  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 4 eggs, beaten
  • salt and pepper, to season eggs
  • 5 cups day old cooked rice
  • 1 cup frozen peas
  • 1/2 cup green onions, sliced thin
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat your oven to 425 degrees F (220°C). Spray a large rimmed baking sheet with nonstick spray.
  2. Dice the raw chicken, carrots, bell pepper, and onion. Aim for 1/2 to 1 inch pieces for the chicken. Dice the carrots quite small (about 1/4 to 1/2 inch), as they cook the slowest. See photos for visual guidance.
  3. Add the diced chicken, carrots, bell pepper, and onion to the prepared sheet pan.
  4. In a small bowl, melt the butter. Stir in the minced garlic, salt, fresh ginger, soy sauce, oyster sauce, and sesame oil. Pour 1/4 cup of this savory mixture over the chicken and veggies on the pan (reserve the rest for the rice). Toss thoroughly with your hands or a wooden spoon to ensure everything is evenly coated. Spread the mixture out in a single layer.
  5. Roast in the preheated oven for 6 minutes.
  6. Pour the remaining butter/soy sauce mixture over your day-old rice in the same small bowl (no need to wash it). Stir it together, breaking up any rice clumps, and set aside.
  7. In the same small bowl used for the sauce, whisk together the 4 eggs and season with a pinch of salt and pepper.
  8. After the initial 6 minutes, carefully remove the pan from the oven. Use a spatula to push the chicken and vegetables to one side, clearing about 1/4 of the pan space (refer to photos). Pour the beaten eggs directly onto the empty section of the hot pan.

  10. Once the eggs are just barely set, take the pan out. Use your spatula to “scramble” and break up the eggs, then mix them in with the chicken and vegetables.
  11. Now, spread the seasoned rice evenly over the entire pan, covering all the other ingredients.
  12. Bake at 425°F (220°C) for another 15 minutes.
  13. After 15 minutes, remove the pan and use a spatula to toss everything together thoroughly. Return to the oven for a final 15 minutes, or until the rice looks slightly browned and there isn’t excess moisture on the bottom of the pan. Test a carrot piece to ensure it’s tender.
  14. Remove the pan from the oven and stir in the frozen peas. They will thaw quickly from the heat of the dish. If you prefer them warmer, you can pop the pan back in for another minute or two.

If you don’t have day-old rice and need to make this TODAY (we’ve all been there!), simply cook about 2 cups of dry rice and spread it out onto a clean sheet pan to cool, uncovered. Place it in the fridge for at least half an hour to an hour to help it dry out and become firm enough for fried rice. This step is crucial for preventing soggy fried rice.
