Indulge in the irresistible charm of a classic Southern treat with our simplified Caramel Cake recipe, complete with a decadent Caramel Icing. Forget the elaborate layers; we’ve transformed this beloved dessert into a convenient and incredibly moist thin sheet cake. Less time baking means more time savoring every glorious bite – and trust us, you’ll want to savor every single one! This recipe is designed to be effortlessly easy, bringing that rich, comforting caramel flavor right to your kitchen.

Life with little ones often brings unexpected adventures. Just the other day, I walked into the kitchen to a sight that was both alarming and strangely adorable: my one-year-old, Valentine, perched precariously on a chair by the counter, happily devouring an entire stick of butter! Such are the risks, I suppose, of leaving butter out to soften for baking in a house full of curious children.

This particular incident happened mere minutes after I’d given her a bath to clean up her previous escapades in the bathroom. Her reward for my efforts? Butter-slicked hair! Oh, these kids! It’s a good thing their cuteness factor often outweighs their chaos.

Why a Caramel Sheet Cake? All the Flavor, None of the Fuss!
Lately, I’ve found myself completely enamored with the simplicity and efficiency of sheet cakes. Just a few weeks ago, I perfected and shared my recipe for The Only Texas Sheet Cake You’ll Ever Need after three rounds of testing. It was only natural to then pivot to a caramel version, because who can resist that golden, buttery goodness?
On a related note: do you pronounce it “car-mel” or “care-uh-mel”? I grew up saying the former but have unconsciously switched to the latter in recent years. Now I confess I feel a little pretentious saying it, but old habits die hard!

Embracing the Southern Caramel Cake Spirit with a Modern Twist
My ultimate goal was to capture the essence of a classic Southern Caramel Layer Cake – that deep, rich caramel flavor and moist crumb – but without the traditional fuss of assembling multiple cake layers. In many traditional Southern recipes, the cake itself is often a simple yellow or white cake, serving as a delightful canvas to absorb all the glorious caramel icing. However, for this sheet cake rendition, I wanted the cake itself to sing with caramel flavor.
That’s why this particular caramel cake recipe incorporates a generous two cups of brown sugar directly into the batter, giving it an inherently caramel-infused taste. Combined with the ease of baking it in a single sheet pan, which means it’s perfectly done in about 20 minutes, you get all the beloved flavor of a Southern classic with significantly less effort. It’s truly a win-win for busy bakers and eager eaters alike!
Essential Ingredients for Your Perfect Caramel Sheet Cake
Preparing this incredible caramel cake is surprisingly straightforward, thanks to a list of common pantry staples. Here’s what you’ll need to create a cake that’s bursting with flavor and moisture:
For the Cake:
- Salted butter: Provides richness and a hint of salt to balance the sweetness.
- Brown sugar: The star ingredient for a deep, molasses-rich caramel flavor in the cake.
- Vanilla extract: Enhances all the other flavors, adding a warm, aromatic note.
- All-purpose flour: The structural foundation of our moist cake.
- Evaporated milk: Contributes to the tender crumb and creamy texture of the cake.
Additional Cake Ingredients:
- Salt: A crucial ingredient to cut through the sweetness and elevate the caramel notes.
- Baking soda: Our leavening agent, ensuring a light and airy texture.
- Sour cream: Adds incredible moisture and a slight tang, making the cake extra tender and rich.
- Large eggs: Binds the ingredients together and provides essential structure to the cake.

Mastering Your Homemade Caramel Cake: A Step-by-Step Guide
This caramel sheet cake recipe is wonderfully unfussy – a refreshing change from the often complex reputation of traditional caramel cakes! Here’s a basic overview of the simple steps, with more detailed instructions and helpful tips further down in the full recipe card:
- Prepare the Base: In a sturdy pot, melt butter with water, then stir in a generous amount of brown sugar and vanilla. This creates the flavorful foundation for your cake.
- Add Dry Ingredients: Gently add flour, salt, and baking soda to the pot. It’s important not to mix them in just yet, instead, give them a quick stir together before incorporating into the wet ingredients to ensure even distribution.
- Incorporate Wet Ingredients: In a separate bowl, whisk together the eggs and sour cream. This mixture is then carefully folded into the main batter, ensuring a smooth and cohesive consistency.
- Bake to Perfection: Pour the batter into your prepared sheet pan and bake for approximately 20 minutes. That’s all it takes for a perfectly moist, golden-brown cake!

Choosing the Right Pan for Your Caramel Sheet Cake
The beauty of a sheet cake lies in its versatility, especially when it comes to pan sizes. While I personally love baking this cake in an 18×13 inch half sheet pan – because a thinner cake means a higher, more glorious frosting-to-cake ratio! – you have several excellent options. Remember, baking times will always vary based on your oven and the specific pan you choose, so keep an eye on your cake for doneness and use the toothpick test as your guide.
| Pan Size | Approximate Baking Time |
| 9×13 inch (standard cake pan) | 23-25 minutes |
| 15×10 inch (jelly roll pan) | 20-22 minutes |
| 18×13 inch (half sheet pan) | 17-20 minutes |
Crafting the Perfect Caramel Frosting: A Shortcut to Decadence
Now, let’s talk about that glorious caramel icing! If you’ve ever ventured into making traditional, from-scratch caramel icing – the kind that involves carefully melting dry sugar and stirring for an hour – you know it’s a labor of love. And while admirable, it’s not always practical. No thank you, I say! I am a firm believer in the magic of brown sugar shortcuts, and this recipe delivers a deep, rich caramel flavor without all the endless stirring.
Here’s how we achieve that thick, fudgy caramel frosting quickly and easily:
- Simmer and Stir: Combine butter, brown sugar, and evaporated milk in a saucepan and bring it to a rolling boil. Continue to stir until it reaches a thick consistency that coats the back of a spoon.
- Flavor Boost: Remove from heat and stir in the vanilla extract, adding another layer of sweet aroma.
- Chill to Thicken: This is the secret step! Immediately place the saucepan of hot frosting into an ice bath for a few minutes. Stir continuously during this time to help it cool and thicken to that perfect, spreadable consistency.
- Generously Spread: Once thickened, pour the luscious caramel frosting over your cooled sheet cake and spread evenly to the edges. Try not to eat it all straight from the spoon first – though it’s incredibly tempting!

(This is the beautiful, bubbling stage your caramel will reach. It thickens up quickly!)

The magical ice bath moment, transforming the liquid caramel into a beautifully thick and smooth frosting.
This method allows you to achieve that deep, authentic caramel flavor by boiling butter and evaporated milk with brown sugar on the stovetop in just a few minutes. It’s a far more manageable process than the traditional dry sugar caramelization. After boiling, the crucial step of cooling it rapidly in an ice bath helps the frosting thicken beautifully and become wonderfully smooth. I adore this technique for cooked frostings and use it in several other favorites, including my Nana’s Famous Fudge Brownies and this delightful Peach Cake with Brown Sugar Frosting. It yields a consistently perfect result – so good, you might just find yourself eating it by the spoonful!

Understanding the Sweet Debate: Icing vs. Frosting
The terms “icing” and “frosting” are often used interchangeably, but there’s a subtle distinction in the baking world. Generally:
- Frosting is typically thick, fluffy, and spreadable, designed to stay soft and create beautiful swirls (think classic buttercream on your favorite Chocolate Cake).
- Icing tends to be thinner, often drizzled, and usually hardens slightly upon cooling, sometimes creating a lovely, crackly surface when cut (like the glaze on this Glazed Lemon Bread).
This particular caramel topping is a wonderful hybrid – it’s thick enough to spread generously like a frosting, but sets slightly to give that appealing, almost fudgy consistency that many associate with a rich caramel icing. It truly offers the best of both worlds, making it a dream for caramel lovers!

Storing Your Delicious Caramel Sheet Cake
To keep your caramel cake fresh and moist, proper storage is key. The best place for this cake is covered on the counter. If you leave it in the baking pan without a tight-fitting lid, it can dry out surprisingly quickly, even if you try to cover it with plastic wrap. I highly recommend transferring any leftover cake to a large, airtight rectangular food storage container.
If presentation is important for serving, try to keep the pieces in a single layer to prevent the beautiful frosting from sticking. And for longer enjoyment, this cake freezes exceptionally well when properly sealed. Simply wrap individual slices or the entire remaining cake tightly in plastic wrap, then add a layer of aluminum foil, before placing it in the freezer.
How Long Does Caramel Cake Last?
First, you might want to ask yourself: will there actually be any leftovers? This cake is notoriously addictive! But in the unlikely event you find yourself with extra pieces, here’s what you need to know. At room temperature, well-covered, your caramel cake will stay fresh and delicious for 2-3 days. If you need to extend its life, or if the cake has already been sitting out for a couple of days, pop it into the freezer. Frozen caramel cake can be kept for up to 3 months, ready to be thawed and enjoyed whenever a craving strikes!

Just look at this, folks! Can you see how each slice resembles a square of soft, delectable caramel? It’s truly caramel, with the added delightful bonus of a tender cake underneath! This dessert is incredibly rich and utterly satisfying. A small piece truly goes a long way (for most people, anyway – I might be an exception with my undeniable sweet tooth!). This impressive sheet cake easily feeds a crowd, making it the perfect dessert to bring to a potluck, family gathering, or even your next game day celebration.

Ingredients
For the Cake
- 1 cup salted butter, (2 sticks)
- 1 cup water
- 2 cups brown sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour, spooned and leveled
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup sour cream
- 2 large eggs
For the Icing
- 3/4 cup salted butter, (1 and 1/2 sticks)
- 3 & 1/2 cups brown sugar
- 1/2 cup plus 1/3 cup evaporated milk OR heavy cream
- 1/4 teaspoon salt
- 1 & 1/2 teaspoons vanilla extract
Instructions
-
Preheat your oven to 350°F (175°C). Prepare an 18×13 inch half sheet pan by lining it with parchment paper, or thoroughly spraying it with nonstick spray (alternatively, grease with butter).
-
In a medium saucepan, melt 1 cup of salted butter and 1 cup of water over medium-high heat. Add 2 cups of brown sugar and stir occasionally until the mixture comes to a rolling boil (you’ll see bubbles forming across the entire surface, not just the edges). Once it reaches a full boil, remove the saucepan from the heat.
-
Allow the mixture to cool for a couple of minutes, then stir in 2 teaspoons of vanilla extract.
-
Add 2 cups of all-purpose flour to the pot, but do not mix it in yet. Sprinkle the 1/2 teaspoon of salt and 1 teaspoon of baking soda on top of the flour. Use a small spoon to gently stir the salt and baking soda into the flour, ensuring they are well combined with the flour and preventing any concentrated pockets of leavening agents or salt in your cake.
-
Using a whisk, incorporate the flour mixture into the liquid ingredients until all lumps are removed and the batter is smooth.
-
In a separate small bowl, whisk together the 2 large eggs and 1/2 cup of sour cream until smooth. Add this egg and sour cream mixture to the cake batter and stir until it is fully incorporated and the batter is homogeneous.
-
Pour the prepared cake batter into your greased or parchment-lined sheet pan and spread it evenly to all edges of the pan.
-
Bake in the preheated oven at 350°F (175°C) for approximately 17-20 minutes. The cake is done when a toothpick inserted into the center comes out clean, and the edges of the cake begin to pull away slightly from the sides of the pan.
-
Let the cake cool in the pan for about 20 minutes before proceeding to frost it.
-
Prepare the Caramel Icing:
In a clean, heavy-bottomed saucepan, combine 3/4 cup of salted butter, 3 1/2 cups of brown sugar, 1/2 cup plus 1/3 cup of evaporated milk (or heavy cream), and 1/4 teaspoon of salt. Bring this mixture to a rolling boil over medium heat, stirring frequently. Once it reaches a full boil, continue to stir constantly, watching for the consistency to thicken and coat the back of a spoon. This thickening process can take anywhere from 3 to 10 minutes, so keep a close eye on it. As soon as it reaches the desired thickness, remove the saucepan from the heat. Stir in 1 1/2 teaspoons of vanilla extract. -
Immediately fill a large bowl with ice water. Carefully place the entire saucepan of hot frosting into the ice bath, being very careful not to get any water into the caramel mixture. Stir the frosting constantly for 3-5 minutes, ensuring you scrape the sides and bottom of the pan to prevent hardening. This rapid cooling and stirring are essential for achieving a smooth, thick consistency. Do not walk away, as the caramel can harden very quickly! (Many have learned this the hard way!)
-
While the icing is still pourable and spreadable, pour it generously over the slightly cooled cake and spread it evenly to all edges.
-
Allow the icing to set for a few minutes at room temperature before slicing and serving warm. This rich cake pairs exceptionally well with a scoop of vanilla ice cream! Due to its decadence, you can cut it into relatively small pieces for serving. (Of course, I often don’t, but I do have an extreme sweet tooth.)
Notes
If using a 9×13 inch cake pan, bake for 23-25 minutes. For a 15×10 inch jelly roll pan, expect about 20-22 minutes. As noted in the recipe, an 18×13 inch half sheet pan typically bakes in 17-20 minutes.
Always remember that baking times are approximate and can vary due to differences in ovens. Use the visual cues and toothpick test for accuracy.
