Ingredients
- 1 9-inch pie crust
- 1 cup packed sharp cheddar cheese, shredded
- 1/2 leek*, chopped (white and light green parts only)
- 1 (9-oz) box frozen chopped spinach, thawed and squeezed dry
- 1/4 cup fresh basil, chopped
- 4 ounces goat cheese, crumbled
- most of a 10 ounce box of cherry tomatoes, halved
- 6 large eggs
- 1 & 1/4 cups Almond Breeze Almondmilk Original
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Fresh basil, to garnish
Instructions

Preheat your oven to 375 degrees F (190°C). Lightly grease your quiche pan or 9-inch pie pan with nonstick spray or butter.

Carefully arrange the pie crust into the prepared pan. Trim the edges to fit neatly, if necessary.

Evenly sprinkle the shredded cheddar cheese over the bottom of the pie crust.

Prepare the leek: Trim off the dark green tops and the root end. Split the leek lengthwise and rinse thoroughly under cold running water, bending the layers back with your fingers to remove all dirt. Chop one half of the leek into pieces about the size you would chop an onion. Sprinkle the chopped leek evenly over the cheddar cheese. (Save the other half of the leek for another recipe – it’s great in soups or on pizza!)

Take the thawed spinach and firmly squeeze out as much moisture as you possibly can. This step is essential to prevent a watery quiche. Spread the dry chopped spinach over the leeks.

Next, sprinkle the 1/4 cup of fresh chopped basil over the spinach layer.

Crumble the goat cheese using a fork and distribute it evenly over the basil.

Halve most of the cherry tomatoes using a serrated knife. Arrange as many as you can artfully on top of the quiche filling. I typically use all but about 10 tomatoes from a 10-ounce box.

In a large bowl or the bowl of a stand mixer, whisk together the 6 large eggs, Almond Breeze Almondmilk, salt, and pepper. Beat for about 1 minute until well combined and slightly frothy. Gently pour this custard mixture over the prepared quiche filling in the pie crust.

If you are using a quiche pan with a removable bottom, or if your quiche looks particularly full, place the dish on a baking sheet before transferring it to the oven. This will catch any potential leaks or overflows during baking, making cleanup much easier.

Bake in the preheated oven at 375°F (190°C) for 40-50 minutes, or until the top is golden brown and the quiche is set (it should not wiggle in the center when gently shaken).
