These Halloween treats are super easy, plus you can make them ahead of time so that you have more time for partying. Crushed Oreos are layered with a 3-ingredient no bake cheesecake that you can tint any color you want.

  1. In a large mixing bowl or stand mixer, beat the cream cheese on high until it is wonderfully fluffy, at least 2 minutes. Remember to scrape the sides and bottom of the bowl well to ensure everything is evenly mixed.
  2. Next, add the entire can of sweetened condensed milk and the vanilla (or vanilla bean paste for a richer flavor) to the bowl. Continue to beat until the mixture is completely smooth and well combined, with no lumps remaining.
  3. Now for the fun part: add your chosen gel food coloring. Start with a small amount and gradually add more until you achieve your desired spooky hue. Keep in mind that gel food coloring often intensifies after a few minutes, so it’s always safer to start small. Beat thoroughly to distribute the color evenly throughout the cheesecake mixture.
  4. Prepare your “graveyard dirt” by crushing the Oreos. You can do this quickly in a food processor or by placing them in a ziplock bag and smashing them with a rolling pin until fine crumbs are formed.
  5. Assemble your parfaits: In clear glasses or jars, create alternating layers of the crushed Oreo crumbs and the colored cheesecake mixture. You can also add various candies between layers if you wish to create more texture and flavor surprises.
  6. To craft the charming graham cracker tombstones, use a knife to carefully cut a quarter of a graham cracker, rounding the top edges to resemble a classic headstone shape. Transfer store-bought frosting to a plastic bag, snip off a tiny corner, and pipe “RIP” or other spooky messages onto your graham cracker tombstones. For an authentic graveyard look, make sure your final layer in the glass is Oreo crumbs, serving as the perfect “dirt” for your tombstones to rest in.
  7. Store your finished Halloween Cheesecake Parfaits in the refrigerator until you are ready to serve them. This allows the cheesecake to set completely and ensures they are perfectly chilled and delicious for your party.

Notes

*I used black gel food coloring for my batch, and it came out a vibrant purple. Don’t worry if this happens – purple is still a fantastic Halloween color, and I embraced it! Gel food coloring can intensify in color after just a few minutes, so if you’re unsure about the shade, give it a little time to develop before adding more.
