Sheet Pan Curry Chicken and Carrots with Basmati Rice: Your Ultimate Weeknight Win
Discover the magic of a complete, flavorful meal cooked effortlessly on a single sheet pan! This incredible Sheet Pan Curry Chicken with Carrots and Basmati Rice isn’t just a recipe; it’s a revelation for busy weeknights, delivering mind-blowing flavor with minimal cleanup. Perfect for those hectic school days, it brings the vibrant tastes of a Biryani-style dish right to your table.

Embracing Simplicity in a Hectic World
Life can be unpredictable, much like the weather here in California. Just last night, my husband, Eric, and I were relaxing in the living room when he suddenly sat upright. “I just saw a weird flash of light in the backyard,” he said, sounding concerned. For a split second, we braced for something dire, only to be met with the unmistakable rumble of thunder. Oh, summer in California! It’s a place where we’re so accustomed to endless sunshine that even basic elemental phenomena like lightning become alien. All we usually experience are sunny days and scorching sidewalks.
This little anecdote serves as a poignant reminder of how easily our routines can be disrupted, and how much we crave stability and ease, especially when it comes to something as fundamental as dinner. My thoughts often drift to those dealing with more significant disruptions, like the Floridians (or Floridians? Floridaites? – however you say it, my heart goes out to you!). I can barely fathom going a full week without power. My childhood memories of power outages never lasted more than a few hours, and even then, they felt like fun adventures with candles and flashlights. As an adult, my immediate thought is, “How on earth would I get dinner on the table on day five?” The struggle is real. Baby carrots and Doritos, anyone?

The Genius of One-Pan Cooking: Curry Chicken Biryani-Style
Whether you’re enjoying steady power or eagerly awaiting its return, I highly recommend adding this Sheet Pan Curry Chicken and Carrots with Basmati Rice to your repertoire. It’s a dish that gracefully leans into the spirit of traditional Biryani, reimagined for ultimate convenience. While the name might be a mouthful, the concept is beautifully simple: succulent chicken, aromatic basmati rice, sweet carrots, and fragrant shallots, all cooked together on a single sheet pan. And let me tell you, it is absolutely divine!
I adapted this recipe from a Curried Shrimp Biryani I discovered in Food Network magazine. Being someone who isn’t a fan of shrimp, and craving more vegetables, I swapped the shrimp for tender chicken and incorporated a generous amount of carrots. The result is a vibrant, deeply flavorful meal that feels both exotic and comforting. This dish has quickly become a household favorite, so much so that we enjoyed it twice in one week!

The Ultimate Weeknight Shortcut: Pre-Cooked Rice
The true secret to transforming this flavorful dish into a super-quick weeknight meal lies in one simple ingredient: pre-cooked rice. Yes, I admit it! I purchased pre-cooked basmati rice. While this post isn’t sponsored (but “hey Uncle Ben,” if you’re reading this, how *you* doin’?), the convenience is undeniable. There are days when making rice from scratch just isn’t feasible, and the small cost of pre-cooked rice is a worthy investment for reclaiming precious time.
Of course, if you have the time and inclination, by all means, cook your own basmati rice at home. You’ll need about 4 cups of cooked rice, which translates to roughly 2 cups of uncooked rice. While basmati rice lends an authentic touch, especially in a Biryani-inspired dish, any type of rice will work beautifully. Feel free to use brown rice for extra fiber and nutrients, or white rice if you prefer a quicker cooking time or different texture. The flexibility of this recipe is part of its charm.
For those unfamiliar, Biryani is a revered South Asian dish, traditionally made with basmati rice, a complex array of spices, and meat or vegetables. Our sheet pan version captures the essence of these flavors with streamlined preparation, making it accessible to even the busiest home cooks.

Crafting the Flavorful Layers
The beauty of this sheet pan meal comes from layering flavors and textures. We start by roasting carrots and shallots, which caramelize beautifully in the oven, adding a natural sweetness and depth. These vegetables are tossed with olive oil, salt, and pepper, forming a delicious foundation for the dish. Meanwhile, the chicken tenderloins are marinated in a rich, aromatic blend of melted butter, minced ginger, garlic, yellow curry powder, garam masala, paprika, and a touch of salt. This spice mixture infuses the chicken with an incredible depth of Indian-inspired flavor.
The pre-cooked basmati rice is then mixed with the remaining butter-spice blend, along with extra garlic (smashed for infused flavor) and fresh cilantro, ensuring every grain is coated in fragrant goodness. This thoughtful preparation allows each component to contribute to a cohesive and deeply satisfying meal, all while leveraging the efficiency of sheet pan cooking.

The Magic of the Sheet Pan: A Culinary Game Changer
There’s a reason why the magical sheet pan has become a beloved tool in home kitchens everywhere. It simplifies the cooking process, reducing the number of pots and pans to wash, and allowing ingredients to roast and meld together, intensifying their flavors. For this curry chicken and rice, the sheet pan creates a mini-oven effect, steaming the rice to perfection while ensuring the chicken cooks evenly and the vegetables become wonderfully tender. It’s truly a game-changer for busy individuals and families alike, proving that extraordinary meals don’t require extraordinary effort.

Beyond the Plate: A Little Bit of Life
On a lighter note, I’ve recently become obsessed with these new faux candles I snagged at Costco. They’re fantastic Luminara knock-offs! While the Costco ones might be sold out online, check your local store. For just $20, you get five candles, batteries included – a steal compared to Luminara’s $50+ per candle price tag. They look so real, especially high up on my mantle, adding a cozy ambiance without any fuss. It’s these little discoveries that make life brighter, much like finding a go-to weeknight dinner recipe.
Speaking of things that stick with you, Eric and I recently watched a hilarious and incredibly accurate video titled “How to Make a Hit Pop Song.” The comments section sums it up perfectly: “this was pretty funny, but I actually came back to listen again because I can’t get this song out of my head…” Exactly! It just goes to show how sometimes the simplest, most formulaic things can be the most effective and memorable – a lesson that often applies to great recipes too!

Sheet Pan Curry Chicken and Carrots with Basmati Rice (Biryani)
Rating: 5 out of 5 stars (based on 2 votes)

Ingredients
- 7 large carrots, roughly chopped
- 4 large shallots, sliced
- 1 & 1/2 tablespoons olive oil
- 1 teaspoon salt, for roasting carrots/shallots
- pepper , to taste
- 6 tablespoons butter, melted
- 1 tablespoon minced ginger
- 1 & 1/2 teaspoons minced garlic, I used jarred garlic
- 2 & 1/2 teaspoons yellow curry powder
- 1 & 1/2 teaspoons garam masala
- 1 & 1/2 pounds chicken tenderloins, thawed
- 3/4 teaspoon paprika
- 1/2 teaspoon salt, for chicken
- 2 (8.8-oz) packages precooked brown basmati rice*
- 2-3 cloves garlic, smashed and cut in half (optional)
- 1/2 teaspoon salt, for the rice
- 1/4 cup cilantro, fresh, chopped, plus more to garnish
- 1/2 cup cashews, chopped, to garnish
- plain Greek yogurt, to garnish
Instructions
-
Preheat the oven to 425 degrees F (220 degrees C). Position an oven rack in the upper third of the oven (typically one notch higher than the middle setting).
-
Roughly chop the carrots (aim for pieces similar in size to the ones in the photo) and place them in a large mixing bowl.
-
Slice the shallots into similar-sized pieces and add them to the bowl with the carrots.
-
Drizzle the carrots and shallots with olive oil, then sprinkle with 1 teaspoon of salt and black pepper to your taste. Toss everything until well coated.
-
Prepare a sturdy sheet pan by spraying it with nonstick spray. Transfer the carrot and shallot mixture onto the pan, spreading it out into a single, even layer. Keep the mixing bowl handy!
-
Roast the vegetables in the preheated oven for 20 minutes.
-
While the carrots and shallots are roasting, use the same bowl from before to melt 6 tablespoons of butter. You can do this in the microwave or on the stovetop.
-
Add the minced ginger, minced garlic, yellow curry powder, and garam masala to the melted butter. Stir thoroughly to combine all the spices.
-
In a separate medium bowl, place the chicken tenderloins, ensuring they are thawed. Pour about 2 tablespoons of the prepared butter-spice mixture over the chicken (the remaining mixture will be used for the rice). There’s no need to be overly precise; just make sure the chicken is lightly coated.
-
To the chicken, add 3/4 teaspoon of paprika and 1/2 teaspoon of salt. Toss everything together until the chicken is well seasoned, then set aside.
-
Add the cooked rice to the bowl containing the remaining butter-spice mixture. If using pre-cooked rice, simply open the packages and dump the rice in.
-
Smash 2-3 cloves of garlic and add them to the rice bowl. This step is optional but adds another layer of delicious flavor. We often enjoy eating the roasted garlic!
-
Add 1/2 teaspoon of salt and 1/4 cup of fresh, chopped cilantro to the rice mixture. Stir everything together until the rice is evenly coated and fragrant. Set aside.
-
After the carrots and shallots have roasted for 20 minutes, carefully remove the sheet pan from the oven (do not turn the oven off). Toss the roasted vegetables gently on the pan.
-
Arrange the seasoned chicken tenderloins in a single layer between the carrots and shallots on the pan, ensuring they are directly on the pan surface and not piled on top of the vegetables. Scrape any remaining seasoning from the chicken bowl onto the pan to maximize flavor.
-
Evenly spread the seasoned rice mixture over the chicken and vegetables, extending it to the edges of the pan.
-
Sprinkle 2 tablespoons of water over the surface of the rice. This helps create steam for perfect cooking.
-
Tightly cover the entire sheet pan with aluminum foil.
-
Return the covered pan to the same rack in the 425-degree F (220 degrees C) oven and bake for an additional 20-25 minutes, or until the chicken is thoroughly cooked (internal temperature of 165°F / 74°C) and the carrots are tender.
-
Carefully remove the foil. Garnish generously with chopped cashews and additional fresh cilantro.
-
Serve immediately with a side of plain Greek yogurt, which offers a refreshing contrast to the rich curry flavors. This meal also pairs wonderfully with a crisp green salad for a complete and wholesome dinner.
