There are times when life feels like a constant sprint, and grocery shopping becomes an Olympic event you perpetually defer. I recently emerged from such a period – a grocery store famine, if you will. Two and a half weeks without a proper stock-up, my poor husband making emergency milk runs (not one, but two!). My three-year-old, bless her heart, would ask for apples and bananas, only to be met with my weary, “No, but you can have all the raisins! Every last raisin in the house, and nothing else!” The sheer willpower required to make a meal out of dwindling supplies is real, and it makes you appreciate the simple abundance of a well-stocked pantry and, more importantly, nourishing food.

Today, however, was different. I finally made it to the grocery store. It was a pilgrimage, a leisurely stroll through the aisles, unburdened by tiny acrobats scaling the shopping cart or mischievous hands taking enormous bites of cheese through the wrapper (yes, people, *through the wrapper*). It was glorious. Yet, upon arriving home, the familiar fatigue of “grocery put-away” set in. I managed to sort the freezer and refrigerator items, a rapid fire mission to prevent spoilage, and then, I completely checked out. The remaining bags of produce and pantry staples lay scattered, awaiting a surge of energy that simply wasn’t coming.

This photo, from a few months back, perfectly illustrates the scene. I left my groceries strewn about, as is often my habit, and my son, Truman, a culinary opportunist, found a tomato and went straight for it. The exact same thing happened today. Thief! A gentle reminder that even in the midst of culinary planning, life’s little moments (and snack attacks) persist.

Can you believe Thanksgiving is just around the corner? Or perhaps you’ve just celebrated, and your kitchen is filled with the comforting scent of a holiday well-spent. For me, most holidays revolve around the food, and Thanksgiving is no exception. There’s no pretense, no need for elaborate excuses – the mashed potatoes, the fluffy rolls, and the irresistible pies truly are the reason we gather. It’s a celebration of abundance, shared meals, and the sheer joy of delicious food.

This Turkey Barley Soup is specifically designed as an ideal day-after-Thanksgiving meal. It’s a wonderful way to extend the flavors of your holiday. The evening of Thanksgiving, after the last slice of pie has been devoured, you can easily make turkey stock from the carcass. It’s surprisingly simple – just cover the bones with water, add a few aromatics, and let it simmer on low. I once put mine on to simmer and completely forgot about it, already tucked into bed reading when my husband asked, “Did you intend for the stock to go all night?” (Uhhh, no!). But a long, slow simmer yields the most incredibly flavorful broth. Then, on Friday, with your rich homemade stock, leftover herbs, carrots, and onions, you can effortlessly throw this soup together. It’s easy-peasy, incredibly satisfying, and healthy to boot – a perfect detox after the carb-heavy feasting.

Preparing ingredients for Slow Cooker Turkey Barley Soup with fresh herbs and vegetables

For this recipe, I deliberately chose barley over traditional noodles or rice. I’m still savoring the memory of this incredible Beef Barley Soup I made a few weeks ago, and I was eager to explore a turkey-centric version. Barley was an excellent choice, adding a wonderful chewiness and earthy flavor that perfectly balances the sweetness of carrots and the subtle crunch of celery. It transforms the soup into a substantial, meal-worthy dish that’s both comforting and exceptionally nutritious. The grains absorb the rich turkey broth beautifully, contributing to a thick, satisfying texture without feeling heavy.

Utilize your leftover turkey from Thanksgiving or any holiday dinner to create this incredibly comforting and wholesome barley soup. Start with a rich broth made from the turkey carcass and infuse it with fresh herbs you have on hand. This light yet hearty soup is ideal for recovering from those indulgent mashed potato comas – we know the feeling!

Ingredients

  • 11-12 cups turkey stock, from the bones*
  • 3 cups celery, chopped
  • 2 onions, chopped
  • 5 sprigs fresh thyme
  • 8-9 medium carrots, shredded (about 4 cups total)
  • 1 large potato, peeled and shredded
  • 2-4 cups cooked turkey, shredded or diced
  • 1 cup barley, rinsed
  • 1/2 to 1 teaspoon salt (to taste)
  • 1/2 to 1 teaspoon pepper (to taste)
  • Fresh sage, chopped* (for stirring in before serving)
  • Fresh rosemary, chopped* (for stirring in before serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Stovetop Method: Combine the turkey stock, chopped celery, onions, and thyme sprigs in a large stock pot. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for approximately 30 minutes, or until the celery becomes tender.
  • While the soup simmers, use a food processor or a cheese grater to shred the carrots and potato. Add these shredded vegetables to the pot and bring the soup back to a boil. Reduce the heat to low once more and simmer, covered, for another 30 minutes, or until the carrots are tender.
  • Stir in the cooked turkey (adjust the amount to your preference) and the rinsed barley. Return the soup to a boil, then reduce the heat to medium-low. Allow it to simmer for an additional 45-60 minutes, or until the barley is fully tender and cooked through.
  • Season the soup generously with salt and pepper to taste. The exact amount needed will depend heavily on the saltiness of your turkey stock, so taste as you go.
  • Just before serving, stir in the freshly chopped sage and rosemary. These fresh herbs add a vibrant aroma and flavor that perfectly complements the turkey.

Slow Cooker Instructions:

  • Combine the turkey stock, chopped celery, onions, thyme sprigs, shredded carrots, and shredded potato in your slow cooker. Cook on low for 4-6 hours, or until the vegetables are tender.
  • Add the cooked turkey, rinsed barley, and salt and pepper to taste. Continue to cook on low for another hour, or until the barley is tender.
  • Before serving, stir in fresh sage and rosemary. Garnish each serving with a sprinkle of fresh chopped parsley for a pop of color and freshness.

Notes

*Stock Alternatives: Don’t have homemade turkey stock? No problem! You can still make this delicious soup. Substitute with a good quality chicken stock or even store-bought turkey broth, which is becoming increasingly available. While homemade stock offers the deepest flavor, use what you have readily available.
*Herb Flexibility: Feel free to use any fresh herbs you have leftover from your holiday cooking. Sage, rosemary, and thyme are classic companions to turkey, but parsley and even a bay leaf can also enhance the flavor profile. Adjust quantities to your preference.

Fresh herbs and seasoning for Slow Cooker Turkey Barley Soup

I have a little trick when it comes to celery in soup: I like to chop mine pretty small. This way, it blends seamlessly into the broth, offering its subtle aromatic qualities without an overpowering taste. Actually, let’s rephrase that for the record: it’s to add a delicate texture and depth of flavor! The shredded potato and carrots are essential here, as they naturally thicken the soup, making it wonderfully hearty and filling without needing any added starches. They contribute to a comforting mouthfeel that’s perfect for a chilly day.
