There’s a subtle art to creating truly memorable food. It’s not just about following a recipe, but about understanding how each ingredient contributes to the grand symphony of flavors. This philosophy guides us in every dish we create, much like how life often surprises us with unexpected wisdom. Recently, my teenager, Charlotte, shared a fascinating fact about pineapple plants, and in my perpetually dazed state, I had a momentary lapse in logic that left everyone chuckling. It reminded me that while I may not always be the sharpest tool in the shed, my passion for creating exceptional meals—like these incredible green chicken enchiladas—is unwavering. Sometimes, the simplest ideas, when executed with thoughtfulness, yield the most extraordinary results. And these enchiladas? They’re pure genius.

a plate filled with rice, beans, and chicken enchiladas with jalapeno, lime, and avocado garnish.

Just like realizing a pineapple plant only produces a few fruits in its lifetime can be a surprising revelation, so too is discovering how much flavor you can pack into a seemingly simple dish. These aren’t just any enchiladas; they are a testament to how careful attention to detail and quality ingredients can transform a weeknight meal into a culinary triumph. So, while I’m happily embracing my role as the family’s resident source of accidental comedy, I’m also here to guide you through creating these mind-blowing enchiladas. No advanced degrees required, just a love for delicious food!

These Green Chicken Enchiladas: A Flavorful Revelation

Prepare yourselves, because these are not your average chicken enchiladas. We’re talking deeply flavorful, wonderfully saucy, and irresistibly cheesy creations that burst with vibrant green goodness – a feast for both the eyes and the palate. My family, despite having enjoyed countless batches over recent weeks, still can’t get enough of them, which speaks volumes about their undeniable deliciousness.

When developing this recipe, I became so captivated by the nuances of perfecting each element – from the ideal sauce consistency and flavor profile to the perfect chicken filling and cheese blend – that I decided to offer two distinct, yet equally delicious, pathways to green enchilada sauce glory. This post will guide you through the complete assembly of these mouthwatering enchiladas, featuring a quick and incredibly flavorful “cheater” green enchilada sauce that utilizes convenient store-bought ingredients with a homemade twist. If you’re seeking an authentic, from-scratch experience, be sure to explore our sister post dedicated entirely to crafting a traditional Green Enchilada Sauce, made with roasted peppers and tomatillos. Whether you opt for speed or tradition, you’re guaranteed an outstanding result.

Elevate Your Enchilada Sauce: Ditch the Cans!

One non-negotiable aspect of exceptional enchiladas is the sauce. The truth is, canned green enchilada sauce simply doesn’t measure up. Often thin and lacking depth, these commercial sauces are typically made with water and soybean oil as primary ingredients, offering little in terms of vibrant, authentic flavor. We can, and should, do much better! The good news is that creating a superior sauce at home is surprisingly easy and rewarding.

Our “cheater” recipe, conveniently detailed in the notes of this post’s recipe card, is a brilliant hack. It’s akin to choosing between a bland canned tomato soup and taking a few minutes to combine canned tomatoes with a few key seasonings to create an infinitely richer and more satisfying Creamy Tomato Soup. This quick green enchilada sauce brings together fresh salsa verde, fire-roasted green chilies, cilantro, and a touch of lime and Mexican crema for a creamy, zesty, and utterly delicious alternative that comes together in minutes.

For those who crave the deepest, most complex flavors, our authentic Green Enchilada Sauce recipe is a game-changer. It’s a celebration of fresh ingredients, starting with plump tomatillos, the essential flavor base of any great green sauce. We roast actual Anaheim peppers, infuse the sauce with a whole head of garlic, and build layers of flavor with fresh onion and jalapeño. This slow-roasted approach yields a sauce that is truly incomparable.

So, whether you’re enjoying a leisurely afternoon with time for simmering or navigating a chaotic weeknight, we have a green enchilada sauce option that fits your life. No matter which path you choose, these sauces promise to elevate your homemade enchiladas to an unprecedented level of deliciousness that will astound your taste buds.

The Secret to the Best Chicken Enchilada Recipe: Flavor in Every Layer

What truly sets this chicken enchilada recipe apart isn’t a single magical ingredient, but a steadfast rule: cultivate **flavor in every layer**. This principle means that each component of these enchiladas is meticulously prepared to be exceptionally flavorful on its own, contributing to a harmonious and deeply satisfying whole. There are no shortcuts or filler ingredients here; every element, from the tortilla to the cheese, is designed for maximum impact.

  • Superior Corn Tortillas: We insist on using corn tortillas over flour. Corn tortillas inherently possess a delightful sweet, nutty, and buttery flavor profile that flour tortillas simply cannot replicate. They are more traditional and provide a foundational depth that is crucial for authentic enchiladas.
  • The Magic of Charred Tortillas: This seemingly small step yields immense flavor. Charring your corn tortillas directly over a gas flame for just a few minutes imparts a smoky, slightly blackened, and robust flavor that infuses every bite of your enchiladas. If you don’t have a gas stove, don’t worry – we provide instructions for warming them effectively in the microwave, ensuring they remain pliable and flavorful.
  • Exquisitely Flavorful Chicken: While you *could* use plain rotisserie chicken, we believe in taking the chicken filling to the next level. Our preferred method is to prepare the same succulent shredded chicken used for our Chicken Tacos. This involves using rich, tender chicken thighs, which offer more fat and flavor than breast meat, seared or slow-cooked with a blend of spices that is truly phenomenal. The seasoned chicken becomes a star in itself, not just a simple filling.
  • A Symphony of Cheeses: A blend of cheeses creates complexity and the perfect melt. We absolutely adore Oaxaca cheese for this recipe, often hailed as “the mozzarella of Mexico.” It’s a mild, white, stringy cheese that melts beautifully and carries a distinct, authentic Mexican flavor. If you’ve ever had an unforgettable quesadilla at a Mexican restaurant, chances are it featured Oaxaca cheese. When combined with creamy Monterey Jack, the result is a rich, gooey, and utterly satisfying cheese layer. If Oaxaca is hard to find, good quality mozzarella or extra Monterey Jack makes a fine substitute.
  • The Indispensable Sauce: Without a doubt, the sauce is the heart and soul of any enchilada. Skimping here by using low-quality canned sauce means sacrificing the very essence of the dish. As mentioned, you have two exceptional options: our homemade authentic Green Enchilada Sauce, which delivers a gorgeous slow-roasted depth from fresh ingredients, or our quick “cheater” recipe in the notes, which provides a slightly creamier, incredibly flavorful version using convenience ingredients like fire-roasted chilies and fresh salsa verde. Both are genuinely delicious and elevate the enchiladas far beyond any store-bought alternative.

Essential Ingredients for Perfect Green Chicken Enchiladas

After years of cooking, I’m still amazed at how often the most beloved and restaurant-quality recipes rely on surprisingly simple, fresh ingredients. These green chicken enchiladas are no exception. The key is sourcing good quality items that are readily available at your local grocery store. Below is a comprehensive list of what you’ll need to create this culinary masterpiece. For precise measurements and full, detailed recipe instructions, please refer to the recipe card at the bottom of this post!

bowl of green enchilada sauce, bowl of seasoned chicken, tortillas, and cheese on a table.
  • Cooked Chicken: The heart of our filling. We highly recommend using the succulent, seasoned chicken from our Chicken Tacos recipe for unparalleled flavor and tenderness.
  • Oversized Corn Tortillas: Opt for 6-7 inch tortillas, as they hold the filling better and char beautifully, adding a critical layer of flavor.
  • Oaxaca Cheese: A distinct Mexican string cheese, similar to mozzarella but with a unique, creamy flavor that screams “Mexico.” Shredded for the filling, it melts wonderfully. Mozzarella is a good alternative if you can’t find it.
  • Monterey Jack Cheese: This mild, creamy cheese complements Oaxaca perfectly, contributing to the ultimate cheesy topping.
  • Homemade Green Enchilada Sauce: The soul of the dish! Choose either our authentic Green Enchilada Sauce for deep, roasted flavors or the quick cheater version detailed below.

Or, make the Cheater Green Enchilada Sauce:

  • Fresh Salsa Verde: Look for this in the refrigerated section of your grocery store. Its primary ingredient should be tomatillos, providing that essential tangy base.
  • Fire-Roasted Green Chilies: These canned chilies are crucial for a smoky depth and a hint of heat. You can choose mild or hot varieties to suit your preference.
  • Cilantro: This fresh herb adds a magical, bright, and authentic flavor that is indispensable in Mexican cuisine.
  • Lime: Fresh lime juice provides the necessary acidity to balance the rich flavors of the sauce, adding a vibrant zest.
  • Better Than Bouillon Chicken Base: This secret weapon adds a powerful punch of umami and chicken flavor without adding excess liquid, concentrating the deliciousness.
  • Kosher Salt: Essential for enhancing all the other flavors. Think of salt as a megaphone for your ingredients!
  • Mexican Crema (or sour cream): Adds a luxurious creaminess and richness to the sauce, giving it a silky texture and a delightful tang.

How to Make Chicken Enchiladas: A Step-by-Step Guide

The journey to incredible green chicken enchiladas begins with your sauce! First, decide if you’re making our authentic homemade version or the convenient cheater sauce. Here’s a visual of the ingredients you’ll need if you opt for the quick, easy sauce:

ingredients for green enchilada sauce using store bought ingredients like cans of green chiles and salsa verde.

For all the ingredients and a detailed walkthrough on making our authentic Homemade Green Enchilada Sauce, simply tap the link provided. This method typically takes about an hour, making it an excellent choice for meal prepping ahead of time!

Once your chosen sauce is ready, transfer it to a shallow bowl or a large skillet. This simple step makes dipping the tortillas significantly easier during assembly, ensuring an even coating without mess.

Next, let’s focus on the star of our filling: the chicken! While any cooked chicken will do, for the absolute best flavor and texture, I highly recommend using the chicken from my Chicken Tacos recipe. Here’s a brief overview of how it comes together:

raw chicken pieces covered with a dry rub made of many spices to dry marinate.

Start by generously rubbing an easy homemade Taco Seasoning into succulent chicken thighs. This dry marinade penetrates the meat, infusing it with layers of irresistible flavor.

three well seasoned chicken thighs frying in a large saute pan on the stove.

Then, sear the chicken thighs over medium-high heat until beautifully browned and cooked through. Alternatively, for a hands-off approach, you can slow-cook them to tender perfection. The goal is juicy, flavorful chicken that shreds easily.

cutting board with a pile of shredded chicken and two forks on the side that did the shredding.

Once cooked, shred the chicken using two forks or your preferred method. Then, add a generous drizzle of your delicious green enchilada sauce directly into the shredded chicken. This crucial step ensures the chicken itself is moist and bursting with flavor, integrating seamlessly into the overall taste profile of the enchiladas.

And just like that, your flavorful chicken filling is ready to go!

Now, let’s talk tortillas!

charred corn tortilla directly on burner over flame on a gas stove.

I cannot overstate how much I adore the flavor that charred corn tortillas bring to these enchiladas. That distinct smoky, slightly blackened char adds a depth of flavor that is truly unique and makes a world of difference. If you have a gas stove, simply place the corn tortillas directly over the flame for a few seconds per side until lightly charred and pliable. No gas stove? No problem at all! The recipe card provides clear instructions on how to warm your tortillas in the microwave. The crucial point is to warm them sufficiently so they become flexible and don’t crack or break when you roll your enchiladas. This prevents a soggy or crumbly texture and ensures a perfect roll every time.

top: charred tortillas in a tortilla warmer, bottom: charred tortillas in a ziplock bag.

Once your tortillas are perfectly charred or warmed, immediately transfer them to a tortilla warmer or simply seal them in a Ziploc bag. This allows them to steam each other, making them even more pliable and ensuring they stay warm and moist, preventing any dryness or breakage during assembly. This steaming step is key to achieving that perfect, rollable tortilla.

The final foundational element of this recipe is, of course, the cheese!

shredded Oaxaca cheese on a wood cutting board next to a box cheese grater.

Trust me when I say that grating your own cheese by hand makes a significant difference compared to using pre-shredded varieties. Store-bought shredded cheese often contains anti-caking agents that, while preventing clumping in the bag, can also hinder smooth melting in your casserole. Freshly shredded cheese melts into a wonderfully smooth, gooey blanket that perfectly complements the other flavors.

Now, it’s assembly line time! Get everything organized for efficiency: your stack of warm tortillas, the shallow dish of green sauce, the seasoned chicken mixture, your shredded Oaxaca cheese, and your baking pan. A well-organized workspace makes the process quick and enjoyable.

Take one warm tortilla and dip it fully into the green enchilada sauce, ensuring both sides are thoroughly coated. This step is crucial for flavor and moisture.

top: hand dipping a tortilla into sauce, bottom: coated tortilla in dish with a line of cooked chicken on top.

Carefully place the sauce-coated tortilla into your prepared baking dish. Spoon about two tablespoons of the flavorful chicken mixture down the center of the tortilla. Remember, resist the urge to overfill, as this can cause the tortilla to tear or the filling to spill out during rolling and baking.

Sprinkle a small amount of the shredded Oaxaca cheese over the chicken filling. This cheese inside the enchilada adds another layer of creamy goodness.

sauce coated tortilla in dish with chicken and cheese on top; bottom: several rolled unbaked enchiladas.

Roll up the tortilla snugly and place it seam-side down in the corner of your baking pan. Repeat this process with all remaining tortillas, chicken, and Oaxaca cheese until your pan is full. Arrange them closely together in the dish.

Once all the enchiladas are assembled, pour the remaining green enchilada sauce evenly over the top, ensuring every enchilada is generously coated. Finally, scatter the cubed Monterey Jack cheese over the entire casserole. You can certainly shred this cheese if you prefer, but I’m partial to the distinct pools of deliciously melted, roasty cheese that the cubing method creates.

Bake your enchiladas according to the recipe instructions, then, for a truly next-level experience, take a moment to broil the top. This brief, intense heat creates those coveted crispy, browned edges of cheese that are simply divine. It’s an optional step, but one I highly recommend for an extra layer of texture and flavor!

Voila! The result is a stunning casserole with crispy, cheesy, saucy, and deeply flavorful enchiladas. Each bite delivers a harmonious blend of smoky charred corn, tender chicken, tangy green sauce, and perfectly melted cheese. I’m utterly in love with this recipe, and I’m confident you will be too!

What to Serve with Green Chicken Enchiladas: Complete Your Feast

One of the true joys of Mexican and Tex-Mex cuisine lies in the incredible array of complementary sides and condiments. To elevate your green chicken enchilada experience, consider pairing them with some of these fantastic accompaniments:

  • 5 Minute Restaurant Style Salsa: This vibrant salsa tastes just like it came from your favorite Mexican restaurant. It’s perfect as a dip with tortilla chips or as a fresh, zesty topping for your enchiladas.
  • My Favorite Guacamole is EASY: Creamy, rich guacamole is always a welcome addition. A generous dollop of this alongside a spoonful of sour cream can truly transform any Mexican entrée.
  • Traditional Tejano Pinto Beans (Slow Cooker Mexican Beans): These tender pinto beans taste just like the authentic sides served at the best Tex-Mex establishments in Texas. Refried beans or seasoned black beans are also excellent choices.
  • Mexican Rice: Our recipe for Mexican rice is a personal favorite, tasting remarkably like restaurant-quality rice but with the freshness of homemade. It’s the quintessential side for enchiladas.
  • Better Than Chipotle Cilantro Lime Rice: If you love bright, zesty flavors, this cilantro lime rice is a fantastic option. Its fresh, aromatic profile perfectly balances the richness of the enchiladas.
  • Carol’s Legendary 7 Layer Bean Dip: While often served with chips, a scoop of this hearty, layered dip makes an amazing side dish, offering a medley of flavors and textures in one.
  • Mexican Cucumber Salad with Cilantro and Lime: For a lighter, refreshing counterpoint, this crisp cucumber salad with a zesty lime-cilantro dressing is an excellent choice to add some fresh vegetables to your meal.
  • Easy Horchata Recipe: Cool and creamy, horchata is a traditional Mexican drink that provides a sweet, comforting complement to spicy and savory dishes. It’s a must-try!

  • Mexican Hot Chocolate Cookies (Chocolate Snickerdoodles): If you prefer a chocolatey dessert with a hint of spice, these cinnamon-infused chocolate snickerdoodles are absolutely incredible after a rich meal.
  • Caldo Cantina from Epicurious: A hearty and flavorful soup that can be served before or alongside your enchiladas.

Storing Leftover Enchiladas: Keep the Flavor Fresh

If, by some miracle, you have any green chicken enchiladas left over (a rare occurrence in my household!), proper storage ensures they remain delicious for days. Once the casserole has cooled completely to room temperature, transfer any remaining enchiladas to an airtight container. If you have a substantial amount left, you can simply tightly cover the entire casserole dish with plastic wrap. These flavorful enchiladas will stay fresh and wonderful in the refrigerator for approximately 5-6 days, making them perfect for quick and easy meals throughout the week.

To reheat an entire casserole dish, allow it to sit on the counter for 15-20 minutes to take off the chill. Remove the plastic wrap, add about 2 tablespoons of water to any empty sections of the dish (this helps prevent the bottom from burning and keeps the enchiladas moist), then cover tightly with foil. Place the dish in a cold oven, set the temperature to 350°F (175°C), and bake until thoroughly warmed through, typically around 30 minutes. For individual servings, simply place your desired portion on a plate and microwave at 50% power for a few minutes, or until piping hot. The gentle heat of the microwave at a lower setting helps prevent the tortillas from becoming tough or dry.

Can You Freeze Enchiladas? Your Meal Prep Solution

Absolutely, you can freeze enchiladas! While they rarely last long enough to make it to my freezer, it’s an excellent option for meal prep or for doubling a recipe to ensure a delicious, ready-made dinner on a busy future night. You can prepare and freeze enchiladas before baking them, which is ideal for preserving their fresh taste and texture.

To freeze, assemble the enchiladas as directed in a freezer-safe container of your choice. Aluminum pans are particularly convenient for freezing and baking. Arrange them as if you were going to bake them immediately. Then, cover the dish exceptionally well with plastic wrap—double-wrapping is highly recommended to prevent freezer burn—followed by a layer of aluminum foil. Properly wrapped, your enchiladas will maintain their quality in the freezer for about 2-3 months.

When you’re ready to enjoy them, remove the container or dish from the freezer and let it sit on the counter for about 20 minutes to slightly thaw. Remove the lid, plastic wrap, and foil, then recover the dish tightly with a new piece of aluminum foil. Place the covered dish into a cold oven and set the temperature to 350°F (175°C). Since they are frozen, the cooking time will be roughly double that of fresh enchiladas. Bake them covered for approximately 45-50 minutes, then remove the foil and continue baking for another 15 minutes to allow the cheese to melt and become bubbly. For that irresistible crispy, browned cheese crust, broil for 2-3 minutes at the very end, keeping a close eye on them to prevent burning. For individual frozen servings, microwave at 50% power for several minutes, checking periodically, until thoroughly heated through.

Chicken Enchilada Frequently Asked Questions

What is the secret to good enchiladas?

The secret to truly outstanding enchiladas often feels personal, but there are fundamental rules that apply to any version you’re making. Firstly, it’s all about **flavor in every layer**. This means your filling must be delicious enough to stand alone, your tortillas should be charred or lightly fried for depth, and your sauce needs such rich flavor that you can’t resist tasting it with your finger. Even the cheese you choose needs to complement and hold its own against all the other vibrant flavors. Secondly, **good tortillas are key**. Charring, frying, or steaming your tortillas is essential not only for flavor but also to prevent them from becoming gummy during cooking or tearing as you roll. Thirdly, **don’t overfill them**! Too much filling is a recipe for torn tortillas and messy spills. Fourthly, invest in **good quality cheese**. While there are many styles and flavors, always grate your own fresh cheese, as it melts smoother and tastes better than pre-shredded options. Finally, a **flour tortilla tip**: If you opt for flour tortillas (corn are more traditional), use less sauce to avoid soggy enchiladas!

How long to bake chicken enchiladas?

Chicken enchiladas typically don’t require a long baking time because all the ingredients (chicken, sauce) are already cooked. A mere 30 minutes in a preheated oven is usually sufficient. The primary goal of baking is to ensure everything is thoroughly warmed through, the flavors have melded together beautifully, and most importantly, the cheese on top is perfectly melted and bubbly. For that irresistible golden, slightly blistered cheese crust, don’t skip the final broiling step!

Do you cover enchiladas when baking?

Yes, for the initial phase of baking, it’s best to cover your enchiladas with aluminum foil. This helps to trap moisture, ensuring the enchiladas stay tender and succulent as they heat through, preventing them from drying out. Cover them with foil for the first 20 minutes of baking. After this, remove the foil for the remaining 10 minutes to allow the cheese on top to melt beautifully and achieve a lovely golden hue. For those who, like me, adore crispy, browned edges of cheese, I highly recommend a quick 1-3 minute broil at the end, but always keep a watchful eye, as they can burn very quickly!

There are chicken enchiladas, and then there are THESE Chicken Enchiladas. The secret to this recipe is having flavor in every layer: Tender, flavorful chicken, wrapped up in charred, buttery corn tortillas, and then smothered in a tangy Green Enchilada Sauce made with roasted peppers and tomatillos. And of course, the final layer of two kinds of cheese that is crisped to perfection under the broiler, the hallmark of the best casserole. This is my new favorite recipe! Serve these with Mexican Rice and Tejano Pinto Beans.

Ingredients

  • 1 batch Homemade Green Enchilada Sauce, tap to view the recipe, OR see notes for a cheater recipe
  • 1 pound cooked chicken for Tacos
  • 15 oversized corn tortillas, 6-7 inches across
  • 10 ounces Oaxaca cheese, shredded
  • 8 ounces Monterey Jack cheese, cubed

To serve:

  • Pico de Gallo
  • cilantro
  • lime wedges
  • Mexican Crema, or sour cream
  • Tejano Pinto Beans
  • Mexican Rice

Instructions

  • Make the sauce: Prepare authentic Green Enchilada Sauce (tap for the recipe) or use the quick cheater sauce recipe detailed in the notes below. Both sauces are incredibly delicious. Pour the finished sauce into a shallow bowl, frying pan, or pie plate to make dipping easier.
  • Cook the chicken*: Follow the instructions for my Chicken Tacos recipe. This recipe calls for 1 and 1/2 pounds of raw chicken thighs, which will yield approximately 1 pound of cooked, shredded chicken – the perfect amount for these enchiladas. Shred the cooked chicken and place it in a bowl.
  • Flavor the chicken. Add about 1/2 cup of your prepared enchilada sauce to the shredded chicken and stir well to coat. This ensures every bite of chicken is moist and flavorful.
  • Prep the cheese: Shred 10 ounces of Oaxaca cheese.** Using a sharp knife, cut an 8-ounce block of Monterey Jack cheese into 3/4-inch cubes. (Alternatively, you can shred the Monterey Jack as well).
  • Preheat the oven to 375 degrees F (190°C).
  • Prepare the pan. Lightly spray the inside of a 9×13 inch casserole dish with nonstick cooking spray. Also, prepare a sheet of aluminum foil by spraying one side of it with nonstick spray; this will prevent the cheese from sticking later.
  • Prep the tortillas. If you have a gas stovetop, turn one burner to high heat.*** Place one corn tortilla directly onto the flame. Use tongs to flip it after about 10-20 seconds. Continue flipping as needed until the tortilla is warm, pliable, and lightly charred with blackened marks. Immediately transfer the charred tortilla to a tortilla warmer or a sealed Ziploc bag so it can steam. Repeat this process with all 15 tortillas. (I often char multiple tortillas simultaneously on 2-3 burners.)
  • Create an assembly line for efficiency: Arrange your warm tortillas, green sauce, seasoned chicken, and shredded Oaxaca cheese in a convenient order next to your prepared baking dish.
  • Assemble the enchiladas: Dip a warm tortilla into the enchilada sauce, ensuring both sides are fully coated. Place the sauced tortilla in the prepared casserole dish. Spoon about 2 tablespoons of the cooked chicken mixture down the center. Sprinkle with 1-2 tablespoons of the shredded Oaxaca cheese. Roll up the tortilla tightly and place it seam-side-down in the corner of the pan. Continue this process until all tortillas, chicken, and Oaxaca cheese are used.
  • Top with sauce. Once all enchiladas are assembled in the dish, pour any remaining green enchilada sauce evenly over the top.

(If using the homemade Green Enchilada Sauce, use all of the remaining sauce. If using the cheater sauce recipe, you might have extra; only add enough to cover the enchiladas about halfway up their sides).

  • Top with cheese. Evenly sprinkle the cubed Monterey Jack Cheese over the sauced enchiladas.
  • Cover the enchiladas with the prepared foil (sprayed side down) to prevent the cheese from sticking to it during baking.
  • Bake at 375°F (190°C) for 20 minutes with the foil cover. Then, remove the foil and continue baking for another 10 minutes, or until the cheese is melted and bubbly.
  • Broil (optional, but recommended!). For crispy, golden cheese edges, turn your oven’s broiler to high heat and move the oven rack to the top position. Broil the enchiladas for 1-3 minutes, watching constantly as they can burn very quickly!
  • Allow the finished enchiladas to rest for about 10 minutes before slicing and serving. This resting period allows the flavors to settle and makes serving easier.
  • Serve these delightful enchiladas with all your favorite fixings: fresh Pico de Gallo, chopped cilantro, zesty lime wedges, a dollop of sour cream or Mexican Crema, and, of course, a side of rich Tejano Pinto Beans and savory Mexican Rice.
  • Storage: Store any leftover enchiladas in an airtight container in the refrigerator for 3-5 days.
  • Freezing before baking: To prepare for freezing, assemble the enchiladas in an aluminum pan or a freezer-safe dish. Seal the pan tightly with plastic wrap (double-wrap for optimal protection) and then cover with aluminum foil. Enchiladas can be stored in the freezer for about 2-3 months.

To cook from frozen: Let the container rest on the counter for 20 minutes. Remove the plastic and foil, then recover with a new sheet of foil. Place in a cold oven and set the temperature to 350°F (175°C). Since they are frozen, the baking time will be roughly doubled. Cook covered for 45-50 minutes, then uncover and bake for an additional 15 minutes. For crispy edges, broil for 2 minutes at the end, watching carefully.

Notes

*Chicken: You can easily substitute 1 pound of shredded rotisserie chicken if you’re looking for a shortcut.

**Oaxaca Cheese: If Oaxaca cheese is unavailable, you can substitute it with an equal amount of Monterey Jack or Mozzarella cheese.

***No gas stovetop? If you don’t have a gas stovetop for charring, you can warm and soften your tortillas in the microwave. Take a small bowl and pour 2 tablespoons of oil into it. Use your fingers to rub the oil all over both sides of each corn tortilla until they glisten. Place the oiled tortillas on a plate, cover them with a damp paper towel, and microwave for one minute. Check for pliability; they should be soft enough to roll without cracking. If still stiff, continue heating in 20-second increments until soft, but be careful not to overheat to the point they start falling apart.

HACK RECIPE FOR EASY GREEN ENCHILADA SAUCE:

While I adore my authentic Green Enchilada Sauce recipe for its incredible depth of flavor, it does involve several steps. Enchiladas can be a bit of a process already, so here’s a fantastic hack recipe that’s super delicious and much quicker for a weeknight! My family loves both versions equally.

Ingredients:

  • 1 (15-ounce) tub of FRESH salsa verde (found in the refrigerated section, ensure tomatillos are the main ingredient)
  • 2 (7-ounce*) cans fire-roasted green chiles (choose hot or mild, according to your preference; I typically use mild)
  • Half a bunch of fresh cilantro
  • Juice from 1 lime (at least 2 tablespoons)
  • 1 cup Mexican crema (OR heavy cream, OR sour cream)
  • 2 teaspoons Better Than Bouillon Chicken Base
  • 1 teaspoon kosher salt

.

Instructions:

Combine the 15 ounces of fresh salsa verde, 2 large cans* of fire-roasted green chiles, half a bunch of cilantro, the juice from 1 lime, 1 cup of Mexican Crema, 2 teaspoons of Better Than Bouillon chicken base, and 1 teaspoon of kosher salt in a blender. Blend thoroughly for at least 1 minute until completely smooth. Taste the sauce and adjust seasonings as needed. If the sauce is too thick, add water 2 tablespoons at a time until it reaches a pourable consistency suitable for dipping tortillas.

Use this sauce as described in the main enchilada recipe. You might have some leftover, which is fantastic! Save any remaining sauce to serve as a dip with chips, a vibrant dressing for salads, or as a finishing sauce for grilled salmon, chicken, or beef. It’s incredibly versatile and delicious!

*Note on green chiles: Green chiles are commonly sold in 4-ounce cans or 7-ounce cans. For this recipe, you will need either FOUR 4-ounce cans or TWO 7-ounce cans.
