Black Raspberry Oreo Ice Cream: A Summer Sensation

There’s nothing quite like the experience of homemade ice cream, especially when it combines the vibrant, tart sweetness of black raspberries with the universally beloved crunch of chocolate Oreos. This recipe is more than just a dessert; it’s a journey inspired by a truly unforgettable scoop, promising to bring joy and refreshment to your summer days. Forget those bland, store-bought cartons – this is rich, creamy, and bursting with flavor that will have everyone coming back for more.

The Inspiration Behind the Scoop: A Sacramento Gem

My husband, Eric, and I share a deep-seated obsession with Gunther’s, an iconic ice cream shop in Sacramento. This legendary establishment, which has been serving up delightful frozen treats for over 70 years, is a must-visit if you ever find yourself in the area. Any excuse, particularly when friends are visiting from out of town, is a good one to make the pilgrimage to Gunther’s. It’s more than just an ice cream shop; it’s a piece of local history and a purveyor of pure happiness.

Gunther’s is renowned for its monthly special flavors. They always manage to conjure something incredibly creative and exciting, but never in a way that’s outlandish or unappetizing. You won’t find any bizarre asparagus or corn ice cream here – only masterful combinations that ignite your senses. Although, I must admit, a part of me remains curious about corn ice cream!

Their specials are designed to make your knees go weak with delight. Flavors like “Cinna-Man” – a divine cinnamon ice cream swirled with gingerbread (a personal favorite I’m determined to replicate for the blog someday!) – or the tantalizing “Caramel Crackle Crunch,” “Blueberry Cheesecake,” and “Strawberry Nutella.” Even their Horchata ice cream is a revelation. These artisans truly understand the art of flavor pairing.

On one memorable occasion, while entertaining out-of-town friends, we naturally found ourselves in the familiar long line at Gunther’s. That month’s special caught our eye: Black Raspberry Ice Cream with Oreos. Initially, I was a little skeptical. Fruity ice creams aren’t typically my go-to choice; I usually stick to my beloved Mint Oreo with a generous drizzle of fudge. But Eric, ever the adventurous one, decided to try a cone of the special.

As we finally sat down, spoons in hand, and took that first bite, a shared look of utter astonishment passed between us. The flavor was phenomenal – an unexpected symphony of tart fruitiness and classic chocolate cookie goodness. “This is not enough,” we both declared simultaneously. Without a moment’s hesitation, Eric got back in the now-even-longer line and emerged triumphantly with an entire half-gallon of the stuff. I spooned it greedily all the way home, completely obsessed despite having just finished my own scoop. That day, a new ice cream legend was born in our hearts, inspiring this very recipe.

How to Make the Best Black Raspberry Ice Cream

Step-by-step process of how to make black raspberry ice cream at home

After several glorious, albeit rigorous, rounds of testing, I’ve finally perfected this Black Raspberry Oreo Ice Cream recipe to capture the magic of that Gunther’s experience. My first line of inquiry was, naturally, the black raspberry itself. Have you ever had one? I hadn’t, and I’ve rarely, if ever, seen them fresh in stores. Research revealed they have a distinct flavor profile – not quite a red raspberry, and not quite a blackberry, but a delightful blend of both, with a unique tartness and earthy undertone. To ensure consistent flavor and ease of access, I opted for black raspberry jam, which provides that concentrated fruit essence without the hassle of sourcing fresh berries.

For those who might struggle to find black raspberry jam, don’t despair! I also tested this recipe with blackberry jam, which tends to be less tart. If black raspberry jam proves elusive, a wonderful alternative is to use a 50/50 mix of high-quality seedless raspberry jam and blackberry jam. This combination will closely mimic the unique flavor profile we’re aiming for, ensuring your ice cream is just as spectacular.

Oreos Forever: The Perfect Chocolatey Swirl

Let me be upfront: I am an unabashed, unapologetic Oreo fanatic. When it comes to Cookies and Cream ice cream, I’m often that person digging deep into the carton, creating giant craters in search of the elusive, sizable Oreo chunks. The beauty of this homemade recipe is that it absolutely does not skimp! You have complete control over how many Oreos you add, ensuring every spoonful is loaded with that delightful chocolatey crunch.

The recipe suggests 20-25 Oreos, coarsely chopped, but if I’m being completely honest (and I always am!), I often throw in closer to 30. Perhaps 30 is a tad excessive even for me, but it truly satisfies that deep-seated craving for ample cookie goodness. Feel free to adjust the quantity to your personal preference. For reference, a regular-sized package of Oreos typically contains about 39 cookies, so you’ll have plenty to work with (and probably some leftover for snacking!). The contrast between the cool, creamy black raspberry base and the bittersweet chocolatey crunch of the Oreos is simply divine, creating a textural and flavor experience that is truly addictive.

Crafting Your Perfect Homemade Ice Cream

Making ice cream at home is a rewarding process, and while it requires a bit of patience for chilling, the active preparation time is surprisingly short. The key to a truly creamy homemade ice cream lies in creating a rich custard base. This involves tempering egg yolks with warm cream, a technique that ensures a silky-smooth texture without scrambling the eggs. Don’t be intimidated; it’s easier than it sounds and yields professional-level results.

Once your custard is perfectly cooked and infused with the delightful black raspberry jam, thorough chilling is crucial. This allows the flavors to meld beautifully and ensures your ice cream churns to the ideal consistency. An ice cream maker, whether it’s an old-fashioned hand-crank model requiring ice and rock salt or a modern compressor machine, is essential for aerating the mixture and preventing large ice crystals from forming.

Tips for Ice Cream Perfection

  • Quality Ingredients: Use high-quality dairy and jam for the best flavor.
  • Chill Thoroughly: Do not rush the chilling process for the custard. It needs to be very cold before churning.
  • Churn Properly: Follow your ice cream maker’s instructions carefully. Over-churning can lead to a less creamy texture.
  • Oreo Size Matters: Experiment with different chop sizes for your Oreos. I love a mix of large chunks, halves, and some finer crumbs for varied texture.
  • Patience for Soft Oreos: If you prefer the soft, slightly chewy texture of Oreos found in store-bought Cookies and Cream, allow your finished ice cream to harden in the freezer for an additional 48-72 hours. This gives the cookies time to absorb moisture from the ice cream. If you like a crunchier cookie, enjoy it after 3 hours of freezing!
  • Airtight Storage: Always store your homemade ice cream in an airtight container to prevent freezer burn and maintain its creamy texture.

Why Homemade Ice Cream?

There’s an undeniable charm and superior quality to homemade ice cream. Beyond the satisfaction of creating something delicious from scratch, you control every ingredient, avoiding artificial flavors, colors, and excessive preservatives often found in commercial varieties. It allows for endless customization, from the intensity of the fruit flavor to the exact amount of cookie swirl. Plus, the process itself can be a fun activity, whether you’re experimenting in the kitchen solo or involving family and friends in the creation of a truly special treat.

As summer draws to a close for us this week (my little Truman starts kindergarten on Thursday – I can hardly believe it!), and my kids are already updating their Christmas lists (walking canes, nunchucks, and coal for a snowman’s mouth in sunny California, bless his imaginative heart!), it’s clear summer is winding down. But delicious ice cream like this Black Raspberry Oreo creation isn’t just for summer; it’s a delightful antidote to any season, a little taste of sunshine whenever you need it. Bring on the fall baking, but let’s keep some of this amazing ice cream stocked in the freezer!

Get ready for this combo guys…the creamiest Black Raspberry Ice Cream, swirled with tons of delicious chocolatey Oreos! It is the perfect homemade ice cream for summer!

Ingredients

  • 1 & 1/2 cups half and half
  • 1 cup heavy cream
  • 1/3 cup sugar, + 1 tablespoon
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 3/4 cup seedless black raspberry jam
  • 20-25 Oreos, coarsely chopped
  • ice, for freezing
  • rock salt, for freezing (if using traditional ice cream maker)

Instructions

  1. In a medium saucepan, combine half and half and heavy cream (which is the same as whipping cream). Turn the heat to medium-low and stir occasionally until it reaches a gentle simmer, with small bubbles forming around the edges.
  2. Meanwhile, in a separate medium bowl, whisk together the sugar, salt, and 4 egg yolks until well combined and slightly pale.
  3. Once the cream mixture is simmering, begin to temper the eggs. While continuously whisking the egg yolks, SLOWLY pour about half of the hot cream mixture into the egg mixture. Continue whisking until fully incorporated. This crucial step prevents the eggs from curdling. Then, pour the tempered egg yolk mixture back into the saucepan with the remaining cream.
  4. Heat the mixture over medium-low heat, stirring constantly with a spatula or wooden spoon. Do not let it boil. Continue stirring for about 5 minutes, or until the mixture thickens sufficiently to coat the back of a spoon. If you notice any small curdles, you can strain the custard through a fine-mesh strainer, though I’ve found it turns out great even without this step.
  5. Remove the saucepan from the heat and stir in the black raspberry jam until it is completely smooth and fully incorporated into the custard.
  6. Cover the surface of the custard directly with plastic wrap, ensuring the wrap touches the custard to prevent a “skin” from forming as it cools.
  7. Refrigerate the custard until it is thoroughly chilled, typically 2-3 hours. This is essential for the best ice cream texture.
  8. Once the custard is perfectly chilled, churn it in your ice cream maker following the manufacturer’s instructions. (I use a traditional ice and rock salt machine, but any type will work.)
  9. While the ice cream is churning, coarsely chop your Oreos. For varied texture, I recommend chopping most into quarters, leaving some halves, and crushing a few more finely. Refer to the photos for visual guidance on ideal chunk sizes.
  10. When the ice cream has finished churning, it should have a soft-serve consistency. If your ice cream maker has enough room, you can stir in the chopped Oreos directly. Otherwise, transfer the soft ice cream to another large bowl, then fold in the Oreos.
  11. Transfer the ice cream to a large airtight container (such as a tupperware or freezer-safe pan with a lid). You should have about a half-gallon of ice cream. Ensure it is sealed tightly and freeze for at least 3 hours, or until completely firm.
  12. You can enjoy this delicious ice cream immediately after it’s frozen. At this stage, the Oreos will be delightfully crunchy. If you prefer the softer, chewy Oreo texture similar to store-bought Cookies and Cream, allow the ice cream to freeze for an additional 48-72 hours. Both versions are incredibly delicious, so choose your favorite!
