These soft and chewy Sugar Cookie Bars are the stuff of dreams!! Adapted from my all time favorite soft sugar cookie recipe, these bars have a secret ingredient that make them supremely chewy. The thick layer of buttercream frosting on top makes them irresistible! 

Ingredients

  • 3/4 cup salted butter, softened (1 and 1/2 sticks)
  • 4 ounces cream cheese, softened
  • 1 & 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 & 3/4 teaspoons almond extract
  • 1 teaspoon salt
  • 2 & 3/4 cups all purpose flour, spooned and leveled
  • 1 tablespoon cornstarch
  • 1 batch of Buttercream Frosting for Sugar Cookies

Instructions

  • Preheat your oven to 350 degrees F (175 C). Line a 9×13 inch glass pan with parchment paper or foil, ensuring some overhang on the sides. This will create “handles” to easily lift the bars out of the pan for clean slicing. If using foil, remember to spray it with nonstick cooking spray. Alternatively, you can simply grease the pan directly with nonstick spray.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the 3/4 cup softened butter on medium speed until it is light, soft, and fluffy. This should take about 1-2 minutes. Make sure to scrape down the sides of the bowl at least once to ensure everything is evenly mixed.
  • Add the 4 ounces of softened cream cheese to the butter mixture. Continue beating for another minute until the cream cheese is fully incorporated and the mixture is smooth and creamy.
  • Pour in the 1 and 1/2 cups of granulated sugar and beat well for 1-2 minutes until the mixture is light and fluffy. Again, don’t forget to scrape down the sides of the bowl to ensure all ingredients are thoroughly combined.
  • Add the 1 large egg, 1 teaspoon vanilla extract, and 1 and 3/4 teaspoons almond extract to the bowl. Beat thoroughly until just combined. Use a spatula (like my favorite spatula that I use for all my baking!) to scrape down the sides and bottom of the bowl, ensuring no unmixed ingredients remain.
  • In a separate bowl, whisk together the 1 teaspoon salt, 2 and 3/4 cups all-purpose flour (remember to spoon and level your flour for accuracy), and 1 tablespoon cornstarch. Gradually add this dry mixture to the wet ingredients, beating on low speed until just barely combined. Overmixing will develop the gluten in the flour, resulting in tough bars, so stop as soon as the flour streaks disappear. Scrape the sides and bottom of the bowl one last time.
  • Transfer the dough to your prepared 9×13 inch pan. To easily press the dough evenly into the pan without it sticking to your hands, lightly wet your hands (then shake off excess water) or grease them with a little nonstick spray. Press the dough firmly and evenly across the bottom of the pan to create a uniform layer.
  • Bake at 350 degrees F (175 C) for approximately 25-30 minutes. Baking times can vary depending on your oven, so keep a close watch. The bars are ready when the edges are just beginning to turn golden, and the center no longer appears shiny or wet. It is extremely important not to overbake these sugar cookie bars, as doing so will cause them to become dry and crumbly instead of wonderfully soft and chewy. A toothpick inserted into the center should come out clean, without any wet dough attached. If you are using a metal baking pan, you may find that your bars bake a couple of minutes faster than in a glass pan.
  • Once baked, remove the pan from the oven and let the bars cool completely on a wire rack. This step is crucial! Do not attempt to frost the bars while they are still warm, as the frosting will melt and create a messy result. For faster cooling, you can place the pan in the freezer once it has cooled enough to handle.
  • Once the bars are completely cool, top them generously with one batch of The Best Buttercream Frosting for Sugar Cookies! Spread it evenly across the top using an offset spatula. Feel free to add sprinkles or other festive decorations at this stage.
  • To achieve perfectly clean, professional-looking slices like those in the photos, carefully slice off about an inch from all four edges of the frosted slab (these “scraps” are a delicious chef’s treat!). Then, use a sharp knife to cut the remaining slab into your desired bar size, wiping your knife clean with a damp cloth or paper towel before each cut. This ensures neat, un-smeared edges on every bar.
