Browned Butter Blondies with Sea Salt Butterscotch Caramels: A Speedy & Irresistible Treat

Life can be a whirlwind, a constant juggle of responsibilities and demands that often leave little time for the small joys. Whether it’s managing a busy household, focusing on a growing career, or simply navigating the daily hustle, finding moments for oneself, let alone for elaborate baking projects, can feel like an impossible task. Yet, there’s an undeniable satisfaction in creating something delicious from scratch, especially when it brings comfort and a touch of indulgence to an otherwise hectic day. These irresistible Browned Butter Blondies, generously studded with sea salt butterscotch caramels, are the perfect answer to that craving for homemade goodness without the extensive commitment. They are a testament to the fact that extraordinary flavor doesn’t always require extraordinary effort.

In a world that often demands perfection, sometimes it’s the imperfect, real-life moments that truly resonate. I recently found myself in a relatable struggle—trying to embrace a little bit of “girly” self-care by painting my nails a vibrant hot pink. Five fingers done, and then reality hit: a mountain of diapers, faces to wipe, pigtails to comb, and a seemingly endless list of chores. The other hand remains unpainted, a small but honest reflection of the beautiful chaos that defines my days. And you know what? That’s perfectly okay. Life isn’t always polished, and neither are my nails, but that doesn’t stop me from finding joy in the simple, sweet things – like these incredible blondies.

This journey of balancing life and passion often mirrors the evolution of my little corner of the internet, this blog. It’s been amazing to see how much it has grown, especially recently. This month alone, the traffic has soared to 30 times what it was last January, and even three times the previous month’s numbers. This growth brings a tidal wave of feedback, which I absolutely adore. I cherish comments like Linda’s, who wrote, “I just found your site today and have spent over two hours here so far.” Linda, if you’re reading this, you are truly my favorite, and I would absolutely make you a fresh batch of these blondies in a heartbeat. I’m not kidding!

But with all the wonderful comments, there are also those delightful reality checks. The other day, a kind reader (with a keen eye!) pointed out my “atrocious chipped nails” in some older photos, specifically referencing my Cilantro Lime Cucumber Salad post. Message received, loud and clear! I know, I know, I’m not always perfectly put-together. But hey, an effort was made this time around! With Valentine’s Day on the horizon, I thought pink would be a fitting choice for my nails. (Though, to be honest, it was mostly because pink was one of the few non-crusty shades I had available!) I even paused mid-photo shoot, painted my nails, gave them a quick blow-dry, and got right back to capturing these beauties. Just a friendly tip from Captain Obvious: avoid licking chocolate and caramel off your fingers three minutes after painting them. Lessons learned!

Are you gearing up for the Super Bowl? (Confession: I only just found out last Friday that it wasn’t the previous weekend. Yes, really.) The good news is, there’s still plenty of time for you to whip up a batch of these glorious blondies for your game day spread or any occasion that calls for a quick, impressive dessert! If you’ve been following my blog for a while, you’ve probably heard me rave about my Brown Butter Sea Salt Butterscotch Cookies. And for good reason – they are my absolute favorite cookie of all time. However, that recipe does require chilling the dough, which means a couple of hours stand between your craving and that first incredible bite. These blondies are the ultimate solution to that dilemma. You can go from zero to warm, gooey bliss in a remarkable 35 minutes flat. No tedious refrigeration required. Just a simple, straightforward process that delivers unbelievable results.

Now, let’s talk about the secret weapon that elevates these blondies from simply delicious to absolutely divine: the sea salt butterscotch caramels. If you live anywhere near a Trader Joe’s (within, say, an hour’s drive – that’s my final answer!), you absolutely *need* these in your life. Seriously, I could write an entire ode to these tiny nuggets of joy. I’ve made countless special trips to the store with the sole purpose of stocking up on these particular butterscotch caramels. Their unique combination of sweet, buttery butterscotch with a delicate kiss of sea salt creates an explosion of flavor and texture that is truly unparalleled in baked goods. They melt beautifully, creating pockets of gooey caramel goodness throughout each blondie, offering a delightful contrast to the chewy bar.

This recipe builds upon my original Browned Butter Blondies, which are anything but ordinary on their own. The simple substitution of these butterscotch caramels for chocolate chips transforms them into something truly magical. The result is a bar that is wonderfully chewy, incredibly tender, luxuriously soft, and intensely rich, bursting with those delightful pockets of buttery, salty-sweet caramel. I stumbled upon this brilliant combination last summer and have probably made it 7 or 8 times since, with these caramels featuring in at least three of those batches. Initially, I tried slicing each caramel in half, as I do for the cookies, but I quickly discovered that adding them whole creates a more substantial, satisfying caramel chew. Plus, it’s much faster – back to that “git ‘er done” philosophy! The slightly larger caramel pieces create pools of melted, golden butterscotch that spread through the blondie, making every bite an absolute dream. This simple modification not only speeds up the prep time but also enhances the textural experience, proving that sometimes, less fuss leads to more deliciousness.

The foundation of these incredible bars lies in the browned butter. If you’ve never experimented with browning butter, you are in for a revelation. This simple step elevates the flavor profile of any baked good, adding a complex, nutty, toasty aroma and taste that is simply unparalleled. It transforms regular butter into a golden elixir, imparting a depth that plain melted butter simply cannot match. When browning butter, keep a close eye on it: melt the butter over medium heat, stirring occasionally. You’ll notice the foam start to subside, and then golden-brown flecks will begin to form at the bottom of the pan. The kitchen will fill with an incredible nutty aroma. These tiny brown bits are where all the magic happens! Ensure your butter achieves this beautiful, nutty depth; if it’s not quite there, let it cook for a minute or two longer, but be careful not to burn it. This attention to detail in browning the butter is what sets these blondies apart, giving them a sophisticated flavor base that perfectly complements the butterscotch caramels.

Ah, the beauty of these blondies, glistening with those sea salt butterscotch caramels. Every square is a little work of art, promising a burst of flavor with each bite. I truly love these caramels; they are the unsung heroes of this recipe, providing that perfect balance of sweetness and a hint of savory saltiness. To make your life easier when it comes to serving, a little trick of the trade: always line your baking pan with foil or parchment paper. This simple step ensures that your blondies lift out effortlessly once cooled, allowing for clean, perfect squares every time. No sticky situations, just perfectly portioned, delicious treats ready to be devoured.

***2022 UPDATE: Sad news, my fellow bakers! Trader Joe’s no longer carries my beloved Sea Salt Butterscotch Caramels. This truly is a tragedy for caramel lovers everywhere. However, all is not lost! You can still make these incredible blondies by substituting any store-bought chocolate-covered caramels. A fantastic and widely available option would be the Dark Chocolate Sea Salt Caramel squares sold by Ghirardelli. Simply chop them up into bite-sized pieces and incorporate them into the recipe as directed. While they might offer a slightly different nuance with the chocolate coating, the core experience of rich, chewy blondies with gooey caramel will remain. Don’t let the unavailability of one ingredient deter you from experiencing this extraordinary dessert! Get ready to bake and enjoy!

These browned butter blondies are generously studded with delectable butterscotch caramels, creating an unforgettably rich and chewy dessert.
Ingredients
- 1/2 cup salted butter
- 1 cup dark brown sugar, packed
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup all-purpose flour, spooned and leveled
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 7-oz package Chocolate Covered Sea Salt Butterscotch Caramels (or a suitable substitute as per update)
Instructions
-
Preheat your oven to 350°F (175°C). In a small saucepan, melt the butter over medium heat. Continue cooking, stirring or swirling occasionally, until the foam subsides, and the milk solids at the bottom begin to turn golden brown and smell nutty. If you’re new to browning butter, keep a close watch to prevent burning.
-
Immediately remove the browned butter from the heat and pour it into a mixing bowl or the bowl of a stand mixer. This prevents the residual heat from overcooking or burning the butter.
-
Using a wooden spoon or your mixer, stir in the dark brown sugar until well combined. Then, add the vanilla extract, followed by the large egg, mixing until fully incorporated.
-
Add the all-purpose flour to the bowl, but do not mix it in yet. Spoon the baking soda and salt directly onto the flour, then use a small spoon to gently blend them with the flour.
-
Gently stir the flour mixture into the wet ingredients until it’s almost fully combined. At this point, add the sea salt butterscotch caramels (whole, or chopped if using a substitute like Ghirardelli squares). Continue to stir just until there are no more streaks of flour visible, being careful not to overmix.
-
Line an 8×8 or 9×9 inch baking pan with foil or parchment paper, ensuring it hangs over the edges for easy lifting. Lightly spray the liner with nonstick cooking spray. Spread the blondie batter evenly into the prepared pan.
-
Bake for 20-22 minutes at 350°F (175°C), or until the top is golden brown and the center appears set. Allow the blondies to cool in the pan for at least 10-20 minutes before carefully lifting them out using the foil/parchment overhang. These blondies are wonderful once completely cooled, but they are absolutely incredible when served warm, with the caramels molten and gooey. For an extra treat, pop a cooled blondie into the microwave for 10-15 seconds!
Notes
This recipe is designed for an 8×8 or 9×9 inch square pan, yielding deliciously thick blondies. If you wish to make a larger batch for a 9×13 inch pan, simply double all the ingredients. For precise measurements for a larger pan, refer to my original Browned Butter Blondies recipe, then substitute the chocolate chips with the butterscotch caramels as directed above.
