- **Fresh & Flavorful:** When prepared correctly, zucchini contributes a subtle, earthy flavor that complements the Italian spices and rich cheeses beautifully. It adds a fresh dimension that can sometimes be lost in traditional pasta-heavy dishes.

Essential Zucchini Lasagna Ingredients
Crafting the perfect zucchini lasagna begins with high-quality ingredients. While similar to traditional lasagna, the key lies in the zucchini and the careful selection of other components. Here’s a comprehensive list of what you’ll need, along with some tips for choosing the best:
- Zucchini: Aim for small to medium-sized zucchini (about 8-9 inches long). Larger zucchini tend to be tougher, more fibrous, and contain more water and seeds, which can lead to a watery and less flavorful lasagna.
- Kosher Salt: Essential for drawing out excess moisture from the zucchini, preventing a soggy lasagna.
- Mild Italian Sausage: Provides a rich, savory base for the marinara sauce. You can use hot Italian sausage if you prefer a bit of spice, or a plant-based alternative for a vegetarian version.
- Garlic: Freshly minced garlic adds depth and aromatic flavor to the sauce. Don’t skimp here!
- High-Quality Marinara Sauce: The foundation of your flavor. Look for a brand with simple ingredients and rich tomato flavor, like Rao’s. A good sauce elevates the entire dish.
- Canned Diced Tomatoes: Adds texture and a bright tomato flavor to the marinara. Fire-roasted diced tomatoes are an excellent choice for an extra layer of smoky depth. Remember to drain them well.
- Dried Oregano: A classic Italian herb that complements the sausage and tomato flavors.
- Black Pepper: Freshly ground black pepper adds a subtle kick.
- Fresh Basil: A vibrant herb that brightens the sauce and adds a lovely fresh finish. If fresh isn’t available, dried basil can be used in smaller quantities.
- Ricotta Cheese: The creamy heart of any lasagna. For an extra rich and cheesy experience, don’t be shy with the quantity.
- Eggs: Act as a binder for the ricotta mixture, ensuring it holds its shape and doesn’t ooze out during baking.
- Parmesan Cheese: Adds a sharp, salty, umami flavor. Use freshly shredded Parmesan for the best taste.
- Mozzarella Cheese: The quintessential melting cheese for lasagna. Cubed mozzarella melts into delightful pockets of gooey goodness, offering a superior texture compared to pre-shredded varieties.

How to Prepare Zucchini for Lasagna
The secret to a non-watery zucchini lasagna lies in proper zucchini preparation. This process is crucial for achieving the perfect texture and flavor. Here’s a detailed overview of the steps:
- Select Your Zucchini: Start with approximately 2 pounds of small to medium-sized zucchini, which typically equates to about 5 individual zucchinis. Avoid the large, overgrown ones from the garden as they tend to be more watery, seedy, and bitter.
- Slice the Zucchini: The goal is to create thin, uniform slices, about 1/8 inch thick. Consistency is key for even cooking and moisture removal.
Mandoline Slicer
For truly uniform and thin slices, a mandoline slicer is your best friend. It makes quick work of this task and ensures each “noodle” is perfectly cut. Always use the safety guard to protect your fingers, as mandolines are incredibly sharp.

However you get your zucchini sliced, you want it to be thin enough that it can bend without snapping. Using a Regular Knife
If you don’t have a mandoline, a sharp chef’s knife can certainly do the trick. Cut the zucchini in half lengthwise first, then carefully slice each half into thin strips. It might take a bit more patience to achieve uniform slices, but it’s entirely doable.

Ensure you slice the zucchini lengthwise, not into rounds. This creates longer “noodles” that lay nicely in the lasagna dish, mimicking traditional pasta sheets.
- The Salting Method to Prevent Watery Lasagna: Zucchini is about 95% water. If you don’t remove a significant amount of this moisture, your lasagna will turn into a soupy mess. The salting method is the most effective and easiest way to achieve this.

Spread several layers of paper towels or clean tea towels on your countertop. Arrange the zucchini slices in a single layer, ensuring they don’t overlap too much. Generously sprinkle about 1 ½ tablespoons of kosher salt evenly over the zucchini. Let them sit for at least 30 minutes, or even up to an hour. You’ll visibly see beads of water forming on the surface of the zucchini as osmosis works its magic.

After the resting time, use additional paper towels to firmly blot away all the released moisture from both sides of the zucchini slices. Do not rinse the zucchini; the remaining salt will be minimal and will enhance the flavor of the lasagna, not make it overly salty. This simple step is a game-changer for ensuring your zucchini lasagna is firm and delicious, not soggy.
Mastering the Marinara Sauce
While your zucchini is releasing its moisture, it’s the perfect time to build the robust marinara sauce that will anchor your lasagna’s flavor. A well-made sauce is crucial for any great lasagna, and this recipe ensures a deeply savory and aromatic base.
- Brown the Italian Sausage: In a large skillet, brown one pound of mild Italian sausage over medium heat. Use a wooden spoon to break it apart as it cooks. Once the sausage is thoroughly cooked and no longer pink, it’s essential to drain off any excess grease. A clever trick is to line a bowl with foil, pour the hot grease into it, then refrigerate until solid before discarding.
- Add Garlic: After draining, return the skillet to medium heat and add about 5 cloves of minced garlic. Sauté for just about one minute until fragrant, being careful not to let it burn, as burnt garlic can taste bitter.
- Incorporate Tomatoes and Seasonings: Stir in a 24-ounce jar of high-quality marinara sauce. We highly recommend Rao’s brand for its exceptional flavor, often found in bulk at Costco or on Amazon. The secret to its richness is often a higher olive oil content. Add one (14.5-ounce) can of diced tomatoes, ensuring they are well-drained. Simply tilt the can over the sink with the lid partially on to remove excess liquid, maintaining the integrity of your moisture-controlled lasagna.
- Simmer to Perfection: Season the sauce with 2 teaspoons of dried oregano, 1 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. If using dried basil instead of fresh, add 1 teaspoon now. Let the sauce simmer gently over medium heat for 5-15 minutes. This simmering time allows the flavors to meld beautifully and helps to evaporate any remaining excess liquid, ensuring a thick, rich sauce.
- Finish with Fresh Basil: Once the sauce has simmered, remove it from the heat and stir in 1/4 cup of freshly chopped basil. The fresh basil brightens the sauce and adds a fragrant, authentic Italian touch that truly elevates the dish.
Crafting the Creamy Ricotta Mixture
No lasagna is complete without a luscious, cheesy ricotta layer, and our zucchini lasagna is no exception. This creamy component adds a delightful contrast to the robust meat sauce and provides that signature gooey texture we all love.

- Combine Ricotta: In a medium-sized bowl, add 3 cups of ricotta cheese. While many recipes call for a single 15-ounce tub, we advocate for a more generous amount (roughly 1 ½ pounds, or 1 ½ of the 15-ounce tubs) to ensure every bite is bursting with cheesy goodness. If you prefer a less cheesy lasagna, you can reduce this to 15 ounces and use just one egg.
- Add Binders and Flavor: Incorporate 2 large eggs into the ricotta. The eggs are crucial as they act as a binder, similar to how they stabilize meatloaf, preventing the ricotta layer from becoming overly runny and ensuring it sets beautifully during baking. Stir in 1 cup of shredded Parmesan cheese, 1 teaspoon of kosher salt, and 1/4 teaspoon of black pepper.
- Mix Thoroughly: Mix all the ingredients until well combined and smooth. This creamy mixture is now ready to be layered into your lasagna, contributing a rich, tangy counterpoint to the savory marinara.

Finally, prepare your mozzarella cheese. While shredded mozzarella is common, we highly recommend cutting 8 ounces (about 2 cups) of fresh mozzarella into 1/2-inch cubes. These cubes melt into decadent pockets of cheese throughout the lasagna, providing an unparalleled texture and flavor experience. Set this aside for assembly.
Assembling Your Zucchini Lasagna
Now that all your components are prepped and ready, it’s time for the exciting part: layering your delicious zucchini lasagna! Preheat your oven to 375°F (190°C) before you begin. Here’s how to build a perfect, flavorful lasagna:
- Prepare the Baking Dish: Lightly grease a 9×13 inch casserole dish with non-stick spray. Spread about 1/2 cup of your marinara sauce evenly across the bottom of the pan. This provides a flavorful base and prevents the first layer from sticking.
- First Zucchini Layer: Arrange one-third of your prepared zucchini slices over the sauce. Don’t worry about perfection; you can slightly overlap them. This is a great place to use any “ugly” or less uniform slices, as they’ll be hidden.
- First Ricotta & Marinara Layer: Evenly spread half of the ricotta mixture over the zucchini. Then, add half of the remaining marinara sauce, spreading it to the edges of the dish.
- First Mozzarella Layer: Sprinkle half of the cubed mozzarella (about 1 cup) over the marinara sauce. The cubes will melt into delightful pockets.
- Second Zucchini Layer: Place the next one-third of your zucchini slices over the mozzarella.
- Second Ricotta & Marinara Layer: Add the remaining half of the ricotta mixture, spreading it smoothly. Follow with the rest of the marinara sauce.
- Final Zucchini Layer: Lay the last one-third of your zucchini slices over the sauce.
- Top with Cheeses: Sprinkle the remaining mozzarella cubes (about 1 cup) over the final zucchini layer, followed by 1/2 cup of shredded Parmesan cheese. This will create a beautiful, golden-brown crust during baking.

Baking Zucchini Lasagna to Perfection
Baking your zucchini lasagna correctly is just as important as the preparation and assembly. The goal is a bubbly, golden-brown masterpiece that holds its shape beautifully. Here’s how to achieve it:
- Baking Time: Bake the assembled lasagna at 375°F (190°C) for approximately 45-55 minutes. You’ll know it’s done when the sauce is bubbling around the edges and the cheese on top is melted, golden, and slightly browned.
- Uncovered Baking: It’s crucial to bake the lasagna uncovered for the entire duration. This helps any remaining moisture from the zucchini or sauce to evaporate, further preventing a watery outcome.
- Crispy Top (Optional): If you desire an extra crispy, deeply golden top, you can turn on the broiler for the last 1-2 minutes. Watch it very carefully, as cheese can burn quickly under the broiler.
- Resting Period: This step is non-negotiable for a well-structured lasagna! Once baked, remove the lasagna from the oven and let it rest for at least 15 minutes before slicing. This resting time allows the layers to set, the juices to reabsorb, and prevents the lasagna from becoming soupy when cut. It also helps prevent accidental burns from the scalding hot cheese and sauce.
- Slicing and Serving: Use a sharp serrated knife to cut through the zucchini layers when portioning. Lift each piece carefully with a large spatula or spoon. Serve hot, and be ready for compliments!

Can You Customize Your Zucchini Lasagna?
Absolutely! This zucchini lasagna recipe is incredibly versatile and can be adapted to your taste preferences or what you have on hand. Feel free to experiment with other vegetables and additions to make it your own healthy masterpiece:
- Other Vegetable “Noodles”: Almost any thinly sliced vegetable can work as a substitute for pasta or zucchini. Consider eggplant, sweet potato, or butternut squash. For harder vegetables like potatoes and squashes, you would need to parboil or lightly roast them first to ensure they become tender during baking. For moisture-rich vegetables like eggplant or other summer squashes, apply the same salting method as with zucchini to prevent a watery result.
- Add More Veggies to the Sauce: Boost the nutritional content and flavor by finely chopping vegetables like onions, carrots, celery, bell peppers, or mushrooms and sautéing them with the Italian sausage. They blend seamlessly into the meat layer.
- Spinach Lasagna: Fresh or frozen spinach is an excellent addition. If using fresh, simply chop it and mix it into the ricotta mixture or layer it directly into the lasagna. If using frozen spinach, make sure to thaw it and squeeze out all excess water thoroughly to avoid adding unwanted moisture.
- Spice It Up: If you love a little heat, use hot Italian sausage, or add a pinch of red pepper flakes to your marinara sauce.
- Cheese Variations: While mozzarella, ricotta, and Parmesan are classic, you can experiment with other cheeses like provolone, fontina, or even a touch of smoked gouda for a unique flavor profile.
Embrace the flexibility of this recipe and get creative with your additions. It’s a fantastic way to enjoy a hearty meal while maximizing your vegetable intake!

Make-Ahead, Storage, and Freezing Tips
Zucchini lasagna is a fantastic meal for meal prepping and making ahead, ensuring you have delicious, healthy food ready to go when you need it. Here’s how to manage it efficiently:
- Making Ahead for Same-Day Baking: While you can assemble the lasagna up to 24 hours in advance and store it in the fridge, it’s worth noting that the zucchini will continue to release moisture as it sits unbaked. This can result in a slightly more watery lasagna once baked. For the best, firmest result, it is always ideal to bake the lasagna immediately after assembly.
- Partial Make-Ahead (Best Option): If you want to get a head start, prepare the meat sauce and the ricotta mixture the day before. Store them in separate airtight containers in the refrigerator. You can also cube or shred the mozzarella in advance. On the day of baking, all you’ll need to do is slice and salt the zucchini, then assemble and bake. This significantly cuts down on active prep time.
- Pre-Baking for Future Meals: For optimal flavor and texture when making ahead, we recommend baking the lasagna completely the day before. Allow it to cool entirely, then cover it tightly and refrigerate. This not only allows the flavors to deepen but also helps the lasagna set up even more firmly. To reheat, let it sit at room temperature for about 30 minutes, then bake at 350°F (175°C) for 20-30 minutes, or until bubbling and the cheese is melted.
- Storing Leftovers: Once your zucchini lasagna has cooled completely, transfer individual slices to an airtight container or cover the entire baking dish tightly with foil or plastic wrap. It will stay fresh in the refrigerator for up to 4 days.
- Reheating Zucchini Lasagna:
- Microwave: For a quick reheat, place a slice on a microwave-safe plate, cover loosely with a damp paper towel (to prevent drying), and heat for 1-2 minutes. Check, and continue heating in 30-second bursts until warmed through.
- Oven: For the best texture, preheat your oven to 375°F (190°C). Place the lasagna in an oven-safe dish, cover with foil, and bake for 20-25 minutes. Remove the foil for the last 5 minutes to get the top bubbly and golden. If you notice any excess moisture, gently blot with a paper towel before or during reheating.
- Freezing Zucchini Lasagna: Zucchini lasagna freezes exceptionally well! It’s a fantastic option for meal prep.
- Individual Portions: Allow the baked lasagna to cool, then slice into individual portions. Wrap each piece tightly in plastic wrap, then foil, and place in a freezer-safe bag or container.
- Whole Casserole: For a whole lasagna, allow it to cool completely. Cover the dish tightly with several layers of plastic wrap and then foil.
- Freezer Life: Store in the freezer for 3-4 months.
- Thawing & Baking from Frozen: Thaw in the refrigerator overnight, then bake at 350°F (175°C) until bubbly and heated through (approx. 20-30 mins). Alternatively, you can bake it straight from frozen (covered with foil) at 350°F (175°C) for 45-60 minutes, then uncover for the last 10-15 minutes to brown the cheese.
Making a double batch and freezing one is a wonderful way to treat your future self!

Throw out those noodles and make yourself some Zucchini Lasagna! This recipe is full of Italian sausage, ricotta, and mozzarella, but uses zucchini in place of lasagna noodles. It is low-carb, keto-friendly, and seriously delicious!
Equipment
- mandoline slicer (optional, but recommended)
- paper towels or tea towels
- 12-inch skillet
- 9×13 inch casserole dish
Ingredients
To prep the zucchini
- 2 pounds small or medium zucchini, about 5 zucchini, sliced 1/8 inch thick
- 1 & 1/2 tablespoons kosher salt
For the marinara sauce
- 1 pound mild Italian sausage
- 5 cloves garlic, minced
- 1 (24-ounce) jar high quality marinara sauce, I like Rao’s brand
- 1 (14.5-ounce) can diced tomatoes, drained
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped, or use 1 teaspoon dried basil
For the ricotta mixture
- 3 cups ricotta, about 1 & 1/2 of the 15 oz tubs
- 2 large eggs
- 1 cup parmesan cheese, shredded
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
To assemble
- 8 ounces mozzarella cheese, cut into 1/2 inch cubes (about 2 cups)
- 1/2 cup parmesan cheese, shredded
- basil, to garnish
Instructions
-
Prepare the zucchini: Chop off both ends of your zucchini. Use a mandoline to slice your zucchini into 1/8 inch thick strips. You can also use a knife to do this (see photos in the post above for guidance).
-
Lay out several layers of paper towels on your countertop (or tea towels). Place the sliced zucchini on the towels, ensuring they are not touching each other. Sprinkle about 1 and 1/2 tablespoons of salt evenly over the zucchini. Let them sit for at least 20 minutes; 30 minutes or more is better. (You’ll be prepping your sauce and cheese during this time, so you have plenty of time.)
-
Once you observe water pooling on the zucchini, use additional paper towels to blot away the liquid. Blot firmly to remove as much moisture as possible to prevent a watery lasagna. If you’re particularly invested, you can flip the zucchini and salt the other side as well. Do not rinse the salt off your zucchini! Just blot it with towels, and most of the remaining salt crystals will be absorbed into the towels, ensuring it won’t be too salty.
-
Prepare the marinara sauce: In a 12-inch skillet, brown 1 pound of Italian sausage over medium heat, crumbling with a wooden spoon. Once fully cooked and no longer pink (about 5 minutes), drain the grease. (You can turn off the heat, tilt the pan, and spoon out the grease.)
-
Turn the heat back on to medium and add 5 cloves of minced garlic. Sauté until fragrant, about 1 minute (do not let it burn!).
-
Add a 24-ounce jar of marinara sauce (I love Rao’s sauce). Drain your 14.5-ounce can of diced tomatoes (simply invert the can over the sink with the lid slightly ajar). Add the drained tomatoes to the pan with the sausage.
-
Add 2 teaspoons oregano, 1 teaspoon salt, and 1/4 teaspoon pepper. (If using dried basil, add 1 teaspoon now.)
-
Let the sauce simmer over medium heat for about 5-15 minutes, depending on your available time. Allow it to bubble gently to help evaporate some of the liquid and deepen the flavors. Remove from heat and stir in 1/4 cup chopped fresh basil, if using.
-
Prepare the ricotta mixture: In a medium bowl, combine 3 cups ricotta cheese (approximately 1 and 1/2 pounds, or 1 and 1/2 of the 15-ounce tubs). See notes for adjusting cheese quantity.
-
Add 2 large eggs, 1 cup shredded Parmesan cheese, 1 teaspoon kosher salt, and 1/4 teaspoon black pepper. Stir all ingredients together until well combined.
-
To assemble: Preheat your oven to 375 degrees F (190°C).
-
Prepare your mozzarella: You will need 8 ounces (about 2 cups). You can shred it if preferred, but cutting it into 1/2-inch cubes creates delightful pockets of melted cheese throughout the lasagna.
-
Grease the edges of a 9×13 inch casserole dish with non-stick spray. Add about 1/2 cup of the marinara sauce to the bottom of the pan, spreading it to the edges.
-
Add your first layer of zucchini. Use 1/3 of the zucchini slices, placing any less perfect slices on this bottom layer. You can overlap the zucchini slightly.
-
Add half of the ricotta mixture and spread it evenly over the zucchini.
-
Add half of the remaining marinara sauce and spread it to the edges.
-
Add half of the cubed mozzarella (about 1 cup).
-
Layer the next 1/3 of your zucchini slices over the mozzarella.
-
Add the rest of the ricotta mixture.
-
Add the remaining marinara sauce.
-
Add the final layer of zucchini slices.
-
Sprinkle the rest of the mozzarella cubes (about 1 cup) over the top of the zucchini.
-
Sprinkle 1/2 cup shredded Parmesan cheese over the top of the mozzarella.
-
Bake the lasagna at 375°F (190°C) for about 45-55 minutes. It is done when the lasagna is bubbling around the edges, and the cheese on top is melted and just starting to brown.
-
Let the lasagna set up for at least 15 minutes before slicing into it. This allows the layers to firm up and prevents it from being too watery. Use a sharp serrated knife to cut through the zucchini when making slices, then lift each piece out with a large spoon or spatula.
-
Serve with crusty bread to mop up all that delicious sauce, if desired!
Notes
*While 3 cups of ricotta might seem like a lot, it provides a wonderfully rich and cheesy lasagna. If you prefer less cheese, you can certainly use just one 15-ounce tub of ricotta (and reduce the eggs to 1 large egg). Use any leftover ricotta for ricotta toast, or this Bacon Ricotta Crostini, or simply enjoy it with a sprinkle of salt and pepper!
How to store zucchini lasagna
Let your lasagna cool completely, then transfer it into an airtight container or cover the entire dish tightly with foil or plastic wrap. It’ll stay fresh in the fridge for up to 4 days.
How to reheat zucchini lasagna
You can reheat zucchini lasagna in either the microwave or the oven—both work, but the oven generally provides the best texture, preventing it from becoming too soft.
Microwave: Place a slice on a microwave-safe plate, cover it loosely with a damp paper towel (to help retain moisture), and heat for 1–2 minutes. Check if it’s hot all the way through, and zap in 30-second bursts if needed.
Oven: If using the oven, preheat it to 375°F (190°C). Put the lasagna in an oven-safe dish, cover with foil, and bake for 20–25 minutes. Remove the foil for the last 5 minutes to let the top get a little bubbly and golden. If it appears a little watery from the zucchini, gently blot any extra moisture with a paper towel before reheating, or allow it to bake a bit longer uncovered to help it evaporate.
Can you freeze zucchini lasagna?
Yes! Zucchini lasagna makes excellent meal prep and can be stored in individual portions or as a whole casserole in the freezer for 3-4 months. Ensure it is well sealed to prevent freezer burn. Thaw in the fridge overnight and then bake at 350°F (175°C) until bubbly and the cheese is melted, or bake it straight from frozen (covered) for at least 45-60 minutes, uncovering for the last 10-15 minutes. For smaller families, consider baking the casserole in two separate 8×8 square pans, baking both, and freezing one for a convenient future meal.
