Tropical Mango Coconut Granola

Ingredients
Dry Ingredients:
- 8 cups rolled oats (old-fashioned, not instant)
- 1 & 1/2 cups wheat germ
- 1 & 1/2 cups oat bran
- 2 (6-oz) cans Blue Diamond Toasted Coconut Almonds
- 1 cup macadamia nuts, approximately 2 of the 2.25 oz packages, roughly chopped if very large
Wet Ingredients & Add-ins:
- 1 cup coconut oil
- 1/2 cup maple syrup, ensure it’s pure maple syrup for the best flavor
- 1/2 cup honey
- 1 teaspoon kosher salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground allspice
- 2 & 1/2 teaspoons ground cinnamon
- 1 tablespoon vanilla extract, or high-quality vanilla bean paste for richer flavor
- 1 lime, freshly juiced
- 1 & 1/2 cups dried mango, chopped into small pieces
- 1 & 1/2 cups dried apricots, large ones halved or quartered
Instructions

Preheat your oven to 325 degrees F (160 degrees C).

In your largest mixing bowl, combine the rolled oats, wheat germ, oat bran, Blue Diamond Toasted Coconut Almonds, and macadamia nuts. Stir well to ensure everything is evenly distributed.

In a medium saucepan, combine the coconut oil, maple syrup, honey, kosher salt, ground ginger, ground cardamom, ground allspice, and ground cinnamon.

Bring the mixture in the saucepan to a gentle boil over medium heat, stirring occasionally. Once boiling, remove it from the heat. Allow it to cool for about a minute before stirring in the vanilla extract (adding it too soon can cause some of the flavor to dissipate). Then, stir in the fresh lime juice.

Gradually pour the warm liquid mixture over the dry oat and nut mixture in the large bowl. Stir continuously, adding the liquid in a few increments, until all the dry ingredients are thoroughly and evenly coated.

Line 2 large rimmed baking sheets (or one large and two smaller ones, as needed) with foil or parchment paper. Lightly spray the foil/parchment with nonstick cooking spray to prevent sticking. Divide the granola mixture evenly between the prepared pans and spread it out into a single, thin layer.

Bake at 325 degrees F for approximately 12 minutes. Then, remove the pans from the oven, give the granola a good stir to redistribute it, and return to the oven for another 10-12 minutes, or until the granola is just beginning to turn golden brown and smell fragrant. If you’re baking multiple pans simultaneously, rotate their positions (top to bottom, front to back) when stirring to ensure even baking.

Once baked, remove the granola from the oven and allow it to cool completely on the baking sheets. This step is crucial for achieving that irresistible crunchy texture and for the clusters to form. Once cool, sprinkle the chopped dried mango and dried apricots over the granola and mix them in.
