These ultra-rich, decadent brownies are given just the right fall touch with a swirl of pumpkin cream cheese on top. Go ahead, just try and eat 2 of these.

Ingredients

For the brownies:

  • 1 & 1/4 cups butter, 2 and 1/2 sticks salted butter
  • 2 & 1/4 cups granulated sugar
  • 1 & 1/2 cups unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon water
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1 cup all-purpose flour, spooned and leveled
  • 1 cup semi-sweet chocolate chips, high quality *

For the cream cheese swirl:

  • 8 ounces cream cheese, softened
  • 3/4 cup pumpkin, canned
  • 1/2 teaspoon vanilla
  • 1/2 cup sugar
  • orange food coloring

Instructions

  1. Preheat oven to 350 degrees F.
  2. Prepare a 9×13 baking dish by lining with parchment paper or foil and then spraying with non-stick cooking spray. Alternatively, simply spray the pan thoroughly.
  3. Melt butter in a large saucepan over medium heat, stirring occasionally. The butter will foam up, then settle down and begin to form brown-colored milk solids, or “bits.” When it reaches a beautiful light brown hue and emits a nutty, inviting aroma, it’s perfectly browned.*
  4. While your butter is browning, combine granulated sugar, cocoa powder, and salt in a large bowl or the bowl of a stand mixer.
  5. Once the butter is nicely browned, immediately pour it into the bowl with the sugar and cocoa mixture to stop the cooking process (this prevents it from burning). Beat the mixture until it is smooth and creamy.
  6. Add the water and vanilla extract. Then, add the eggs one at a time, mixing well after each addition until just combined.
  7. Gently fold in the all-purpose flour and semi-sweet chocolate chips until just incorporated. The batter will be quite thick, almost like cement. Don’t resist the urge to taste it—it’s absolutely incredible!
  8. Use a sturdy rubber spatula to evenly spread the thick brownie batter into the prepared baking pan.

To make the cream cheese swirl:

  1. In a separate (or rinsed) bowl, beat the softened cream cheese until it is completely smooth. Add the canned pumpkin puree, vanilla extract, and granulated sugar, then beat again until the mixture is smooth and well combined.
  2. Add orange food coloring gradually to achieve your desired shade of orange. I highly recommend using gel food coloring as it provides vibrant color without affecting the liquid consistency of the mixture.
  3. Carefully pour the pumpkin cream cheese mixture over the brownie batter in the prepared pan and gently spread it to the edges.
  4. Now for the creative part: use a spatula or a butter knife to create swirls in the pumpkin and brownie layers. This can be a bit challenging due to the brownie batter’s thickness, but simply do your best to create beautiful marbled patterns.
  5. Bake at 350 degrees F for 45-48 minutes. The brownies are done when a toothpick inserted into the center comes out clean and the center no longer jiggles when you gently shake the pan.
  6. Allow the brownies to cool completely in the pan before cutting into squares. While they are delightful warm, they are equally delicious at room temperature or chilled, offering a chewier texture.

*Note that you don’t HAVE to brown the butter if you don’t want to. You could just melt it, but you would truly be missing out on the unique depth of flavor browned butter provides. Trust me on this one!
