  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350 degrees F (175°C). Lightly grease a 9×13 inch cake pan* with nonstick spray or generously rub with butter to prevent sticking.
  • To prepare the streusel: In a large bowl, combine and whisk together the 3 cups of all-purpose flour, 1 cup packed brown sugar, 1/2 cup granulated sugar, 1 teaspoon kosher salt, 1 tablespoon ground cinnamon, and 1 tablespoon pumpkin pie spice. Ensure all dry ingredients are well mixed.
  • Melt 1 cup of butter (2 sticks) in a medium microwave-safe bowl. Carefully pour the melted butter into the bowl with the dry streusel ingredients. Stir the butter into the flour mixture until it is halfway incorporated. Crucially, stop mixing before all the flour is fully moistened. You want a crumbly texture with distinct chunks, not a smooth dough. It’s perfectly fine if some loose flour remains at the bottom of the bowl. See the accompanying photo for the desired consistency. Set the streusel aside; if space allows, place it in the refrigerator.
  • For the cake batter: In a large mixing bowl (or the bowl of a stand mixer), thoroughly whisk together the 2 and 1/4 cups all-purpose flour, 1 and 1/2 cups granulated sugar, 1 tablespoon baking powder, 3/4 teaspoon baking soda, 3/4 teaspoon kosher salt, 1 tablespoon pumpkin pie spice, and 1 teaspoon ground cinnamon.
  • Cut 1/2 cup of butter (1 stick) into chunks. The butter should be softened slightly, having sat out of the fridge for several minutes, but still cool and firm, not completely creamy. Add these chopped butter pieces to the dry flour mixture.
  • Open the can of pumpkin puree. Using a spatula, scoop out about half of the can’s contents (a generous dollop) and add it to the bowl containing the flour and butter. Using the paddle attachment of a stand mixer (or electric beaters), blend the butter and pumpkin into the flour mixture. Continue beating until the butter fully moistens the flour and the mixture begins to come together into a thick, cohesive ball. Scrape down the sides and bottom of the bowl as needed to ensure even mixing. Avoid overmixing; stop once all the butter is incorporated. If the mixture is too dry to come together, add a few extra small dollops of pumpkin puree.
  • In the same medium bowl you used earlier for melting butter, add all the remaining pumpkin puree from the can. Whisk in the 4 large eggs, 1/4 cup vegetable oil (light-flavor olive oil works wonderfully), and 1 tablespoon vanilla extract. Beat thoroughly with a whisk until the eggs are completely blended into the mixture.
  • Gradually add the wet egg mixture to the flour mixture in three separate additions. Beat for approximately 20 seconds after each addition to fully incorporate. Once all the wet mixture has been added, continue beating for an additional minute until the cake batter is light, smooth, and fluffy.
  • Evenly spread about 2 cups of the prepared cake batter into the bottom of your greased cake pan. Then, sprinkle 1 cup of the streusel mixture evenly over this first layer of batter, gently breaking apart any excessively large pieces with your hands to ensure good coverage.
  • Carefully spread another 2 cups of batter on top of the streusel layer, distributing it as evenly as possible.
  • Add another 1 cup of streusel on top of the second batter layer.
  • Spoon the remaining cake batter over the streusel and spread it out smoothly to create the final cake layer.
  • Evenly spread another 2 cups of streusel over the top of the entire cake. It’s important to note that you will have some streusel remaining after this step. Do NOT add all of it now! Store the leftover streusel in the fridge if you have space.
  • Bake the cake in the preheated oven for an initial 35 minutes.
  • This next step requires quick action! Carefully remove the cake from the oven and immediately shut the oven door to retain heat. Quickly sprinkle all of the remaining streusel over the top of the cake, paying particular attention to any areas where the cake batter may have puffed up from the center. Work swiftly to get the cake back into the oven as soon as possible, keeping the oven door closed as much as you can. This “half-baked hack” ensures a crisp, abundant top streusel layer.
  • Continue baking for another 10-15 minutes.* The total baking time for the cake should be approximately 45-50 minutes, though this can vary based on your oven and the type of pan (glass or metal) you use. To check for doneness, insert a toothpick into the center of the cake; it should come out clean, without any wet batter. The cake should also feel set and not wobble when you gently shake the pan.
  • Allow the baked cake to cool on a wire rack for at least 15-20 minutes before attempting to cut into it. This helps it set and makes for cleaner slices.
  • To prepare the icing: In a medium bowl, beat 1/4 cup of butter (half a stick) until it is completely smooth. If your butter is very soft, you can achieve this by hand with a whisk.
  • Add 1 teaspoon vanilla extract, 1/2 teaspoon kosher salt (remember to use less if you’re using fine table salt!), 3 tablespoons milk, and 2 cups powdered sugar to the bowl. Beat with an electric mixer or whisk by hand until the icing is completely smooth and free of lumps. If the icing appears too thick, add milk 1-2 teaspoons at a time until you reach your desired drizzling consistency.
  • Generously drizzle the prepared icing over the cooled pumpkin coffee cake. You have the option to drizzle it over the entire cake for a beautiful presentation, or save some to drizzle over individual servings. I often like to drizzle about half of the icing over the whole cake and then reserve the rest for each portion.
  • This cake is undeniably best served warm! If you are serving the cake after it has completely cooled, simply place individual servings in the microwave for 10-20 seconds to revive its warmth and tender texture.
  • The cake will remain fresh and delicious, well-covered on the countertop, for 2-3 days. After this period, transfer any remaining cake to the refrigerator for extended freshness.

*I baked my Pumpkin Coffee Cake in a glass pan. If you opt to use a metal pan, please be aware that the bake time WILL be shorter. It is advisable to begin testing the cake for doneness with a toothpick a few minutes earlier than the suggested timing to prevent overbaking.
