There’s an undeniable magic in the aroma of freshly baked goods, and these sweet cardamom rolls are no exception. Infused with the warm, aromatic embrace of cardamom and studded with delightful nuggets of pearl sugar, they offer a truly special experience. Perfect as a comforting breakfast treat or an elegant afternoon snack, these yeast rolls are a testament to the simple joys of Nordic baking. If you’re on a quest for exceptional cardamom recipes, consider this your starting point. The cardamom truly shines through, offering a fragrant depth without overpowering the delicate sweetness of the dough, while the pearl sugar provides an irresistible crunch that elevates every bite. Originally published March 29, 2019, this recipe has brought joy to many, and it’s time to discover why.

Baking can sometimes lead to unexpected discoveries, like stumbling upon long-forgotten treasures in the depths of your freezer. While I may have recently bid farewell to a frozen item with an expiration date from August 2015 – a humbling reminder of the passage of time and the need for better organization – the timeless joy of baking these cardamom rolls remains constant. This culinary journey often intertwines with personal anecdotes, much like the story of our first home’s appliances. When we purchased our current house years ago, it was because our rental was slated for a major renovation. Knowing the buyer planned a complete flip, we acquired the fridge, washer, and dryer for a mere $150. An astonishing deal, especially considering these pre-1990 workhorses continue to function, albeit with a quirky personality – like our “grandpa dryer” that requires multiple cycles for a truly dry load. These small quirks are part of the charm of home life, much like the imperfections that make homemade rolls so endearing.

Even though we eventually upgraded to a larger refrigerator, I insisted on keeping the old, tiny one. It’s become our trusty extra fridge, a place where, yes, even some items from 2015 might have briefly resided (don’t tell Eric!). But in all seriousness, it’s invaluable for holiday overflow, meal prep, and keeping ingredients perfectly chilled for baking projects like these cardamom rolls. This practical sentiment resonates with the resourcefulness often found in home kitchens, where every tool, no matter how old, finds its purpose. Just as an old appliance can still serve a function, traditional recipes like these rolls continue to bring warmth and flavor to our modern lives.

Discovering the Allure of Cardamom: Sweet Cardamom Rolls!

Are you a fan of cardamom? For many, this exquisite spice remains an undiscovered treasure until adulthood. Its unique flavor profile, a complex blend of floral, citrusy, and slightly spicy notes, is truly captivating. I often lament not discovering it sooner, though perhaps my palate wasn’t ready to appreciate its nuances back then. Interestingly, even my children, despite their sometimes picky tastes, absolutely adored these cardamom rolls. This could be due to their Swedish heritage, as cardamom holds a revered place in traditional Swedish baking.

Cardamom is a cornerstone of Nordic cuisine, particularly in pastries. My husband Eric’s family roots in Sweden undoubtedly play a role in this appreciation. If you’ve ever tried Swedish Cinnamon Buns with Cardamom, you’ll understand the delightful synergy of these flavors. In fact, the inspiration for this particular recipe for sweet cardamom rolls came from a beloved Swedish cookbook owned by Eric’s mother, a true authority on traditional Scandinavian baking. This recipe takes a classic yeast bread dough and transforms it into a sweet sensation with just a touch of extra sugar and the distinctive flavor of cardamom. I adapted it from my all-time favorite Aunt Shirley’s Famous Buttery Dinner Rolls, a recipe known for its incredible softness and rich butteriness. By adding a bit more sugar and a generous dash of cardamom, you create an exotic twist on a familiar comfort food, resulting in a treat that is both comforting and wonderfully unique.

Creating the perfect yeast roll involves careful attention to the dough. The process begins with activating the yeast in warm liquid, allowing it to bloom and create that signature fluffy texture. Kneading develops the gluten, giving the rolls their chewiness, and the subsequent rising periods are crucial for achieving their light, airy structure. When working with yeast, patience is key. Allowing the dough to rise in a warm, draft-free environment ensures maximum expansion and a beautifully soft crumb. This foundational dough, once mastered, becomes a versatile canvas for various flavors, and cardamom, with its distinctive aroma, is a perfect pairing for its buttery richness.

The Magic of Pearl Sugar!

While cardamom lays the aromatic foundation, the real magic happens with the addition of pearl sugar. Have you ever experienced the unique textural delight of pearl sugar? It’s an essential component for treats like Liege Waffles with Pearl Sugar, arguably the most incredible yeast waffles you’ll ever encounter. There’s a natural synergy between yeast-based baked goods and pearl sugar – they truly are a match made in culinary heaven!

Pearl sugar, also known as nib sugar or hail sugar, is essentially coarse, opaque granules of sugar that don’t melt at typical baking temperatures. Unlike regular granulated sugar, which dissolves into the dough, pearl sugar retains its shape, offering distinct pockets of sweetness and a satisfying crunch. Think of them as tiny, irregular sugar cubes, perfectly sized to provide bursts of caramelized texture. I typically purchase pearl sugar online through Amazon, as it can be tricky to find in regular grocery stores, though specialty European markets might carry it. It’s an affordable ingredient that unlocks a whole new level of texture in your baking. Stock up, make these divine cardamom rolls, and then treat yourself to Liege Waffles next weekend – it’s pure bliss!

A hand gently pinches a small portion of dough from a rising roll, checking its consistency and elasticity. The dough looks soft and airy, indicating a successful rise.

In this recipe, pearl sugar is incorporated in two ways: some is folded directly into the dough, and a generous sprinkle goes on top. While some of the sugar folded into the dough might melt and lend a delicate sweetness throughout, many pieces retain their form, creating those delightful little nuggets of crunchy, sparkly goodness within the soft interior. The additional sprinkle on top guarantees a double dose of crunch and a beautiful, glistening finish. The textural contrast between the soft, pillowy cardamom-scented dough and the crisp, sweet pearls is simply divine. (Note: The recipe instructions advise folding the pearl sugar into the dough *after* the first rise, to minimize dissolution and maximize crunch, which is my preferred method for optimal results.)

Enjoying Cardamom Rolls: All Day, Every Day!

These cardamom rolls are versatile enough to be enjoyed in many ways. They are utterly delicious just as they are, straight from the oven, their warmth releasing the fragrant cardamom. For those who enjoy a little extra richness, consider gently pulling one apart and spreading a generous pat of butter on the soft interior. I personally find that these rolls are perfect in their simplicity and don’t require a glaze, as the glaze can sometimes compete with the delicate texture and crunch of the pearl sugar. However, if you prefer a touch of extra sweetness and a glossy finish, a simple drizzle of powdered sugar glaze (made by stirring together a little milk and powdered sugar) would certainly be a delightful addition.

These rolls are ideal for a relaxed weekend brunch, especially when everyone in the household tends to wake up at different times. Their portability makes them a wonderful grab-and-go breakfast option for busy mornings, or a delightful pick-me-up during a leisurely afternoon. Imagine waking up to their inviting aroma on Easter morning, or serving them alongside coffee or tea during festive holiday gatherings. They bring a touch of cozy elegance to any occasion. And for a sweet anecdote, my daughter Valentine once saw me editing these photos and excitedly exclaimed, “Rolls, Mommy! Rolls with marshmallows!! I want one!” — not quite marshmallows, but certainly just as enchanting!

For optimal freshness, store any leftover cardamom rolls in an airtight container at room temperature for up to 2-3 days. To revive their soft texture, a quick warm-up in the microwave or oven will make them taste freshly baked. These rolls also freeze beautifully. Once cooled, wrap them individually or in small batches and store them in a freezer-safe bag for up to 2-3 months. Thaw them at room temperature or warm them gently from frozen for a quick treat. This makes them an excellent make-ahead option for holidays or unexpected guests, ensuring you always have a delightful Nordic treat on hand.

If you are looking for cardamom recipes, start with this one! It really shines in these rolls without being overwhelming. The pearl sugar adds the perfect crunch!

Prep Time: 15 mins

Cook Time: 15 mins

Total Time: 30 mins

Servings: 12 rolls

Ingredients

For the rolls

  • 1/4 cup warm water
  • 1 cup warm milk
  • 3 tablespoons butter
  • 1 tablespoon active dry yeast
  • 1 teaspoon granulated sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon cardamom
  • 1 teaspoon kosher salt
  • 1 large egg yolk
  • 3 & 1/4 cups all purpose flour, spooned and leveled**
  • 1/2 cup pearl sugar, optional (to fold in dough)

For the egg wash

  • 1 egg, beaten
  • 2 teaspoons water

For the top

  • cardamom, to sprinkle on top of each roll
  • pearl sugar, to sprinkle on top

Instructions

  1. In a small bowl or a glass measuring cup, combine the 1/4 cup water, 1 cup milk, and 3 tablespoons of butter. Microwave for about 30-60 seconds, stirring at least once, until the mixture is lukewarm (around 105 degrees F) but not hot. It’s okay if the butter hasn’t fully melted. If the mixture feels too hot to comfortably touch with your finger, allow it to cool in the fridge for a few minutes.
  2. Add 1 tablespoon yeast and 1 teaspoon sugar to the lukewarm liquid and stir gently. Let this mixture sit undisturbed for 5 minutes. It should become visibly foamy, indicating the yeast is active and healthy.*
  3. Transfer the foamy yeast mixture to a large mixing bowl or the bowl of a stand mixer.
  4. Add 1/2 cup granulated sugar, 1 teaspoon cardamom, 1 teaspoon kosher salt, and 1 large egg yolk to the bowl. Beat all the ingredients together thoroughly until well combined.
  5. Begin adding the flour, starting with half of the total amount. If using a stand mixer, attach the dough hook if you haven’t already. Add the remaining flour and continue to mix (or stir by hand) until a soft, pliable dough forms. If the dough seems overly sticky, you may add a small amount of additional flour, but aim to use the least amount necessary to achieve a workable consistency.
  6. Knead the dough with the dough hook or by hand for a full 5 minutes until it is smooth and elastic.
  7. Lightly spray a large, clean bowl with cooking oil or rub it with a small amount of butter to grease it. Shape the kneaded dough into a neat ball and place it in the greased bowl, turning it once to ensure the top surface is also lightly oiled. Cover the bowl tightly with plastic wrap and place it in a warm spot** to rise for 1 hour, or until the dough has visibly doubled in size.
  8. While the dough is rising, prepare your baking pan. Generously grease a 9×13 inch baking pan with butter or nonstick spray.
  9. Once the dough has doubled, gently punch it down to release the air. Use your hands to fold in the 1/2 cup of pearl sugar. This step is optional but highly recommended for delightful crunchy bits within your rolls. While some sugar may dissolve during baking, many pieces will remain intact, creating wonderful pockets of texture.
  10. Divide the dough into 12 equal pieces. Shape each piece into a smooth ball by pinching one end with your fingers to create a taut surface.
  11. Arrange the shaped rolls evenly in the well-greased 9×13 inch pan.
  12. In a small bowl, beat 1 egg with a fork. Add 2 teaspoons of water and mix to create an egg wash.
  13. Using a pastry brush, generously coat the top of each roll with the prepared egg wash.
  14. Lightly sprinkle each roll with a pinch of additional cardamom for an extra aromatic boost.
  15. Finally, top each roll with a small pile of pearl sugar, adding as much as you can get to stick for maximum crunch and sparkle.
  16. Cover the pan loosely with a clean tea towel and let the rolls rise in a warm spot for another 30-45 minutes, or until they have doubled in size. As they approach the end of their rising time, preheat your oven to 375 degrees F (190 degrees C). (If you’re using the oven as your warm spot, remember to remove the rolls before preheating!)
  17. Bake the rolls at 375 degrees F (190 degrees C) for 14-18 minutes, or until their tops are beautifully golden brown and evenly baked.
  18. Allow the rolls to cool in the pan for 5-10 minutes before serving. Enjoy them warm! They pair wonderfully with a glass of cold milk, a mug of hot cocoa, or a cup of coffee (or so I’m told by coffee drinkers!).

Notes

  • *If your yeast mixture does not become foamy after 5 minutes, it likely means your yeast is dead or the liquid was too hot/cold. It’s best to start over with fresh yeast and properly tempered liquid rather than proceeding with inactive yeast, which will result in flat, dense rolls.
  • **My favorite trick for a warm rising spot is the oven. Turn your oven to its “keep warm” setting (typically around 170 degrees F / 75 degrees C) for about 30-60 seconds, then turn it off. This creates a gently warm environment. If the inside of the oven feels too hot to touch comfortably, leave the door ajar for a few minutes to cool down before placing your dough inside.
  • I typically buy my pearl sugar on Amazon. While you might find it in a specialty European or baking supply store, it’s conveniently available and often more affordable online.
