  • Broil the cheesy beans for 2-4 minutes. Keep a very close eye on it! After 2 minutes, begin checking every 30 seconds. Broiling can quickly turn from perfectly golden to burnt. Remove the pan when the cheese is fully melted, bubbly, and beautifully browned in spots.
  • Serve hot with plenty of crusty French bread!
  • Storage: Store any cooled leftovers covered in an airtight container in the fridge for up to 4-5 days. Reheat gently in the microwave, or for best results, transfer to a pan, heat on the stove, add more cheese, and re-broil for a few minutes.
  • Freezing: These beans freeze exceptionally well! Add any cooled leftovers to a freezer-safe ziplock bag, remove excess air, and seal. Freeze for 2-3 months. Thaw in the fridge overnight. To reheat, add to an oven-safe pan, heat on low (add water if too thick), then add fresh cheese and broil as directed until melted and bubbly.

Notes

*ROSEMARY: If you are using dried rosemary (and skipping fresh rosemary), add 1 teaspoon of dried rosemary along with all the other spices in Step 6.

**CHEESE: This dish is highly adaptable to your cheese preferences. While smoked Gouda is recommended, you can top this bake with any kind of melting cheese you enjoy. Excellent substitutes include mozzarella, Monterey Jack, Fontina, Provolone, Swiss, or Oaxaca cheese.
