This dreamy Creamy Chicken Enchilada Soup tastes like the kind at Chili’s, only better! It is a simple soup that has a unique flavor thanks to Masa Harina (corn flour). There are no veggies in the soup; instead you make Pico de Gallo and serve it as a generous topping! It’s one of my all time favorite soups! Originally published February 27, 2013.

The Ultimate Creamy Chicken Enchilada Soup (Chili’s Copycat)
There’s nothing quite like a warm, comforting bowl of soup to chase away the chill, and when that soup transports your taste buds straight to your favorite Tex-Mex restaurant, it’s a true culinary win. This Creamy Chicken Enchilada Soup is more than just a meal; it’s an experience. Imagine the rich, savory flavors of a classic chicken enchilada transformed into a velvety, luscious soup that rivals, and dare I say, surpasses, Chili’s iconic version. This recipe isn’t just a copycat; it’s an elevated homage, designed for ease, flavor, and pure comfort.
The secret to its unique texture and authentic taste lies in two key ingredients: Masa Harina and Velveeta. Masa Harina, a traditional corn flour, lends a depth of flavor reminiscent of corn tortillas, while Velveeta melts into an impossibly smooth, creamy base that will have you savoring every spoonful. Unlike many soups that are loaded with cooked vegetables, this recipe keeps the soup itself simple, allowing the rich, cheesy chicken broth to shine. The freshness comes from an abundance of vibrant toppings, especially a generous helping of homemade Pico de Gallo, which adds a crucial burst of flavor and texture, making every bite a delightful contrast.

Life, Laughter, and Unexpected Treats
Some days, the universe conspires to remind you that life with a two-year-old is an unpredictable adventure. With my older children now off to school, it’s just me and my youngest, Valentine, at home. Six hours is a surprisingly long time for a curious toddler to find her own entertainment, and sometimes, that entertainment involves a bit of mischief.
Just this morning, I was engrossed in work on the computer, and the silence from Valentine was, frankly, suspicious. Any parent knows that particular quiet often signals trouble. I ventured into the kitchen to find her in an impressive feat of athleticism – she had scaled the top cabinets, monkey-style, to retrieve a forgotten ziplock bag of candy, likely remnants from Easter or some other past holiday. There she sat at the kitchen table, happily indulging. Upon discovery, her immediate reaction was a chorus of “Sorry” followed by a barrage of hugs. How can one possibly resist such a charming, albeit sticky, apology?
This incident, however, doesn’t quite top an earlier escapade. A few weeks prior, I’d put her in a “time-out” in the laundry room for some transgression. In a moment of sheer parental exhaustion, I completely forgot about her. Twenty minutes later, she emerged, her face smeared with what looked suspiciously like dirt. A quick investigation revealed the true nature of her “time-out” activity:

She had, with remarkable determination, climbed the shelves, opened a bulk-sized box of Oreos from Costco, and meticulously licked out all the cream centers. The evidence was undeniable. She just saw this picture of the Oreos and gleefully exclaimed, “That was a time-out!” Clearly, it wasn’t much of a deterrent, judging by her laughter. It feels as if she’s mocking me, the sweet, mischievous genius that she is. Valentine: 2. Mom: 0. It’s moments like these that make me appreciate the simple pleasures, like a hearty bowl of delicious soup.

(It’s a good thing she sometimes sneaks healthy things like tomatoes too, otherwise, I might completely lose my mind!)

A Comforting Classic: The Story Behind the Soup
Today, while Valentine might be enjoying her secret candy stash, I’m planning on indulging in another bowl of this incredible Chicken Enchilada Soup. This soup holds a special place in my heart, and it’s one of those foundational recipes I shared right when I started this blog. It was definitely time for a photo update, but the essence of the recipe remains as cherished as ever. Here’s a little peek into what 2013-Karen had to say about this beloved dish:
This was the first meal Eric’s mom ever made me. It was a few days after Christmas, and I had flown out to Montana to meet Eric’s family for the very first time. I was a nervous 20-year-old, scared to death. Eric and I had been talking seriously about getting married, but we weren’t engaged yet. Meeting a boyfriend’s family is one thing, but meeting the family that might soon become *your* family is a completely different ballgame with much higher stakes.

Turns out, I had absolutely nothing to worry about. Eric’s family is truly wonderful. I probably should have known from the moment I tasted this soup. Only truly awesome people create such awesome food, right? (That’s the mantra I live by!) The fact that I still have such vivid memories of the flavor of this soup, even in such a high-pressure situation, is a genuine testament to its incredible deliciousness. Or perhaps, it’s just a testament to my unwavering obsession with all things food. Either way, it’s a recipe that brings back sweet memories and is utterly delicious.

Essential Ingredients for Your Creamy Chicken Enchilada Soup
Gathering the right ingredients is the first step to creating this unforgettable Creamy Chicken Enchilada Soup. This recipe relies on a few key components that work together to create its signature flavor and luxurious texture. While the list might seem extensive, most items are pantry staples, and the specialized ingredients are easily found. Jump to the recipe card below for precise measurements and detailed instructions.
- Olive Oil: For sautéing our aromatics.
- Onion: Diced to form the flavor base.
- Kosher Salt: Enhances all the other flavors.
- Chili Powder: Adds classic Tex-Mex warmth and a gentle spice.
- Cumin: Earthy and essential for enchilada flavor.
- Garlic: Minced for aromatic depth.
- Chicken Broth: The foundation of our soup. For the best flavor, I highly recommend using Better than Bouillon chicken base, diluted with water. It truly makes a difference.
- Masa Harina: The star ingredient that gives the soup its unique, tortilla-like flavor and contributes significantly to its creamy thickness.
- Enchilada Sauce: A 10-oz can of your favorite red enchilada sauce. This brings a huge punch of authentic enchilada flavor with minimal effort.
- Velveeta: A pound of Velveeta (processed cheese product). Don’t shy away from it! It’s the secret to the unparalleled silky smooth, cheesy texture that makes this soup so addictive.
- Shredded Chicken: Cooked and shredded. Rotisserie chicken is a fantastic shortcut for maximum flavor and minimal fuss.
- Pico de Gallo: This is NOT optional! It’s a critical component, not just a garnish.
- Optional Garnishes: To elevate your bowl: shredded cheddar cheese, crunchy tortilla chips, and creamy sliced avocado.
Understanding Masa Harina: The Secret to Authentic Flavor
If you’re new to masa harina, don’t let the name intimidate you! This ingredient is readily available in the Hispanic foods aisle of most major grocery stores and is an absolute game-changer for this Creamy Chicken Enchilada Soup. It’s what truly sets this recipe apart from others, providing an authentic taste that’s often missing in traditional enchilada soups.
So, what exactly is masa harina? It’s a type of corn flour made from dried corn kernels that have been cooked and soaked in an alkaline solution (a process called nixtamalization), then ground into a fine dough. This dough is traditionally used to make corn tortillas, tamales, and pupusas. When this dough is dehydrated, it becomes masa harina. This unique processing method gives masa harina a distinct, earthy flavor and aroma that cannot be replicated by regular cornmeal or corn flour. It’s truly essential for capturing the authentic taste of Mexican cuisine, and particularly the rich, deep notes found in traditional enchiladas.
The most common brand of masa harina found in the United States is Maseca. It’s widely available and conveniently certified gluten-free, which is excellent news for anyone following a gluten-free diet. When added to this soup, masa harina doesn’t just thicken it; it infuses every spoonful with that unmistakable, savory corn tortilla essence, elevating it far beyond a typical chicken soup. It truly is the secret ingredient that makes this Creamy Chicken Enchilada Soup taste like cheesy, hearty enchiladas in a bowl.

The addition of Masa Harina is truly what gives this soup its unique, rich flavor profile. Do you see this creamy bite in the picture? Most enchilada soup recipes are often broth-based, focusing primarily on the traditional flavors found inside enchiladas like chicken, cheese, and sauce. What makes this particular recipe stand out is its brilliant incorporation of that distinct corn tortilla flavor, thanks to the masa. It creates an incredibly thick and creamy soup, so wonderfully rich that you might not even feel the need to add sour cream at the end. (But, of course, you absolutely still can – it’s your soup, after all!)
Another distinctive characteristic of this Creamy Chicken Enchilada Soup is the deliberate absence of cooked vegetables, save for the humble onion that forms its aromatic base. This unconventional approach results in a soup that, once finished, has an incredibly smooth, almost dip-like consistency. It’s so hearty and flavorful that you might find yourself doing what I do: grabbing a tortilla chip and scooping it directly into the pot for an irresistible taste. Trust me, you won’t regret it – it’s like a warm, cheesy game-day dip in soup form, perfect for dipping and savoring.
Crafting Your Perfect Bowl: How to Make Creamy Chicken Enchilada Soup
Despite its rich flavor and decadent texture, this Creamy Chicken Enchilada Soup is surprisingly simple to make, perfect for a weeknight meal or an impressive potluck dish. The process is straightforward, with much of the cooking time being hands-off simmering, allowing you to prepare your crucial toppings. Here’s a quick overview of how we bring this delicious soup to life:
We begin by sautéing diced onions in olive oil until they are soft and translucent, creating a sweet and savory base. Next, we introduce a blend of aromatic spices – salt, chili powder, and cumin – allowing them to toast briefly with the onions to release their full fragrance and flavor. Minced garlic joins the party for another quick sauté until it’s wonderfully fragrant, but not browned.
The next step is crucial for the soup’s unique texture: whisking the masa harina into water until completely smooth. This prevents any unwanted lumps and ensures a silky consistency. Once the masa mixture is smooth, it’s added to the pot along with flavorful chicken broth and a can of your favorite enchilada sauce. This combination forms the robust liquid foundation of our soup.
The final touch for ultimate creaminess and cheesiness is the addition of chopped Velveeta. As the soup comes to a gentle boil, the Velveeta melts seamlessly, creating that signature velvety texture. Once it reaches a boil, the heat is reduced, and shredded chicken is stirred in. If you’re using a rotisserie chicken, a chef’s trick is to add a few larger bones to the simmering soup; they’ll infuse even more incredible chicken flavor as the soup thickens.
The soup then simmers for 30-40 minutes, allowing all the flavors to meld and the soup to achieve its perfect thick, creamy consistency. While your soup is bubbling away, you’ll have plenty of time to prepare the fresh garnishes that truly make this dish sing: shredding extra cheese, slicing creamy avocado, and, most importantly, making a batch of fresh Pico de Gallo.

Speaking of garnishes, the fresh Pico de Gallo is paramount. I shared my favorite recipe for Pico de Gallo earlier this week, and I cannot stress enough how essential it is to this soup. It’s not merely an “optional” garnish like shredded cheddar cheese or a dollop of sour cream; it is a required component that truly elevates the flavor profile and adds a necessary textural contrast. The bright, fresh tang of tomatoes, onions, cilantro, and lime in the Pico de Gallo cuts through the richness of the creamy soup beautifully. It’s also a fun twist to add fresh, uncooked vegetables at the very end of a soup recipe, rather than cooking them in from the beginning. This approach guarantees vibrant flavor and a delightful crunch in every bite.

And let’s not forget the Velveeta. While some might raise an eyebrow at this processed cheese product, I urge you, my friends, to embrace it wholeheartedly for this recipe! Velveeta is the key to achieving the most incredibly creamy, smooth, and cheesy soup texture that simply can’t be replicated with other cheeses. It melts like a dream, incorporating seamlessly into the broth without any graininess, delivering that unmistakable restaurant-quality richness that makes this soup an absolute favorite.
A Decade of Deliciousness: Revisiting a Favorite
For old time’s sake, here’s a look at the very first photo I took of this soup when I initially posted the recipe back in 2013. It’s a testament to how long this recipe has been bringing comfort and joy to our kitchen!

This soup isn’t just for cozy nights in; it’s a fantastic dish for entertaining. While it might seem early to think about, if you’re planning a Halloween party or any festive gathering later in the year, this soup is a brilliant choice. It’s always a huge winner at potlucks, and guests consistently ask for the recipe. Its comforting and familiar flavors appeal to almost everyone, and the ability to customize toppings makes it a fun, interactive meal.

Creamy Chicken Enchilada Soup (Chili’s Copycat Recipe)

Ingredients
- 2 teaspoons olive oil
- 1 large onion, diced
- 1 teaspoon salt
- 1 & 1/2 teaspoons chili powder
- 1 & 1/2 teaspoons cumin
- 2 cloves garlic, smashed and minced
- 5 cups chicken broth
- 2 cups water
- 1 cup masa harina
- 1 (10-oz) can enchilada sauce, any kind you like
- 1 pound Velveeta, chopped into 1-2 inch chunks
- 1 pound shredded chicken, I love rotisserie chicken*
- Salt and pepper
- Pico de Gallo, to serve with soup, not optional
For garnish
- shredded cheddar cheese
- crumbled corn tortilla chips
- sliced avocado
Instructions
-
In a large soup pot, heat 2 teaspoons olive oil over medium-high heat. Once hot, add the chopped onion. Sauté the onion for about 4 minutes, stirring occasionally, until it becomes translucent and begins to soften.
-
Stir in 1 teaspoon of salt, along with 1 and 1/2 teaspoons each of chili powder and cumin. Cook for about 30 seconds, stirring, to toast the spices and release their aromas.
-
Add the minced garlic to the pot. Sauté for another 30 seconds, or just until the garlic becomes fragrant. Be careful not to let it brown or burn.
-
Pour in 5 cups of chicken broth. For an intensely flavorful broth, I highly recommend combining water with Better Than Bouillon Chicken Base – it’s my go-to product every time a recipe calls for broth.
-
In a separate medium bowl or large measuring cup, add 2 cups of water. Gradually add 1 cup of masa harina to the water, whisking constantly until the mixture is completely smooth and free of lumps. This crucial step prevents the soup from becoming grainy. Once smooth, pour the masa mixture into the soup pot.
-
Add the entire can of enchilada sauce and the chopped Velveeta to the pot. Increase the heat to high and bring the mixture to a rolling boil, stirring every now and then to ensure the Velveeta melts smoothly and evenly.
-
Once the soup has reached a steady boil, reduce the heat to medium-low.
-
Stir in the shredded chicken. If you’ve just shredded a rotisserie chicken, a great tip for extra flavor is to add a few of the larger chicken bones to the pot. They will impart even more delicious chicken flavor as the soup simmers. Remember to remove them before serving!
-
Allow the soup to simmer gently for 30-40 minutes, stirring occasionally. This simmering time is essential for the flavors to fully meld and for the soup to achieve its characteristic rich, thick, and creamy consistency.
-
While the soup simmers, prepare the Pico de Gallo. Click here for the detailed recipe to make this essential topping.
-
Serve the soup hot, garnished with a generous amount of fresh Pico de Gallo. As mentioned, this is a required component of the soup, offering a burst of freshness and texture that perfectly complements the rich, creamy base.
-
For an extra flourish, offer optional toppings such as shredded cheddar cheese, crumbled corn tortilla chips for crunch, and creamy slices of avocado. Enjoy your homemade Creamy Chicken Enchilada Soup!
