Creamy Caulifredo Sauce (Cauliflower Alfredo Sauce) from The Food Charlatan

This creamy cauliflower alfredo sauce tastes parmesan-y and rich, and makes a seriously amazing white sauce for your pasta at a fraction of the calories.

Ingredients

  • 1 tablespoon butter
  • 1 shallot, chopped
  • 1 clove garlic, minced
  • 1 cup cold water
  • 1 & 1/2 cups unsweetened almond milk
  • 1 tablespoon cornstarch
  • 1 tablespoon chicken bouillon*
  • 1 medium head cauliflower, chopped
  • 1 & 1/2 cups packed Parmesan cheese, shredded
  • 2 ounces cream cheese
  • 1/2 teaspoon kosher salt, or more to taste
  • Pepper to taste (I like lots)
  • 1 or 2 pinches cayenne pepper
  • 1 or 2 pinches nutmeg

Instructions

  1. In a wide bottom pot with a lid, melt the butter over medium heat.
  2. Add the shallot and sauté for 3-5 minutes, or until soft and translucent.
  3. Add the garlic and sauté for 1 minute until fragrant. Be careful not to burn it.
  4. Meanwhile, in a glass measuring cup, combine the cold water and almond milk. Whisk in the cornstarch until completely incorporated and smooth. This slurry will help thicken the sauce.
  5. Add the almond milk mixture to the shallots and garlic in the pot.
  6. Stir in the chicken bouillon.
  7. Add the chopped cauliflower to the pot and bring the mixture to a boil.
  8. Reduce the heat to a simmer and cover the pot with a lid. Simmer for 10-15 minutes, or until the cauliflower is very tender and easily pierced with a fork. Remove the pot from the heat.
  9. Add the Parmesan cheese and cream cheese directly to the pot.
  10. Now, it’s time to blend for that signature creamy texture. You can either use an immersion blender directly in the pot (this will yield a slightly less smooth sauce but is very convenient) or carefully transfer the mixture to a standard blender. If using a standard blender, remember to open the small cap on the lid to allow steam to escape, and hold a kitchen towel over the opening to prevent splatters of hot liquid. Blend until completely smooth and creamy, at least for 1 minute.
  11. Return the blended sauce to the pot and turn the heat to low.
  12. Season the sauce with salt and pepper to taste. Adjust as needed until it reaches your preferred level of seasoning.
  13. Stir in the cayenne pepper and nutmeg. Taste again and adjust any seasonings as necessary. Serve immediately over your favorite pasta or use as directed in other recipes.
