn’t frozen any cranberries the previous year. You should have seen the little jig I did in Costco a few weeks ago when I spotted fresh cranberries back in season! That joyful discovery meant I could finally embark on my mission to capture that iconic taste. While the French toast recipe will follow soon, it all starts with this incredible Cranberry Orange Walnut Bread. This quick bread is utterly delicious on its own, especially when toasted to a golden crisp and generously slathered with butter. It’s the perfect canvas for that dream French toast, but honestly, it shines bright all by itself.

The holiday season always ignites a love affair with cranberries for me, and this Cranberry Orange Walnut Bread has earned a permanent spot on my annual must-make list. It stands proudly alongside other beloved recipes like my Cranberry Cake with Warm Vanilla Butter Sauce and the decadent Brown Butter Cranberry Tart. The beauty of this recipe lies in its simplicity. You don’t need to meticulously chop every single cranberry; a rough chop is perfectly fine, allowing for delightful bursts of tartness. And when it comes to walnuts, remember those high-quality Diamond of California nuts we talked about? No need for extra chopping there either; just toast them straight from the bag to enhance their flavor and crunch.

Cranberry Orange Walnut Bread from The Food Charlatan
This quick bread is so easy to throw together, and the cranberry-orange combo really packs a punch. The perfect fall breakfast or snack!

Ingredients

  • 1/2 cup walnuts, chopped, toasted
  • 2 tablespoons orange zest
  • 1/2 cup orange juice, freshly squeezed
  • 1/2 cup half and half
  • 2 cups flour, spooned and leveled
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 large egg
  • 1/3 cup oil
  • 1 teaspoon vanilla bean paste, or regular vanilla extract
  • 1 cup cranberries, fresh or frozen, roughly chopped

Instructions

  • Start by toasting the walnuts. Add a half cup to a small dry frying pan and set to medium heat. Stir occasionally until the nuts become fragrant and barely start to brown, about 5 minutes. Set aside and cool completely. This step enhances their natural nutty flavor.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9×5 inch loaf pan with parchment paper, allowing some overhang on the sides for easy removal, or grease it very well. Set aside.
  • Zest the two oranges directly into a large mixing bowl. The zest contains concentrated orange oil for maximum flavor.
  • Juice the zested oranges into a glass measuring cup until you have 1/2 cup of fresh orange juice. Add the 1/2 cup of half and half to the orange juice, stir gently to combine, and set this liquid mixture aside.
  • In the large bowl containing the orange zest, whisk together the flour, white sugar, brown sugar, salt, baking soda, and baking powder until well combined.
  • In a separate medium bowl, whisk together the large egg, the oil, and the vanilla bean paste (or vanilla extract) until smooth.
  • Add the roughly chopped cranberries and the completely cooled toasted walnuts to the dry flour mixture. Stir gently to coat them evenly with flour; this prevents them from sinking to the bottom of the loaf. Then, add the combined wet ingredients (orange juice/half & half mixture and egg/oil/vanilla mixture) to the flour mixture. Stir until just barely combined. Be careful not to overmix, as this can lead to a tough bread. A few streaks of flour are acceptable.
  • Pour the prepared batter evenly into the lined or greased loaf pan. Bake in the preheated oven at 350 degrees F (175 degrees C) for 30 minutes.
  • After 30 minutes, carefully remove the bread from the oven and loosely cover the top with a piece of aluminum foil. This prevents the top from browning too quickly while the inside finishes baking. Return to the oven and bake for another 15-25 minutes. The bread is done when a wooden toothpick or skewer inserted into the center comes out clean.

Notes

You don’t need to chop the cranberries perfectly; leaving some whole adds wonderful bursts of flavor. While the recipe calls for 1 cup, I often prefer to add a full 2 cups of cranberries for extra tartness and fruitiness, and it’s still incredibly delicious. Feel free to adjust to your preference!
