My own enthusiasm for Valentine’s Day typically hovers around a moderate 5 out of 10. I certainly don’t dislike it, but you won’t find my blog overflowing with a million heart-shaped, sprinkle-laden recipes like some others. My gift expectations are modest; I’d much rather savor a classic pan of Browned Butter Brownies than bake cookies dotted with red and pink Valentine’s M&M’s. Simplicity often wins when it comes to expressing affection, and sometimes, the most cherished moments are the ones spent enjoying simple, delicious food at home.

  • Begin by preparing the cheesecake filling. In a stand mixer or a large bowl, beat the softened cream cheese until it is completely smooth and free of any lumps. Incorporate the egg, 1/3 cup granulated sugar, and a pinch of salt. Gently fold in 6 ounces of mini chocolate chips (approximately a little more than half of a standard 10-ounce bag; no need for precise measurement). Scrape this mixture into a separate bowl and set aside.
  • Using the same mixer bowl (no need to wash), add 1 cup granulated sugar, all-purpose flour, cocoa powder, baking soda, and 1/2 teaspoon salt. Whisk these dry ingredients together thoroughly. Then, add the water, vegetable oil, sour cream, white vinegar, and vanilla extract.
  • Beat the mixture until all ingredients are well combined and the batter is smooth. Gently fold in the remaining 4 ounces of mini chocolate chips.
  • Line about 20 cupcake tins with paper liners (consider using these heart-themed liners for an extra festive touch!). Add approximately 1 tablespoon of the chocolate cupcake batter into the bottom of each liner.
  • Place one tablespoon of the cheesecake filling directly on top of the cupcake batter in each liner.
  • Divide the remaining chocolate batter evenly among the cupcakes, ensuring that the cheesecake filling is mostly covered. A little peeking out is perfectly fine and will not impact the final result.
  • Bake for approximately 19-23 minutes at 350 degrees F (175 degrees C), or until a toothpick inserted into the chocolate cake portion comes out clean. It’s important to check several cupcakes, as melted chocolate chips can sometimes make the toothpick appear wet even when the cake is fully baked.
  • Allow the cupcakes to cool completely on a wire rack. For quicker cooling, you can place them in the freezer for about 20 minutes.
  • Open the can of cherry pie filling, stirring it gently to ensure even distribution of cherries.
  • Using a small paring knife, carefully cut heart shapes into the center of each cupcake, about 1/2 to 1 inch deep. Gently scoop out the heart-shaped piece of cake. Try not to eat all 20 pieces at once!
  • Before filling, use a sifter to dust the tops of the cupcakes with a light, even layer of powdered sugar. This adds an elegant finish.
