My birthing experience this time around was certainly memorable, though perhaps not in the way one plans. I’m definitely not one of those natural childbirth gurus; if you are, hats off to you! But I’ll happily take my epidural, thank you very much. This time, however, things moved incredibly fast. We arrived at the hospital at 7:40 AM, and Truman was born at 8:02 AM. I absolutely do not recommend this whirlwind pace, especially when the only pain relief I had was Tylenol, which, let’s be honest, has about the same effect as drinking a glass of water during labor! So, I guess I can now say I’ve experienced it. And I can also confidently say that next time, I’ll be camping out in the hospital parking lot as soon as I feel even the slightest flutter of a contraction.

He did have a bit of a scare with some breathing problems right after birth, which was incredibly frightening for a new mom. But after a couple of days in the intensive care unit, our little fighter is perfectly fine and thriving. We are all happily home now, and I’m slowly coming to terms with the joyous chaos that ensues when your children officially outnumber you. These Oreo Cheesecake bars are absolutely STUFFED with Oreos. The texture of the cheesecake is perfect, and did I mention these are in bar form? That means you can eat them with your hands and it’s socially acceptable. WIN.

Ingredients

For the Crust:

  • 23 Oreo cookies
  • 2 tablespoons butter, melted

For the Cheesecake:

  • 12 ounces cream cheese, at room temperature
  • 1 cup granulated sugar
  • 3 eggs, at room temperature
  • 6 tablespoons sour cream
  • 1 & ½ teaspoons vanilla extract
  • 12 Oreo cookies, coarsely chopped

Instructions

  1. Preheat oven to 325 degrees F. Line an 8×8-inch square baking pan with foil or parchment paper, allowing it to hang over two of the sides for easy lifting.
  2. Make the Crust: Pulse the Oreo cookies in a food processor until they are transformed into fine crumbs. Drizzle the melted butter over the top and pulse a few more times until the butter is evenly distributed and all of the crumbs are moist. Press this mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake for 10 minutes, then remove from the oven and set aside. Keep the oven on for the cheesecake filling.
  3. Make the Cheesecake: In a large mixing bowl, using an electric mixer, beat the softened cream cheese on medium-high speed for about 2 minutes until it becomes completely smooth and creamy, with no lumps.
