What are Cowboy Cookies? The Legendary “Everything But The Kitchen Sink” Treat

Cowboy Cookies, also endearingly known as “Cow Chip Cookies” due to their generous size, are a celebration of abundance. They embody the spirit of throwing a delightful medley of ingredients into a classic cookie dough, resulting in an extraordinary treat. This particular recipe hails from Texas, shared with me by my sister who resides there, a true testament to its local popularity. It’s a classic “hand-me-down” recipe, passed from a friend to her social circle, and originally from her mother – proving it’s tried, tested, and utterly beloved.

While the original version might include raisins, I’ve customized this recipe to suit a broader palette, omitting them for a universally appealing flavor profile. Truly, these could be called “Everything But The Kitchen Sink Cookies” because of the sheer variety of delicious additions. We’re talking crunchy pecans, creamy peanut butter chips, chewy coconut flakes, hearty oats, and crispy corn flakes. Each ingredient contributes a unique texture and flavor, yet somehow, they all marry together perfectly to create a complex, interesting, and incredibly satisfying cookie. It’s a symphony of sweet and savory, soft and crunchy, making every bite a delightful surprise.

How to Make This Unforgettable Cowboy Cookie Recipe: Step-by-Step Guide

These cookies are truly a joy to bake and even more so to eat! The abundance of mix-ins naturally encourages a slightly wider spread during baking, but this is precisely what gives them their signature crispy edges and wonderfully soft, chewy centers. Remember, we’re making Texas-sized cookies here – everything’s bigger in Texas, right? So let’s dive into creating these magnificent treats.

**(Calling all my Texas readers! Is this recipe familiar to you? Did your mom or grandma bake these? Share your stories in the comments!)**

Finely chopped pecans on a wooden cutting board, prepped for baking.
  1. Toast the Pecans (Highly Recommended!): This crucial step elevates the nutty flavor. Roughly chop your pecans and spread them in a dry skillet over medium heat. Toast for 3-5 minutes, stirring occasionally, until they become wonderfully fragrant. Be vigilant to prevent burning! Immediately remove them from the heat and let them cool completely while you prepare the cookie dough. This fine chop, about the size of a chocolate chip, is ideal, but don’t fret if some pieces are “Texas-sized” – these cookies are forgiving!
  2. Cream the Butter: In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter until it’s light, fluffy, and pale in color. This process incorporates air, contributing to the cookie’s tender texture.
  3. Add Sugars: Introduce both the white sugar and brown sugar to the creamed butter. Continue to beat on medium speed until the mixture is well combined and light. Remember to pause and scrape down the sides and bottom of the bowl thoroughly with a spatula to ensure all ingredients are evenly incorporated.
  4. Incorporate Eggs and Vanilla: Add the eggs one at a time, beating well after each addition until fully incorporated. Follow with the vanilla extract, mixing until just combined.
  5. Combine Dry Ingredients: In a separate small bowl, whisk together the flour, salt, baking powder, and baking soda. This ensures the leavening agents and salt are evenly distributed throughout the dry mixture.
  6. Gradually Add Dry to Wet: Add the dry flour mixture to the wet ingredients in the large bowl. Mix on low speed just until the flour is about halfway incorporated. Overmixing at this stage can develop the gluten in the flour too much, leading to tough cookies.
  7. Fold in the Oats, Corn Flakes, Pecans, and Coconut: Gently fold in the old-fashioned oats, corn flakes, toasted pecans, and coconut flakes. Mix until these delightful additions are just distributed throughout the dough.
  8. Stir in the Baking Chips: Finally, add the peanut butter chips and semi-sweet chocolate chips. Continue mixing on low speed or by hand until everything is just incorporated. Again, be careful not to overmix the dough.
  9. Chill the Dough: This step is essential for cookie success! Cover the dough and chill it in the refrigerator for at least 1 hour, or preferably up to 24 hours. Chilling helps the butter solidify, preventing the cookies from spreading too much and resulting in a thicker, chewier cookie.
  10. Prepare for Baking: When ready to bake, preheat your oven to 350°F (175°C). Line a couple of baking sheets with parchment paper or a silicone baking mat.
  11. Scoop Large Cookies: Using a 1/4 cup measuring cup or a large cookie scoop (truly, THINK TEXAS, YA’LL!), scoop generous portions of dough onto the prepared baking sheets. Leave at least 2-3 inches between each dough ball to allow for proper spreading.
  12. Bake to Golden Perfection: Bake for 12-14 minutes, or until the edges are golden brown and the centers are set but still look a tiny bit soft and slightly shiny. The residual heat will continue to cook them as they cool.
  13. Cool and Enjoy: Remove the baking sheets from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely. This helps them firm up and prevents breakage. Then, try to resist the urge to devour them all immediately! These are particularly fantastic dipped in a cold glass of milk.

Like the most incredible trail mix you’ve ever had, but way, way better because it’s baked into a cookie.

Big cookies. Because why settle for anything less when TEXAS is right there in the name?

And this goes without saying (because I think this is true for every cookie recipe ever), but THE DOUGH. Oh man. I always have leftover shaped cookie dough balls in the freezer, and sometimes I pull one out and just eat it raw, or microwave it for a few seconds so it gets all gooey. DO IT!

Expert Cowboy Cookies Recipe Tips for Perfect Baking

Why are my cookies flat? Troubleshooting Common Cookie Issues

Flat cookies can be disheartening, but it’s a common issue with several straightforward solutions. Here’s how to avoid those “cookie-puddle” disasters and ensure your Cowboy Cookies have the perfect structure:

  1. Chill the Dough Thoroughly: This is arguably the most critical step. Cold dough means cold butter, and cold butter melts more slowly in the oven, preventing the cookies from spreading too rapidly. Aim for at least 1 hour of chilling, but 2-3 hours or even overnight can yield even better results. This gives the flour time to fully hydrate and the flavors to meld.
  2. Measure Flour Accurately: Too little flour results in a dough without enough structure to hold its shape, causing excessive spreading. The best method is to fluff the flour in its container, then spoon it gently into your measuring cup and level it off with a straight edge (like a knife). Avoid scooping directly with the measuring cup, as this compacts the flour and adds too much. Weighing your flour with a kitchen scale is the most precise method if you have one.
  3. Use Cool Cookie Sheets: Baking dough on a warm cookie sheet will cause the butter to melt immediately, leading to flat cookies. After one batch comes out of the oven, allow the baking sheet to cool completely before placing new dough on it. You can speed up the process by rinsing the sheet with cold water and thoroughly drying it, or simply use a second cool baking sheet if you have one.
  4. Don’t Overmix the Dough: Overmixing develops gluten, which can make cookies tough and also contribute to excessive spreading. Mix only until the ingredients are just combined, especially after adding the flour and mix-ins.

How do I make my cookies thicker and chewier?

If you’re aiming for a thicker, chewier cookie, reinforcing the points above is key. Let’s recap and elaborate on the “thick cookie checklist”:

  • Measure the flour carefully: As mentioned, accurate flour measurement provides the necessary structure.
  • Chill the dough for an extended period: The longer the dough chills, the firmer the butter becomes, which translates to less spread and a thicker cookie.
  • Put the cookie dough on cool sheets: This ensures a gradual melt of the butter, allowing the cookies to set before spreading too much.
  • Increase Mix-Ins (within reason): While this recipe already has plenty, slightly increasing the amount of chunky mix-ins (like nuts and chips) can help physically impede spread, resulting in a taller cookie. Be careful not to add too much, or the cookies might fall apart.

Even if you’ve followed all these steps and your cookies still come out a bit flatter than desired, don’t worry! There’s a clever trick you can use right after they emerge from the oven. While the cookies are still hot and pliable, gently push the edges back towards the center using two spoons or the back of a wide drinking glass. This quick maneuver helps to reshape them into a thicker, more uniform circle. This slight adjustment can make a big difference in achieving that perfectly thick, bakery-style cookie appearance.

Texas Cowboy Cookies Recipe Variations: Customize Your Batch!

The beauty of Cowboy Cookies lies in their versatility. While the original blend of ingredients is phenomenal, don’t hesitate to get creative and customize your batch to suit your taste preferences. Here are some exciting variations to try:

  • Experiment with Other Baking Chips: The world of baking chips is vast and delicious! Beyond peanut butter and semi-sweet chocolate, consider adding white chocolate chips for a creamy sweetness, butterscotch chips for a rich, caramel-like flavor, or even cinnamon chips for a warm spice note. Dark chocolate chunks or milk chocolate chips also make fantastic substitutions.
  • Swap or Omit Nuts: Pecans are classic, but feel free to substitute them with other chopped nuts like walnuts, almonds, or even macadamia nuts for a different flavor and crunch. For a nut-free option, simply omit the nuts entirely and perhaps increase another mix-in slightly to maintain volume, or add seeds like sunflower or pumpkin seeds for texture.
  • Introduce Other Crunchy Elements: The corn flakes add an amazing crunch, but you can explore other crispy additions. Try crushed pretzels for a salty-sweet twist, or even a handful of potato chips for an unexpected savory crunch. Just be sure to keep the total volume of these additions similar to the corn flakes (e.g., substitute 1 cup crushed pretzels for 1 cup corn flakes) to avoid overwhelming the dough.
  • Add Dried Fruits: While I personally skip raisins, other dried fruits can be a wonderful addition. Consider dried cranberries for a tart counterpoint, chopped dried apricots, or even dried cherries for a burst of fruity flavor.
  • Candy Bar Chunks: For an extra indulgent treat, chop up your favorite candy bars (Snickers, Twix, M&Ms, etc.) and fold them into the dough. This adds a delightful surprise and an extra layer of sweetness.
  • Spices and Extracts: Enhance the flavor profile with a pinch of cinnamon, nutmeg, or even a dash of espresso powder to deepen the chocolate notes. A hint of almond extract can also complement the coconut and nut flavors beautifully.

The key is to maintain a balance of textures and flavors and to not add too many wet ingredients or very large chunks that could prevent the cookies from holding together. Have fun with it and create your signature Cowboy Cookie!

How to Store Leftovers and Keep Cowboy Cookies Fresh

Proper storage is key to enjoying your delicious Cowboy Cookies for as long as possible. Whether you’ve got baked cookies or raw dough, here’s how to keep them fresh and ready for whenever a craving strikes:

Storing Baked Cowboy Cookies:

Once your Cowboy Cookies have cooled completely, transfer them to an airtight container. Store them at room temperature for up to 1 week. If you prefer them to last a bit longer, they can be kept in the refrigerator for up to 2 weeks. For extended freshness, consider freezing them.

How to Freeze Baked Cowboy Cookies:

Freezing baked cookies is incredibly easy. Place the completely cooled cookies in a single layer on a baking sheet and freeze for about 30 minutes until firm. This prevents them from sticking together. Then, transfer them to a freezer-safe zip-top bag or an airtight container, layered with parchment paper if needed. They will stay fresh in the freezer for up to 3 months. To enjoy, simply bring them to room temperature, or warm them briefly in the microwave for a gooey, fresh-from-the-oven experience.

How to Freeze Cowboy Cookie Dough for Future Cravings

Freezing cookie dough is a fantastic way to ensure you always have fresh, warm cookies just minutes away. This method allows you to bake a single cookie or a whole batch on demand:

Use a cookie scoop to portion out balls of dough onto a baking sheet lined with parchment paper or a silicone mat. Ensure the dough balls are not touching. Place the baking sheet in the freezer for at least 30 minutes, or until the dough balls are solid. Once frozen, transfer the solid dough balls to a freezer-safe zip-top bag or an airtight container. They will keep well for 2-3 months, as long as the container is tightly sealed (and you manage not to sneak them all!).

When you’re ready to bake, there’s no need to thaw the dough! Simply place the frozen cookie dough balls on a prepared baking sheet and bake as directed in the recipe. You might need to add an extra 2-4 minutes to the baking time since they are starting from frozen. The result will be perfectly baked, warm, and gooey cookies, just like they were freshly made.

And yes, if you’re like me, those frozen cookie dough balls are also incredibly tempting straight from the freezer. A quick microwave for a few seconds can bring them to maximum gooeyness – a little treat for the impatient baker!

Frequently Asked Questions About Cowboy Cookies

What does brown sugar do to cookies?

Brown sugar is a true superhero when it comes to creating the perfect chewy cookie! Unlike granulated white sugar, brown sugar contains molasses, which is a key factor in its impact on cookie texture. This molasses not only adds a deeper, more complex caramel-like sweetness but also contributes significantly more moisture to the dough. This increased moisture results in cookies that are wonderfully soft, dense, and incredibly chewy, rather than dry and crumbly. It also helps with the slight spread of the cookie, giving it that perfect shape. For the ultimate chewy cookie, a good balance of both white and brown sugar is essential, as seen in this Cowboy Cookie recipe.

Can I use quick oats instead of old-fashioned oats?

While old-fashioned oats (rolled oats) are recommended for their hearty texture and chew that holds up well in these substantial cookies, you can substitute quick oats if absolutely necessary. However, be aware that quick oats are cut finer and processed more, so they will absorb more moisture and create a softer, less structured cookie. Your cookies might lose some of that signature chewiness and could spread a bit more. For the best results and the authentic Cowboy Cookie experience, stick with old-fashioned oats.

Texas Cowboy Cookies (Cow Chips) from The Food Charlatan
Everything’s bigger in Texas and these Cowboy cookies (sometimes called Texas Cow Chips) are no exception. They are crispy on the edges but chewy and moist in the middle, and have about a hundred mix-ins that all combine to create the Texas of all cookies.

Ingredients

  • 1 cup butter, softened (2 sticks)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old fashioned oats
  • 1 cup corn flakes
  • 1 cup pecans, roughly chopped (and toasted!)
  • 1/2 cup coconut flakes
  • 1 (6-oz) cup peanut butter chips
  • 1 (6-oz) cup semi-sweet chocolate chips

Instructions

  1. If you want to toast your pecans (highly recommended for enhanced flavor!), chop them up and throw them in a dry skillet over medium heat. Toast for 3-5 minutes, stirring frequently, until fragrant. Do not let them burn! Remove from heat and let cool while you prepare the dough.
  2. In a large bowl or stand mixer, beat the softened butter until it is light and fluffy, about 2-3 minutes.
  3. Add both the white sugar and brown sugar to the butter. Beat well for another 2-3 minutes, making sure to scrape down the sides and bottom of the bowl occasionally to ensure even mixing.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until just combined.
  5. In a separate medium bowl, whisk together the flour, salt, baking powder, and baking soda. Add this dry mixture to the wet ingredients in the large bowl. Mix on low speed until the flour is about halfway incorporated. Do not overmix.
  6. Gently fold in the old-fashioned oats, corn flakes, cooled toasted pecans, and coconut flakes until evenly distributed throughout the dough.
  7. Finally, add the peanut butter chips and semi-sweet chocolate chips. Mix until everything is just incorporated. Overmixing at this stage can lead to a tough cookie.
  8. Chill the dough in the refrigerator for at least an hour, or up to 24 hours. This chilling process is crucial for preventing the cookies from spreading too much and for developing richer flavors.
  9. Preheat your oven to 350 degrees F (175 degrees C). Line a couple of baking sheets with parchment paper or a silicone baking mat.
  10. Using a 1/4 cup measuring cup (THINK TEXAS, YA’LL!), scoop generous portions of dough onto the prepared baking sheets. Leave at least a couple of inches in between each ball of dough to allow for proper spreading.
  11. Bake for 12-14 minutes, or until the cookie edges are golden brown and the centers are set but still look slightly soft and not overly shiny.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Resist the urge to eat them all immediately! These cookies are especially delicious when dipped in milk.

Notes

*If you are in a big hurry like I always am (Who’s not in a hurry to eat cookies?), try my cheat-chill: Shape the dough onto pans as described above and toss in the freezer for 30 minutes. Then bake as directed. Alternatively, you can shape the dough into balls, place them in zip-top bags, and freeze them to have cookies ready to be baked at a moment’s notice! (I always have cookies in my freezer. Always.)
*My sister pointed out that “ya’ll” is often spelled with an apostrophe. But since I’m just a Texas poser, I’m leavin’ it.
