My immediate thought, as is often the case for someone with a touch of arachnophobia, was to brace myself for the worst. Ingredients

For the crust:

  • 2 cups Salted Caramel Blue Diamond Almonds*
  • 1 tablespoon sugar
  • 4 tablespoons butter, melted
  • dash salt

For the cheesecake:

  • 16 ounces cream cheese, room temperature
  • 1 10-oz jar salted caramel sauce (use a high-quality brand for best results)
  • 3/4 cup heavy cream, cold
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract

For the bananas:

  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 2 ripe bananas, cut into 1 or 2 inch pieces
  • Additional salted caramel sauce, for drizzling

Instructions

  1. Preheat the oven to 350 degrees F (175 C).
  2. Add the almonds to a food processor and pulse until finely ground, resembling coarse crumbs. Refer to photos for desired texture.
  3. Add the sugar and melted butter to the food processor and pulse briefly, once or twice, just until combined. Be careful not to over-process, or you’ll end up with almond butter.
  4. Press the almond mixture evenly into the bottom of a 9-inch springform pan. Extend the crust at least 1 inch up the sides of the pan. A flat-bottomed measuring cup works well for pressing it down firmly and evenly.
  5. Bake the crust at 350 degrees F for 10 minutes. Remove from the oven and immediately press the crust down again, as it will have puffed up slightly during baking. Place the pan in the freezer to cool completely.
  6. Once the crust is completely cool, begin preparing the cheesecake filling. In a large mixing bowl, beat the room temperature cream cheese until it is smooth and creamy. Add the entire jar of high-quality salted caramel sauce and beat well until fully incorporated and smooth.
  7. In a separate, clean bowl, beat the cold heavy cream until soft peaks form, which typically takes about 2-3 minutes. Gently beat in the powdered sugar and vanilla extract until just combined.
  8. Using a rubber spatula, carefully fold about one-third of the whipped cream into the cream cheese and caramel mixture.
