From San Francisco Hustle to Speedy Home Cooking

Life throws curveballs, and sometimes those curveballs come in the form of challenging city driving that reminds you of everything you’ve forgotten from driver’s ed. Recently, I tackled the legendary hills and tight streets of San Francisco, an experience that surprisingly became a metaphor for my weeknight cooking philosophy: sometimes, you just need things to be *easy*. After what felt like an Olympic parallel parking session with four determined women and a small crowd of onlookers, all I wanted was a simple, comforting meal that required zero stress.

That quest for simplicity led me back to a fantastic, easy dinner idea I’d almost forgotten: French Bread Pizza. It’s the kind of meal that saves the day when you’re short on time but still want something genuinely satisfying and homemade. No complex techniques, no hours in the kitchen – just pure, unadulterated comfort food that’s endlessly adaptable.

The Revelation of French Bread Pizza

I first encountered French Bread Pizza at a family gathering at my cousin Amber’s house. While my cousin Misty contributed a delicious batch of Cream Cheese Chicken Chili, Amber brilliantly whipped up several French Bread Pizzas to satisfy the hungry crowd of kids (and adults!). I honestly hadn’t thought much about French Bread Pizza before, assuming it was just a simplified pizza, but its incredible ease and customizable nature instantly won me over. A quick search online confirmed my suspicion: I had been living under a culinary rock! This simple concept is a beloved staple for a reason.

What makes French Bread Pizza a game-changer? It’s the perfect canvas for creativity! You can use almost any pizza topping combination you can imagine. Amber showcased this perfectly by preparing hers in three distinct ways:

  • Creamy Alfredo Chicken: Featuring a rich Alfredo sauce base, jarred minced garlic, succulent chicken, and a generous layer of cheese.
  • Fresh Pesto and Tomato: My personal favorite, boasting a vibrant pesto base, mozzarella, and juicy sliced tomatoes, finished with a sprinkle of fresh basil and Parmesan.
  • Classic Pepperoni: The dependable, kid-friendly favorite with pizza sauce, Italian seasoning, garlic powder, mozzarella, and plenty of pepperoni.

These pizzas are not just great for quick dinners; they make fantastic appetizers for parties, crowd-pleasing game day food, or an excellent way to stretch out another main dish like chili. Add a simple green salad, and you have a complete, balanced meal. I’m even planning to make this a new Halloween tradition – fun, delicious food that kids adore, without any fuss!

Golden brown French Bread Pizza with various toppings
Throw toppings (like pesto and tomato, Alfredo and chicken, or Pepperoni and cheese) on some French bread, bake for a few minutes and you’ve got an easy back to school dinner!

Ingredients

For the Tomato Pesto version:

  • 1 half loaf French bread, split horizontally

  • 1/3 cup pesto

  • 1/2 cup mozzarella

  • 1 medium tomato, sliced

  • 1 tablespoon basil, fresh, chopped (optional)

  • 1 tablespoon Parmesan cheese, shredded

For the Alfredo chicken version:

  • 1 half loaf French bread, split horizontally

  • 1/2 cup Alfredo sauce

  • 1 tablespoon minced garlic

  • 1/2 teaspoon Italian seasoning

  • 3/4 cup cooked chicken*, chopped (more or less)

  • 1/2 cup mozzarella, shredded

For the Pepperoni:

  • 1 half loaf French bread, split horizontally

  • 1/2 cup pizza sauce

  • 1/2 teaspoon Italian seasoning

  • 1/2 teaspoon garlic powder

  • 3/4 cup mozzarella cheese, shredded

  • 10-15 slices pepperoni

  • 2 tablespoons Parmesan cheese, shredded

Instructions

  • Preheat your oven to 350°F (175°C).
  • Carefully split your loaf of French bread in half horizontally, as if you’re preparing to make a very large sandwich.
  • Generously add the toppings for your chosen French Bread Pizza version (Alfredo chicken, pesto tomato, or pepperoni) following the ingredient order provided above. Feel free to unleash your creativity and use any other toppings you love – the sky’s the limit for delicious combinations!
  • Place the prepared French bread pizzas on a cookie sheet and bake for 14-15 minutes. If you notice the edges of the bread browning nicely but the cheese in the center isn’t quite golden, turn on your oven broiler and move the oven rack to the top position (closest to the heat source). Broil for approximately 1 minute, or until the cheese begins to bubble and brown. Be sure to keep a close eye on it, as broilers work very quickly!
  • Carefully remove the pizzas from the oven, slice them with a sharp serrated knife, and serve hot. For a complete and satisfying meal, pair your French Bread Pizza with a large, fresh green salad.

Notes

These topping suggestions are merely a starting point. Any combination of your favorite pizza toppings will work wonderfully! Think about adding sliced mushrooms, bell peppers, olives, crumbled sausage, or even a drizzle of balsamic glaze after baking.

*For the chicken version, I highly recommend using a store-bought rotisserie chicken for ultimate convenience, but canned chicken or any leftover cooked chicken you have on hand will also be delicious. Shredding or dicing it makes it easy to distribute evenly.

Storing and reheating French bread pizza:

To keep your leftover French Bread Pizza fresh and flavorful, cover it tightly to prevent it from drying out. A sealed leftover dish or a zip-top bag are excellent choices, but plastic wrap or aluminum foil also work well. For the crispiest, most satisfying results, reheat your pizza in the oven at 350°F (175°C) for about 10 minutes, or in an air fryer at the same temperature for likely less time (monitor closely!). While the microwave is a quick option if you’re in a hurry and don’t mind a softer crust, the oven or air fryer will deliver that desirable crunch.

You can also freeze French Bread Pizza for future easy meals. After baking, allow it to cool completely. Then, wrap individual slices or halves tightly in plastic wrap, followed by aluminum foil, or place them in a freezer-safe bag to prevent freezer burn and maintain freshness. When ready to enjoy, thaw the pizza in the refrigerator overnight before reheating in the oven or air fryer for best texture. Of course, if time is of the essence, the microwave is always an option!
