Instructions

Preheat the oven to 400 degrees F (200°C).

Layer the bacon on a metal cooling rack set on top of a large cookie sheet. Bake for 10 minutes, or until about halfway cooked.* Remove from oven and let cool slightly. Do not turn the oven off.

Roll out the thawed sheet of puff pastry onto a lightly floured surface. Using a rolling pin, gently roll it out a couple of times to smooth it. Use a pizza cutter or sharp knife to slice the dough into as many strips as you have bacon – for thick-cut bacon, this was typically 10 strips, each about an inch wide.

Once the partially cooked bacon is cool enough to handle, take one strip and fold it in half lengthwise. Fold a strip of puff pastry dough in half lengthwise. Now, carefully wrap the dough in a spiral around the folded bacon. Twist the bacon and dough together to create an attractive spiral, then secure the ends with toothpicks to prevent unraveling during baking. Refer to the photos for a visual guide!
