Debunking the “Gluten in Potatoes” Myth: Understanding Gummy Mashed Potatoes
Recently, I caught a cooking segment where a chef made a common mistake, claiming that over-beating potatoes “releases gluten.” While the host was right to ask about the risk of gummy potatoes, the explanation was a little off-base. Let’s set the record straight: potatoes do not contain gluten. Gluten is a protein complex found in grains like wheat, barley, and rye. You can’t release gluten from something that doesn’t have it!

So, what actually happens when you over-beat your mashed potatoes, leading to that undesirable gluey or gummy texture? Potatoes are primarily composed of starch. When you mash potatoes, you’re breaking down their cell walls. The more you mash or beat them, especially with an electric mixer, the more these starch molecules are released. These released starch molecules then bind together, creating a sticky, glue-like consistency. It’s not gluten, but rather starch gelatinization gone too far!
The key to achieving perfectly light and fluffy mashed potatoes, whether you’re using a manual masher or an electric mixer, is to avoid overworking them. Mash just until smooth, or to your desired consistency. A few lumps are often preferable to a gummy mess! This recipe, with its gentle slow cooking process, helps ensure your potatoes are tender and ready for a light mash, minimizing the risk of over-processing.

Why Buttermilk is the Secret Ingredient for Superior Mashed Potatoes
These Slow Cooker Buttermilk Mashed Potatoes are 100% pure deliciousness, and the buttermilk is a key player in that claim. Adding buttermilk brings a subtle tanginess and an incredible depth of flavor that elevates these potatoes far beyond your standard mash. The slight acidity of the buttermilk also contributes to a lighter, more tender texture, creating a truly irresistible side dish. It’s a simple addition that makes a huge difference, transforming ordinary mashed potatoes into something extraordinary.
One of the best features of this recipe is how incredibly easy it is. Forget the lengthy process of peeling, cubing, boiling a huge pot of water, and then carefully draining hot potatoes. With the slow cooker method, all you literally have to do is chop up the potatoes, toss them into your crock pot with butter and seasonings, pour over the buttermilk, and let your appliance do all the heavy lifting. This hands-off approach makes these easy mashed potatoes perfect for holidays like Thanksgiving or Christmas, when oven and stovetop space is at a premium. You can set them early in the day and have them ready to mash just before serving, staying warm until dinner is on the table.

Choosing Your Potatoes and Customizing Flavors
For this recipe, I’ve used red potatoes, and I skipped peeling them for maximum convenience and a rustic touch. The skins on red potatoes are thin and tender, adding a lovely color and additional nutrients without affecting the creamy texture negatively. However, you can absolutely peel them if you prefer a perfectly smooth, white mash. Yukon Gold potatoes are another fantastic choice for this recipe; their naturally buttery flavor and creamy texture make them ideal for mashing, and like red potatoes, their thin skins mean you often don’t need to peel them. If you opt for Russet potatoes (baking potatoes), I highly recommend peeling them first, as their skins are thicker and can become tough when mashed.
Beyond the potatoes themselves, the blend of seasonings in this recipe is crucial. I’ve used my tried-and-true combination of salt, pepper, seasoning salt, parsley, minced garlic, onion powder, and a hint of cayenne pepper for a subtle kick. A touch of lemon pepper is optional but adds a bright, zesty note that complements the tang of the buttermilk beautifully. Feel free to adjust these spices to your family’s preferences. Fresh herbs like chives or dill can also be stirred in at the end for an extra layer of freshness. This adaptable recipe ensures you can create the best mashed potatoes tailored to your taste!
Make-Ahead Mashed Potatoes: Your Holiday Secret Weapon
The ability to make these mashed potatoes ahead of time and keep them warm in the slow cooker is truly a lifesaver, especially during busy holiday preparations. Imagine your Thanksgiving or Christmas dinner unfolding smoothly, with one less last-minute task to juggle. You can mash the potatoes a couple of hours before serving and keep them on the “warm” setting. To prevent them from drying out or getting too much condensation, simply place a few paper towels under the lid of your slow cooker. This trick absorbs excess moisture, ensuring your potatoes remain fluffy and delicious.
This method not only saves time but also guarantees a consistent texture and temperature for your side dish. No more frantically whisking potatoes while the turkey gets cold! These make-ahead mashed potatoes are a testament to the versatility and convenience of slow cooking, proving that delicious results don’t have to come with stress.
Slow Cooker Buttermilk Mashed Potatoes

10 Servings
Ingredients
- 5 pounds red potatoes
- 6 tablespoons butter
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 teaspoon seasoning salt
- 1 & 1/2 teaspoons parsley
- 4 teaspoons minced garlic, I used the kind in the jar
- 1/4 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon lemon pepper, optional
- 1 & 1/2 cups buttermilk
- 1/3 cup sour cream
- 1/2 cup buttermilk, plus more to taste
- parsley, fresh, chopped
- salt and pepper , to taste
- 2 tablespoons butter
Instructions
-
Wash and scrub potatoes thoroughly. Cut into 1-2 inch chunks. (Smaller chunks will cook faster, so adjust size based on desired cooking time.)
-
Rub the inside of a large crock pot with a small amount of the 6 tablespoons of butter. Chop the remaining butter into chunks and set aside.
-
Add the chopped potatoes and butter chunks to the crock pot.
-
Sprinkle with salt, pepper, seasoning salt, dried parsley, minced garlic, onion powder, cayenne pepper, and optional lemon pepper.
-
Pour 1 and 1/2 cups buttermilk over the potatoes and stir gently to combine.
-
Cook on high for 3 hours, or on low for 7 hours. Potatoes are done when a fork slides through them easily, indicating they are very tender. If not tender, continue cooking for another 30 minutes at a time, checking frequently. Be careful not to overcook, as they can start to brown on the bottom. Older crock pots may require longer cooking times.
-
Once tender, mash the potatoes directly in the crock pot. You can use a traditional potato masher for a rustic texture or an electric mixer for a smoother consistency. Remember the earlier discussion: mash just until smooth to avoid a gummy texture (this is due to starch release, not gluten).
-
The mixture might appear liquidy at first, but the potatoes will absorb the liquid as you mash and as they sit.
-
Stir in the sour cream and gradually add the remaining 1/2 cup of buttermilk, or more, until you reach your desired creamy consistency and tangy flavor.
-
Finish by stirring in the final 2 tablespoons of butter and season with additional salt and pepper to taste. Garnish with fresh chopped parsley if desired.
-
If preparing in advance, keep the mashed potatoes in the slow cooker on the warm setting for up to 2 hours. To prevent condensation from making the potatoes watery, place a few paper towels underneath the lid to absorb moisture.
