- 1 tablespoon vinegar
- 2 teaspoons almond extract
For the frosting:
- 1/2 cup coconut oil
- 1/4 cup Unsweetened Almond Breeze Almondmilk Coconutmilk
- 3 & 1/2 cups powdered sugar
- 1/4 teaspoon salt
- 1/8 teaspoon coconut extract, optional
- Fresh strawberries, to garnish
Instructions

For the Cake: Preheat oven to 350 degrees F (175 C). Lightly grease a 9×13 inch baking pan with coconut oil to prevent sticking.

In a small saucepan, combine the coconut oil and Almondmilk Coconutmilk. Place over high heat and bring the mixture to a gentle boil, stirring occasionally to ensure the coconut oil fully melts and integrates.

While the liquid mixture heats, whisk together the dry ingredients in a large mixing bowl: flour (remember to spoon and level), sugar, baking soda, and salt. Once the oil-almondmilk mixture just begins to boil, remove it from the heat and carefully pour it into the dry ingredients. Turn your mixer on to medium speed and beat for at least one minute, scraping down the sides of the bowl as needed. (There’s no need to wash the saucepan yet; you’ll reuse it for the frosting!)
