Why do we ever even eat nachos without turning them into chili nachos?? It’s so much better!! This is the ULTIMATE chili nachos recipe, loaded up with beefy chili, white queso, guacamole, sour cream, and corn salsa! It is the best game-day food ever!

Ingredients
- 4 cups homemade beef chili
For the guacamole
- 4 large avocados
- 3/4 teaspoon salt
- juice from 2 small limes
For the corn salsa
- 4 cups frozen corn, thawed
- 3 roma tomatoes, chopped
- 1 or 2 jalapenos, seeded and chopped
- 1/2 cup fresh cilantro, chopped
- 1/2 cup red onion, chopped
- 1 teaspoon salt
- juice from 2 small limes
For the queso
- 8 ounces White American Cheese*
- 6 tablespoons milk, or more
- 1 tablespoon butter
- 1 (4-oz) can chopped green chilies
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 to 1/2 teaspoon crushed red pepper flakes
To assemble
- 1 large bag tortilla chips
- 1 cup cheddar cheese, shredded (divided)
- 1 & 1/3 cups sour cream, divided
- additional sliced limes, to garnish
Instructions
- Start, of course, by making The Best Chili Recipe I’ve Ever Made. This recipe is different from most because it uses beef chuck instead of ground beef, resulting in a melt-in-your-mouth texture. Any homemade chili recipe will do, but this one is my favorite.
- Make the guacamole. For a simple yet delicious guacamole, mash 4 avocados in a bowl. Add 3/4 teaspoon salt and lime juice to taste (approximately 3-4 tablespoons, or the juice from about 2 small limes).
- Make the corn salsa. Begin by allowing your frozen corn to thaw to room temperature.
- In a medium bowl, combine the thawed corn, 3 chopped roma tomatoes, 1 or 2 chopped jalapenos (adjust to your preferred spice level), chopped fresh cilantro, chopped red onion, 1 teaspoon salt, and the juice from 2 small limes. Stir all ingredients together and taste, adjusting the salt as needed.
- Make the queso. Break the White American cheese into small chunks and place them in a small saucepan. Add 6 tablespoons of milk and 1 tablespoon of butter. Turn the heat to LOW.
- Cook over low heat, stirring frequently, until the cheese is completely melted and the mixture is smooth and creamy.
- Add the entire can of chopped green chilies (no need to drain).
- Stir in 1 teaspoon each of cumin, garlic powder, and onion powder. Add 1/4 teaspoon of crushed red pepper flakes, or more if you desire extra spice. Continue to stir occasionally over low heat until you are ready to assemble the nachos (the queso will thicken slightly as it cools).
- To assemble: Arrange tortilla chips in 4 large shallow bowls or on individual plates**. Top each serving with about 1 cup of hot chili. Drizzle generously with the warm white queso dip.
