Rice Krispies treats get a make over! First brown the butter to get an insane amount of flavor. THEN add chopped cranberries and extra marshmallows for the most buttery, gooey treats ever, plus a tart pop of holiday color! Add these to your cookie plate!

 

Ingredients

  • 5 tablespoons unsalted butter
  • 6 cups mini marshmallows (for melting)
  • 1/8 teaspoon salt
  • 6 cups crispy rice cereal
  • 2 cups mini marshmallows (for stirring in)
  • 1 & 1/2 cups fresh cranberries, roughly chopped
  • Additional mini marshmallows (for topping, optional)
  • Additional whole cranberries (for topping, optional)

Instructions

  • Line an 8×8 or 9×9 inch square pan with parchment paper or foil. Lightly spray with nonstick cooking spray and set aside.
  • In a 3-quart pot or large saucepan, melt the butter over medium heat. Continue to cook, stirring occasionally, until the butter develops a rich, nutty aroma and the milk solids at the bottom turn golden brown. Be careful not to burn it. This process usually takes about 5-7 minutes.
  • Add 6 cups of mini marshmallows and the salt to the browned butter. Stir continually until the marshmallows are completely melted and smooth, creating a uniform, gooey mixture.
  • Remove the pot from the heat. Stir in the crispy rice cereal until it is just barely coated with the marshmallow mixture. Do not overmix.
  • Gently fold in the remaining 2 cups of mini marshmallows and the chopped cranberries. Stir just enough to distribute them without melting the new marshmallows entirely. This is key for that extra gooey texture!
  • Working quickly (as the mixture will set), press about half of the mixture evenly into the prepared pan. If desired, sprinkle a handful of additional mini marshmallows and whole cranberries over this layer.
