  3. Stack the prepared patties in a freezer-safe ziplock bag or airtight container, ensuring you remove any excess air before sealing.
  4. These raw patties can be frozen for up to 2-3 months without compromising quality.

Thawing and Reheating Frozen Turkey Burgers:

  • To thaw: The safest and most effective way to thaw frozen patties (whether cooked or raw) is to transfer the bag or container from the freezer to the refrigerator overnight. This slow thawing process ensures even defrosting. If you’re in a hurry and the patties are still partially frozen when you pull them from the fridge, you can leave them on the counter for an additional 30-60 minutes to finish thawing completely.
  • Reheating cooked patties: Once thawed, cooked patties can be gently reheated in the microwave at 50% power until thoroughly warmed through, or gently warmed in a skillet with a lid over low heat to retain moisture.
  • Cooking raw patties: Once your raw patties are completely thawed, simply follow the original cooking instructions detailed in the recipe card as if they were freshly made.

It’s my new favorite turkey burger recipe, and it’s perfect for a healthy, quick weeknight meal, ready in just 30 minutes! The secret lies in a few simple tricks like adding Worcestershire sauce, mayonnaise to the meat mixture, and diced green chilies for unparalleled moistness and taste.

Ingredients

  • 2 pounds ground turkey, or ground chicken
  • 2 teaspoons kosher salt, use a little less if you’re using table salt
  • ¾ teaspoon black pepper
  • 1 tablespoon minced garlic, about 4-5 cloves
  • 1 tablespoon mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1 (4 ounce can) diced green chilies*, do not drain, add all the liquid
  • 10 tablespoons panko bread crumbs, (this is ½ cup + 2 tablespoons)
  • 2 teaspoons vegetable oil, for cooking the burgers
  • 8 hamburger buns
  • Butter, for toasting buns
  • 8 slices pepper jack cheese, or your favorite cheese, cheddar is great!
  • 1 recipe Homemade Chipotle Sauce, or sauce of choice, see recipe for options
  • 2 avocados, sliced
  • Lettuce
  • Tomato
  • Fried onions, if you’re feeling fancy

Instructions

  1. Bring meat to room temperature: Allow 2 pounds of ground turkey to sit out on the counter for about 20 minutes before beginning. Cooking meat that is still really cold can cause the muscle fibers to seize up, leading to tough and chewy burgers.
  2. Prepare your sauce: If you are making the Chipotle Mayo or another homemade sauce from scratch, prepare it now and place it in the refrigerator until it is time to serve the burgers.
  3. Prep your fresh toppings: Wash and carefully separate your lettuce leaves. Lay them out on a paper towel-lined plate, then refrigerate to keep them crisp. Slice the tomato and set it aside on the counter. Slice avocados just before assembly to prevent browning.
  4. Make the burger mixture: Add the 2 pounds ground turkey to a medium-sized mixing bowl. Then, add all the remaining patty ingredients (excluding the fresh burger toppings): Evenly sprinkle the meat with 2 teaspoons kosher salt and ¾ teaspoon black pepper. Add 1 tablespoon minced garlic (either freshly minced from 4-5 cloves or pre-jarred garlic), 1 tablespoon mayonnaise, 2 teaspoons Worcestershire sauce, the entire 1 (4-ounce) can of diced green chilies (do not drain, add all the liquid), and 10 tablespoons (which is ½ cup + 2 tablespoons) panko bread crumbs.
  5. Mix the meat together: Using your clean hands (and a disposable glove, if preferred, for easy cleanup!), carefully mix and gently squeeze the meat together with the green chilies, breadcrumbs, and spices until everything is thoroughly combined and well distributed. Be mindful not to overmix, as this can make the burgers tough.
  6. Form the patties: Divide the mixture into 8 even sections. For convenient handling and cleanup, I recommend lining them up on a baking sheet covered with parchment paper. Use your hands to form each section into a uniform patty. Once all patties are formed, firmly press your thumb down into the precise center of each burger to create a distinct, dramatic divot. This essential trick ensures that the burgers cook evenly all the way across and do not mound excessively in the center. (Refer to the photos in the blog post for a clear visual guide.)
  7. Rest the patties: Allow the formed patties to rest briefly while you wash your hands and prepare your cooking surface (either a skillet on the stove or an electric griddle).
  8. Cook the burgers:
    • If using a frying pan on the stove: Set your burner to medium heat. Once the pan is thoroughly hot, drizzle with 2 teaspoons vegetable oil and swirl to evenly coat the cooking surface. Add 3-4 patties at a time (making sure each has at least 1 inch of space around it) and cook for about 4-5 minutes on the first side.
    • If using a griddle: Plug in your griddle and set the temperature to 350°F (175°C). Once hot, proceed by adding the vegetable oil and cooking the patties as described above.
  9. Flip the burgers: Once you observe a decent, golden-brown sear on the first side, carefully flip the burgers to cook the second side. Continue cooking for another 3-5 minutes on the second side, ensuring they cook through evenly.
  10. Add cheese: Approximately 1-2 minutes into cooking the second side, add a slice or two of your chosen cheese to the tops of the burgers. You can cover the pan with a lid toward the end of cooking for a minute or two to help speed up the melting process and achieve a perfectly gooey cheese topping.
  11. Check for doneness: Turkey meat must reach a safe internal temperature of 165°F (74°C) to be considered fully cooked. You can remove the burgers from the pan when they reach about 160°F (71°C), as their internal temperature will continue to rise approximately 5 degrees after being removed from the heat. If you don’t have a meat thermometer, check that the juices run clear when pressed, or slice one in half to visually confirm it’s cooked all the way through with no pink remaining.
  12. Cover and rest: Once fully cooked and the cheese is perfectly melted, transfer the patties to a plate or tray to rest briefly, covering them lightly with foil. If you won’t be eating them immediately, you can keep them warm on a baking sheet in the oven set to the “keep warm” setting (around 170°F / 77°C).
  13. Repeat cooking: Continue the cooking process for the next batch of burgers, adding a bit more oil to the pan if necessary to ensure a good sear.
  14. Butter and toast the buns: Lightly butter the insides of your hamburger buns, then place them butter-side down on the hot griddle or pan. Toast for about 1-2 minutes per side, or until they are lightly golden and pleasantly toasted. Keep a close eye on them, as toasting can happen quickly depending on your cooking surface and the type of buns, and you certainly don’t want burnt buns!
  15. Slice your avocados: Slice your avocados at the very last minute before assembly to prevent them from browning and to ensure their freshest appearance and taste.
  16. Feast! Assemble your ultimate burger: You’re now ready to build your magnificent burger! My absolute favorite way to layer mine is to spread a generous amount of Chipotle mayo (or your chosen sauce) on the bottom bun, followed by crisp lettuce and ripe tomato. Next comes the juicy patty with melted cheese, then perfectly sliced avocado, and finally, a large spoonful of crispy fried onions for an irresistible crunch. Finish with a little more chipotle mayo on the inside of the top bun. Prepare for pure deliciousness!
  17. Serve these turkey burgers with plenty of sauce! Remember, a truly excellent sauce is absolutely crucial for maximizing the enjoyment of these turkey burgers. My personal favorite is our Chipotle Mayo, but there are many other fantastic options available, such as a tangy Homemade BBQ Sauce, fresh Guacamole, creamy Garlic Aioli, a sophisticated Balsamic Vinegar Reduction, or even some good old-fashioned Homemade Ranch Dressing.
  18. To store leftovers: If you have any cooked patties remaining, wait for them to cool completely, then transfer them to an airtight container and place them in the refrigerator. They will remain good there for approximately 3-4 days.
  19. To freeze for future meals: For longer storage, arrange individual cooked patties on a baking sheet and flash freeze them for 30 minutes until firm. Then, transfer them to a freezer-safe ziplock bag or airtight container. To reheat, simply thaw overnight in the fridge and gently warm in the microwave or skillet.

*If you enjoy a spicier burger and prefer more heat, you can substitute the 1 (4-ounce) can of diced green chilies with 1 (4-ounce) can of diced jalapeños for an extra kick.
