  11. My Favorite Coleslaw (With Lemon and Fresh Herbs) Recipe

Last summer, my mom, sisters, and I embarked on a much-needed girls’ trip. It was a whirlwind of fun and laughter, despite our ambitious plan to “go to bed early every night” – a goal that, predictably, never quite materialized. Such is the sign of truly good times when sleep becomes a secondary consideration!

A close-up view of the vibrant lemon herb coleslaw in a serving bowl, showcasing the finely chopped herbs and shredded vegetables.

One of our planned activities was a cooking class at a rather upscale cookware store. We were eager to master the art of making fried chicken, classic coleslaw, and flaky biscuits. However, the class turned out to be quite an amusing disaster. While the company of my family was, as always, delightful, the instruction left much to be desired. Upon arrival, we discovered that the chef had already prepared the coleslaw. While I understand the importance of letting coleslaw chill to allow flavors to meld, a truly skilled instructor would typically demonstrate the preparation process and then present a pre-made batch for tasting, à la Martha Stewart.

Our biscuit-making experience was equally disappointing. The recipe yielded so few biscuits that we each received only one – a travesty by my “Karen’s Biscuit Standards,” which dictate a minimum of three per person, especially after paying a hefty $70 for the class. One biscuit for seventy dollars? Absolutely not!

Then came the fried chicken. As someone who struggles with achieving perfectly cooked, non-greasy fried chicken – often ending up with crispy outsides and raw insides that require a trip to the oven – I was eager to learn a chef’s secrets. Imagine my dismay when, after frying, we were instructed to bake the chicken to ensure it was thoroughly cooked. The entire experience felt like a waste of money.

To add insult to injury, when we inquired about taking home some of the leftover fried chicken (of which there were mountains), we were curtly informed that store employees enjoyed the leftovers from cooking classes. My immediate thought: “Did they pay $70 for those leftovers?” It was a moment that solidified my resolve to perfect these recipes at home, on my own terms.

This is Truly the Best Coleslaw Recipe in the World

Despite the culinary class debacle, there was one shining beacon: the coleslaw. Oh, that coleslaw! I genuinely believe I would have paid the $70 just for that recipe alone (well, maybe not, I’m quite frugal, but it was *that* good!). Since it was pre-made, I had ample opportunity to hover over the bowl, eagerly snagging forkful after forkful. It was a revelation.

What sets this coleslaw apart is the ingenious combination of fresh lemon and an abundant medley of herbs. For most of my life, I was a self-proclaimed coleslaw hater. It wasn’t until a few years ago that I even considered giving it another try, and even then, I never expected to become a fan. But this lemony, herbaceous delight? This is the coleslaw that converted me. It’s so bright, so fresh, and so incredibly flavorful that you won’t be able to stop at just one serving. It’s the kind of side dish that steals the show and leaves a lasting impression.

Why You’ll Adore This Fresh Coleslaw Recipe

For years, traditional coleslaw simply didn’t appeal to me. It felt bland, often too sweet, and generally uninspired. Then I tasted this recipe, and my perspective completely shifted. I went from a skeptic to an ardent admirer. Here’s precisely why this fresh coleslaw recipe will win you over:

  • The PERFECT Amount of Sweetness. Many coleslaw recipes err on the side of excessive sweetness, making the dish feel more like a dessert than a savory side. This recipe strikes an ideal balance, offering just enough sweetness to complement the tang without overwhelming the fresh flavors of the cabbage and herbs. It’s a subtle undertone, not the main event.
  • An Invigorating Tang. My love for lemon is no secret, and its bright, acidic notes are absolutely transformative in this coleslaw. The fresh lemon juice cuts through the richness of the mayonnaise and sour cream, adding a delightful zing that elevates every bite. This tang is key to its refreshing quality, making it a perfect antidote to heavy summer meals.
  • The Unmistakable Freshness of Herbs. If you’re new to cooking with fresh herbs, this recipe is your gateway to a world of enhanced flavor. The combination of dill, parsley, thyme, and chives provides layers of aromatic depth and a vibrant green appeal. Each herb contributes its unique character, creating a harmonious blend that is utterly irresistible. And a pro tip: whatever you do, do NOT skip the fresh dill – it’s absolutely essential for that signature taste!
  • An Ideal Flavor Combination. Beyond the sweetness and tang, this coleslaw boasts a sophisticated spice profile that sets it apart. Whole grain mustard adds a pleasant texture and a subtle, pungent kick, while caraway seeds introduce a warm, slightly peppery, anise-like flavor. Celery seeds contribute a delicate, earthy note that ties everything together. This isn’t just coleslaw; it’s a journey to “FlavorTown,” and you’re the star resident. Once you’ve experienced this depth of flavor, ordinary coleslaw will simply cease to exist for you.

What Goes into Crafting the Perfect Coleslaw?

Coleslaw recipes vary wildly, from simple, minimalist concoctions to more elaborate, flavorful creations. While many traditional versions stick to a basic combination of cabbage, carrots, mayonnaise, sugar, and salt, my preferred recipe takes it up several notches. I believe in maximizing flavor and freshness, which is why this coleslaw is packed with fresh herbs, tangy citrus, and thoughtfully chosen seasonings. Below is a comprehensive list of all the ingredients you’ll need to assemble this magnificent side dish. For precise measurements and more detailed instructions, please refer to the complete recipe card at the end of this article.

  • Cabbage (both red and green varieties offer a beautiful color contrast and textural diversity)
  • Carrots (adds natural sweetness and a vibrant pop of orange)
  • Shallot (a milder, more delicate onion flavor compared to larger onions)
  • Flat-leaf parsley (fresh, clean, and slightly peppery notes)
  • Fresh dill (crucial for its distinctive bright and slightly anise-like flavor)
  • Chives (delicate oniony flavor without the bite)
  • Fresh thyme (earthy and aromatic, adding depth)
  • Buttermilk (for a creamy tang and light texture in the dressing)
  • Mayonnaise (the classic creamy base for coleslaw dressing)
  • Sour cream (enhances creaminess and adds another layer of tang)
  • Lemon (both zest and juice for an intense burst of freshness and acidity)
  • White sugar (balances the acidity and enhances overall flavor, without making it overly sweet)
  • Whole grain mustard (adds texture and a robust, earthy spice)
  • Caraway seeds (a unique, slightly sweet and peppery spice that pairs wonderfully with cabbage)
  • Celery seeds (contributes an earthy, slightly bitter, and aromatic complexity)
  • Kosher salt (essential for seasoning and bringing out flavors)
  • Cracked pepper (freshly ground for optimal aroma and subtle heat)

How to Make the Best Coleslaw at Home

Creating this exceptional coleslaw is remarkably straightforward, requiring just a few simple steps. The key lies in combining fresh, high-quality ingredients and allowing the flavors ample time to meld. Below is a concise overview of the preparation process. For detailed instructions, precise measurements, and additional helpful hints, please refer to the complete recipe card provided further down the page. Get ready to transform ordinary cabbage into an extraordinary side dish!

  1. In a generously sized mixing bowl, combine all the vibrant shredded vegetables and finely chopped fresh herbs. This includes your shredded cabbage (whether red, green, or a delightful mix), carrots, minced shallot, parsley, dill, chives, and thyme. Ensure everything is well distributed for an even blend of flavors and textures.
  2. In a separate, smaller bowl or a convenient liquid measuring cup, prepare the luscious, tangy dressing. Whisk together the buttermilk, creamy mayonnaise, and rich sour cream. Then, introduce the star ingredients: both the bright lemon zest and fresh lemon juice, along with the white sugar, whole grain mustard, aromatic caraway seeds, and earthy celery seeds. Season generously with kosher salt and freshly cracked pepper to taste. Continue whisking until the dressing is perfectly smooth and all components are thoroughly combined.
  3. Once your dressing is ready, gently pour it over the prepared vegetable and herb mixture in the large bowl. Toss everything together until every shred of cabbage and carrot is beautifully coated in the creamy, flavorful dressing. Cover the bowl tightly and refrigerate for a minimum of 30 minutes. For optimal flavor development and a truly magnificent coleslaw experience, allow it to chill for several hours, or even up to 3 days. This resting period is crucial for the flavors to marry and deepen, resulting in a side dish that gets even better with time.

Expert Tips for Your Best Coleslaw Yet

Achieving truly outstanding coleslaw goes beyond just following the recipe; it involves a few key techniques and considerations. These tips will help you elevate your coleslaw from good to absolutely unforgettable, ensuring every bite is packed with fresh, balanced flavor and perfect texture.

One of the most crucial tools for this recipe is a good microplane grater for zesting your lemon. While you can certainly use the fine holes on a standard box grater, once you experience the effortless precision and fine zest produced by a microplane, you’ll never go back. A microplane not only extracts maximum flavor from the lemon peel without grating into the bitter white pith but also creates a delicate zest that integrates seamlessly into the dressing, rather than feeling chunky. It’s a game-changer for citrus zest in any recipe.

When it comes to the fresh herbs, ensure they are chopped very finely. The herbs are integral to the incredible flavor profile of this coleslaw, adding bursts of freshness and aroma. However, you want them to be subtly integrated into the dish, not large, unwieldy pieces. Finely chopped herbs distribute more evenly throughout the coleslaw and prevent any awkward “cow chewing its cud” moments with large sprigs sticking out. A sharp knife and a bit of patience go a long way here.

Finally, and perhaps most importantly, do not rush the chilling process. Allowing your coleslaw to chill in the refrigerator for a minimum of 30 minutes is good, but letting the flavors “marry” for several hours or even overnight is truly ideal. This resting period gives the dressing time to penetrate the cabbage and carrots, softening them slightly and allowing all the individual flavors – the lemon, the herbs, the mustard, and the seeds – to harmonize and deepen. Patience is a virtue in cooking, especially with this coleslaw, and it will be richly rewarded with an even more delicious and cohesive dish.

Here you can see the beautiful array of fresh herbs: vibrant flat-leaf parsley, delicate chives (or green onions, if chives are unavailable), aromatic dill, and fragrant thyme. I often find that buying a live thyme plant is just as cost-effective as purchasing cut herbs, and it offers the added bonus of fresh herbs whenever I need them. Have you noticed the increasing availability of living herb plants in grocery stores lately? It’s a fantastic trend! I love the idea of planting them in my garden for a continuous supply. It’s a sweet deal!

Observe the generous amount of dill in that measuring cup! That’s approximately how much a quarter cup of minced fresh dill looks like. The fresh dill is truly a superstar ingredient in this recipe, imparting an unparalleled brightness and unique aroma. Don’t be shy – if you’re a dill lover, feel free to toss in a little extra for an even more herbaceous punch!

The addition of fresh lemon zest and juice is what truly makes this coleslaw sing, infusing it with an incredible brightness and irresistible freshness. Do you own a microplane grater? If not, I highly recommend investing in one! They make zesting lemons (and other citrus, as well as hard cheeses and ginger) an absolute breeze, yielding fine, flavorful zest without the struggle. Just be mindful of your fingers – these handy gadgets are incredibly sharp! It’s one of my most cherished kitchen tools, and you can usually find them for a very reasonable price online.

Delicious Fresh Coleslaw Variations

While this lemon herb coleslaw is absolutely perfect as written, it also serves as a fantastic foundation for culinary creativity. Don’t hesitate to put your own unique spin on it! Here are a few exciting ideas to inspire your inner chef and help you customize this recipe to your liking:

  • Experiment with Your Citrus. Lemon provides a classic, bright tang, but feel free to swap it out for other citrus. Lime juice would offer a more tropical, pungent zest, while orange juice could introduce a subtly sweeter, milder acidity. A combination of different citrus juices could create a truly unique flavor profile.
  • Play with Cabbage Varieties. I love using a mix of half red and half green cabbage for the beautiful color contrast and varied textures they provide. However, you can certainly opt for all red or all green cabbage. For a softer texture and a slightly different flavor, consider using other types of cabbage like delicate Napa cabbage or crinkly Savoy cabbage, which absorb dressings beautifully.
  • Try a Different Mustard. Whole grain mustard adds delightful little pops of mustard seed and an earthy, robust flavor. But if you prefer something different, feel free to experiment. Dijon mustard would lend a sharper, more sophisticated zing, while a touch of hot mustard could introduce a subtle kick. Even honey mustard could work if you’re aiming for a sweeter, tangier dressing.
  • Mix and Match Your Herbs. Parsley, dill, thyme, and chives create a wonderfully balanced and aromatic combination in this recipe. However, the world of fresh herbs is vast and inviting! If you have fresh cilantro on hand, it would add a vibrant, slightly citrusy note. Rosemary could introduce an earthy, piney aroma, especially delicious with grilled meats. And fresh tarragon would bring a delicate, slightly anise-like flavor that pairs beautifully with creamy dressings. Feel free to use what you have growing in your garden or what’s freshest at your local market.
  • Add Some Crunch or Sweetness. For an extra layer of texture, consider adding a handful of toasted nuts like slivered almonds or pecans. Seeds such as sunflower or pumpkin seeds also work wonderfully. For a touch of natural sweetness and chewiness, dried cranberries or golden raisins can be a delightful addition, especially when balanced by the tangy dressing.
  • Incorporate Other Vegetables. Beyond carrots, finely diced bell peppers (red, yellow, or orange) can add color and a mild sweetness. Shredded broccoli stems or thinly sliced radishes can contribute additional crunch and a subtle peppery bite.

Its bright, tangy, and herbaceous profile makes it an ideal pairing, cutting through richness and adding a refreshing contrast to countless summer favorites. Here are some of my top recommendations for entrées that truly shine when served alongside this incredible coleslaw:

Nana’s Fall-Off-The-Bone Ribs << These tender, succulent ribs are a family tradition for a reason. The richness of the BBQ sauce finds its perfect counterpoint in the zesty freshness of the coleslaw.

Simply Amazing Grilled Chicken << Once you try this perfectly marinated and grilled chicken, it’s destined to become a summer staple. The light, herbal notes of the coleslaw enhance the smoky flavor of the chicken beautifully.

Texas Beef Brisket In The Oven << Experience tender, smoky, and unbelievably flavorful brisket that’s surprisingly easy to make at home. The crisp, tangy coleslaw offers a refreshing balance to the rich, slow-cooked beef.

Slow Grilled Mustard Chicken << I absolutely adore the bold, savory flavor profile of this chicken recipe. Its robust taste is perfectly complemented by the bright and tangy notes of our homemade coleslaw.

Slow Cooker Pulled Pork << This versatile pulled pork is fantastic piled high on sandwiches or simply plated with your favorite sides. The coleslaw adds a much-needed textural crunch and bright acidity to the tender, savory pork.

Cuban Roasted Mojo Pork << While I haven’t personally tried this pairing yet, I have a strong feeling that the vibrant, garlicky citrus flavors of the Mojo pork would be absolutely incredible with the fresh, zesty coleslaw. It sounds like a winning combination!

Honey Balsamic Pork Ribs << Another one of my favorite rib recipes, these ribs are delightfully sweet and tangy. The crisp, herbaceous coleslaw provides a wonderful contrast, making each bite even more satisfying.

How to Store Your Fresh Coleslaw

One of the beauties of this coleslaw recipe is how well it holds up in the refrigerator, allowing you to prepare it ahead of time for optimal flavor. As mentioned, it absolutely needs at least 30 minutes for the flavors to start mingling, but it truly becomes exceptional after a few hours of chilling. This allows the dressing to fully permeate the cabbage and herbs, and for all the aromatic components to meld into a harmonious whole. For the best texture and freshness, plan to consume it within 3 days. Beyond that, you might notice a bit more separation between the liquid and solids, and the crispness of the cabbage may diminish slightly. Always store your coleslaw in an airtight container to maintain its freshness and prevent it from absorbing other odors in your fridge.

Can You Freeze Coleslaw?

In short: no, definitely not, and here’s why! While cooked cabbage, like in a hearty soup, freezes wonderfully, fresh cabbage behaves very differently. When raw cabbage is frozen and then thawed, its crisp, vibrant texture is completely compromised, becoming limp and watery. This recipe is all about celebrating the crispness and freshness of the ingredients, which would be lost entirely through freezing. Thankfully, this coleslaw comes together so quickly and easily that if you find yourself craving more, whipping up a fresh batch is always the best and most rewarding option. Enjoy it fresh, as intended!

My Favorite Coleslaw (With Lemon and Fresh Herbs) from The Food Charlatan
This is not your average coleslaw! It is brightened up with some lemon juice and tons of fresh herbs (like dill, parsley, thyme, and chives). It’s not overly sweet like so many recipes are. It’s my absolute favorite for BBQs and potlucks!

Ingredients

  • 1 pound cabbage, about 6 cups, red or green*, shredded
  • 2 medium carrots, peeled and shredded
  • 1 small shallot, minced (2 tablespoons)
  • 1/4 cup flat-leaf parsley, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup chives, finely chopped**
  • 1 teaspoon fresh thyme leaves, minced
  • 1/4 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 large lemon, zested and juiced
  • 1 tablespoon white sugar
  • 1 tablespoon whole grain mustard
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon celery seeds
  • 1/2 teaspoon salt
  • cracked pepper, to taste
Prevent your screen from going dark

Instructions

  • In a large bowl, toss together cabbage, carrots, shallot, parsley, dill, chives, and thyme. Refer to the accompanying photos for visual guidance on shredding cabbage and estimating dill quantity.
  • In a small bowl or liquid measuring cup, combine the buttermilk, mayonnaise, sour cream, lemon zest and lemon juice, sugar, whole grain mustard, caraway seeds, celery seeds, 1/2 teaspoon salt, and black pepper to taste. (For effortless zesting, I highly recommend using a microplane grater. It truly makes the task so much easier and more efficient.)
  • Whisk the dressing ingredients thoroughly until they are well combined and smooth.
  • Pour the prepared dressing over the tossed salad. Cover the bowl tightly and chill in the refrigerator for at least 30 minutes. For optimal flavor and texture, allow it to chill for several hours or even up to 3 days. The longer it rests, the more the cabbage will release its moisture, contributing to an even richer and more flavorful dressing. Enjoy every delicious bite!

Notes

*For a visually appealing and flavorful coleslaw, I typically use a combination of half red cabbage and half green cabbage.

**If fresh chives are unavailable, finely chopped green onions (scallions) make an excellent and flavorful substitute.
