Why This Blackberry Ricotta Pizza is a Must-Try

This pizza stands out for several reasons. First, it’s incredibly adaptable. Whether you’re a seasoned chef or a beginner in the kitchen, you’ll find this recipe straightforward and rewarding. Second, the flavor combination is truly unique. Many might be hesitant about fruit on pizza, but blackberries on pizza, especially with creamy cheeses and fresh herbs, create a surprisingly sophisticated and balanced taste. The tartness of the blackberries cuts through the richness of the ricotta, while the basil adds a peppery, fragrant note that ties everything together. It’s truly a gourmet pizza experience you can create at home.

Imagine yourself on a warm evening, perhaps after a long day enjoying the outdoors. The last thing you want is a complicated dinner. This pizza comes together quickly, allowing you more time to relax and savor the simple joys of summer. It’s also a fantastic way to utilize fresh seasonal blackberries, turning them into a savory dish rather than just desserts.

Crafting Your Blackberry Ricotta Pizza: A Step-by-Step Guide

The journey to creating this delicious pizza began with inspiration from my best friend, Sarah, who shared a captivating recipe idea for a Blackberry, Basil, and Ricotta Pizza. Initially, I admit, I was a bit skeptical. Blackberries on pizza? It sounded unconventional. However, with an abundance of freshly picked blackberries on hand – after countless pies and even Blackberry Balsamic Glazed Chicken – it felt like a culinary adventure waiting to happen. And what an adventure it turned out to be!

We even attempted to make our own ricotta from scratch for that extra homemade touch. While my inner “food charlatan” got a bit distracted, leading to a minor curdled milk incident (a friendly reminder that sometimes even seasoned cooks have off days!), a quick trip to the store for quality ricotta saved the day. The result was truly amazing. This pizza quickly became a household favorite, proving that sometimes the most unexpected combinations yield the greatest rewards.

Tips for the Perfect Blackberry Ricotta Pizza

  • The Dough is Key: A good pizza starts with great dough. I highly recommend my go-to pizza dough recipe, which is incredibly reliable and easy to work with. You can find more details and instructions on my Cherry Tomato and Goat Cheese Pizza post. If you’re short on time, a good quality store-bought pizza dough will also work wonders.
  • Smashed vs. Whole Blackberries: Using both smashed and whole blackberries adds layers of flavor and texture. The smashed berries create a subtle, fruity base, while the whole berries offer delightful bursts of tartness after baking.
  • Don’t Skip the Basil: Fresh basil is non-negotiable for this recipe. Its fragrant, peppery notes are crucial for balancing the sweetness of the berries and the richness of the cheese. Add it immediately after the pizza comes out of the oven to preserve its vibrant flavor and color.
  • Season Generously: This pizza thrives on a good amount of salt and freshly ground pepper. Initially, we found it needed a bit more savory depth, and seasoning generously is the trick. I even added green onions in subsequent batches, which provides a lovely mild oniony kick that complements the other flavors beautifully.
  • Achieving a Crispy Crust: If you have a pizza stone, preheating it in the oven is essential for a perfectly crispy bottom crust. If not, a sturdy baking sheet will do; just make sure your oven is adequately preheated to 450°F (230°C).

Blackberry Ricotta Pizza with Basil from The Food Charlatan
A simple ricotta pizza for lazy summer nights! It is mostly cheese and blackberries, which is a fabulous combo. Add some basil on top to make things a little more sophisticated, and you are on your way to an easy dinner the whole family will love!

Ingredients

  • One pizza dough recipe, to make one 12-inch pizza*
  • 1 tablespoon olive oil
  • 1/2 cup blackberries, fresh, smashed
  • 1 cup Parmesan, shredded
  • 1 cup swiss cheese , or mozzarella, shredded
  • 3/4 cup ricotta
  • 1/2 cup blackberries, whole
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon salt, more to taste
  • pepper , ground, to taste – I like lots
  • 2-3 tablespoons basil, fresh, chopped

Instructions

  • Preheat your oven to 450 degrees F (230°C). Place your pizza stone in the oven if you have one, allowing it to heat up thoroughly.
  • Roll out your pizza dough on a lightly floured sheet of parchment paper to approximately 12 inches in diameter. (If you’re not using a pizza stone, transfer the dough to a baking sheet at this stage.)
  • Drizzle 1 tablespoon of olive oil evenly over the surface of the dough, using your fingers or a pastry brush to coat well, paying special attention to the edges for a golden crust.
  • In a small bowl, gently mash half a cup of fresh blackberries with a fork. It doesn’t need to be perfectly smooth; a rustic texture is great. Using the fork or a slotted spoon, ladle the blackberry pulp onto the pizza dough, spreading it around as you would traditional pizza sauce. (The remaining juice is not needed for the pizza, but it makes a delicious drink!)
  • Generously top the smashed berries with 1 cup of shredded Parmesan cheese and 1 cup of shredded Swiss or mozzarella cheese, ensuring the crust edges are also covered.
  • Using a spoon, dollop the 3/4 cup of ricotta cheese evenly over the pizza. Again, perfection isn’t necessary; rustic dollops look great.
  • Scatter the remaining 1/2 cup of whole fresh blackberries and the chopped green onions over the cheese and ricotta.
  • Season with 1/2 teaspoon of salt and a generous amount of freshly ground black pepper to taste.
  • Once the oven is hot, carefully transfer the pizza (still on its parchment paper) to the preheated pizza stone or baking sheet in the oven.
  • Bake for approximately 8-10 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned. For an extra crispy top, you can briefly broil it for about a minute, watching carefully to prevent burning.
  • Remove the pizza from the oven and immediately sprinkle with the fresh chopped basil. Slice, serve warm, and enjoy your gourmet summer pizza!

Variations and Serving Suggestions

While this Blackberry Ricotta Pizza is perfect as is, feel free to get creative with your toppings! Consider adding a drizzle of balsamic glaze after baking for an extra layer of sweet-tart complexity. A sprinkle of crumbled goat cheese could also add a tangy counterpoint to the rich ricotta. If you’re looking for a protein boost, thinly sliced prosciutto or pancetta would beautifully complement the sweet berries and creamy cheese.

This pizza makes a fantastic light dinner, especially when paired with a fresh, crisp green salad with a simple vinaigrette. It’s also an impressive appetizer for summer gatherings or a unique brunch item. Serve it with a chilled glass of rosé or a light-bodied white wine to complete the experience.

Make it Your Own: Customizing Your Pizza

One of the best parts of homemade pizza is the ability to customize it to your exact preferences. Don’t have Swiss cheese? Mozzarella or even a blend of Italian cheeses would work wonderfully. Want a bit more spice? A tiny pinch of red pepper flakes could add a subtle kick. The key is to have fun and experiment with what you have on hand or what flavors you love.

This recipe provides a flexible framework for a gourmet pizza experience at home. It’s perfect for busy weeknights, weekend gatherings, or simply when you want to treat yourself to something extraordinary. Embrace the unexpected flavors of summer and make this Blackberry Ricotta Pizza a staple in your culinary repertoire.
