Zesty Lemon Strawberry Shortcake: A Bright & Easy Summer Dessert
There’s something truly magical about the combination of sweet, ripe strawberries and bright, zesty lemon. This Lemon Strawberry Shortcake recipe brings together these two beloved flavors in a way that is both incredibly delicious and surprisingly simple to make. It’s a classic dessert reimagined with a vibrant citrus twist that delivers an amazing tartness, perfectly balancing the inherent sweetness of the berries and the rich whipped cream. Imagine fluffy, tender shortcake, bursting with fresh lemon zest, piled high with juicy macerated strawberries, and crowned with a dollop of dreamy lemon-infused whipped cream. It’s the ultimate fresh spring or summer treat, offering a burst of flavor that will leave everyone craving more.

Life, much like baking, is full of unexpected twists and turns. I vividly remember a time when my then-three-year-old, Charlotte, was navigating her “terrible twos” and early “threes” with dramatic flair. Typically, if a time-out was in order, I’d lead her to her room. But then the tables turned: she’d beat me to it, dramatically slamming the door in my face. Not dramatic at all, right?

One particular day, I was starting to bake cookies and asked if she wanted to help. Her response? A resounding NO. To cookies! To mother-daughter bonding time! I confess, I was bewildered. What was happening? I felt like I needed a manual – or perhaps just a very strong cup of coffee.

Fast forward to 2020: Charlotte, now nine, has blossomed into an amazing baker and absolutely adores spending time in the kitchen. She has a real sweet tooth, and unlike her younger self, she never says no to cookies these days. In fact, she can confidently tackle many basic recipes on her own. It’s comforting to know that I didn’t go too wrong, after all. These moments, like the journey of learning to bake, remind us that growth and change are a beautiful part of life – and sometimes, all it takes is a delicious dessert to bring everyone back to the kitchen table.

Crafting the Perfect Lemon Strawberry Shortcake
The pairing of strawberry and lemon is truly a match made in heaven, and it feels completely natural to incorporate this dynamic duo into a shortcake. Especially when I have an abundance of lemons stubbornly hanging on my backyard tree – seriously, it’s July, I’m picking peaches and plums, yet my lemon tree is still convinced the citrus party is in full swing!
The Secret to Effortless Shortcake: No Butter, Just Brilliance

And I’m certainly not complaining about the extra lemons! There can never be enough, especially when it comes to enhancing a beautiful Strawberry Lemon Shortcake. What I adore most about this particular recipe is its incredible simplicity. Unlike traditional shortcake recipes that often call for laboriously cutting cold butter into flour, this recipe omits butter entirely, making the process much faster and fuss-free. All you need to do is combine the dry ingredients, then gently stir in some heavy cream and fresh lemon juice with a fork. This creates a soft, pliable dough that you simply spread into a pan. It’s truly “easy peasy” lemon squeezy!
Pan-Baked Perfection: Soft, Tender, and Speedy

Another brilliant shortcut in this recipe is baking the shortcake as a single unit in a pan, rather than rolling out dough and cutting individual biscuits, or dropping spoonfuls onto a baking sheet. This method drastically cuts down on prep time and creates a consistently soft and tender shortcake base. If you prefer a more crumbly or sturdy shortcake, this might not be the recipe for you, but for those who appreciate a light, melt-in-your-mouth texture, this pan-baked approach is a game-changer. Once baked, you simply cut it into servings, and then split each piece horizontally, ready for layering with your delicious toppings.

The Star Topping: Zesty Lemon Whipped Cream
And did I mention the lemon whipped cream? Oh, this isn’t just any whipped cream; it’s lemon-infused whipped cream. The subtle tang and vibrant aroma of fresh lemon zest and juice folded into light, airy cream elevate this dessert to new heights. It provides a refreshing counterpoint to the sweet strawberries and tender shortcake. If you’re pressed for time or prefer a more classic taste, you can always use a normal whipped cream, but I highly encourage you to try the lemon version. It truly makes this shortcake sing, preparing you for any festive gathering, be it a Fourth of July BBQ or a casual Sunday brunch. Get ready to impress!

When it comes to citrus, I don’t hold back. Zest that lemon with gusto! You can see from the pictures that I believe in generous lemon additions, especially when it comes to the strawberries. I’ve often said, “If I’m not sweating, you haven’t put in enough lemon!” This bold approach ensures that the lemon flavor really shines through, providing that incredible fresh zing that makes this dessert so memorable. The combination of strawberries and lemon zest are truly BFFs – we see it in refreshing lemonade, so why not on a delicious shortcake? In fact, I can’t think of many strawberry-based dishes that wouldn’t benefit from a little lemon to sparkle up the flavor. Give it a try, you won’t regret it!

The lemon in this Lemon Strawberry Shortcake adds so much amazing tartness to this delicious classic dessert! Nothing provides more fresh spring zing than lemon zest with sweet strawberries on crumbly morsels of shortcake, all with fresh whipped cream on top. I LOVE the mix of sweet and citrus. Tender shortcake is ready FAST because they are baked in a pan and not individually.
Ingredients
For the strawberry topping:
- 4 cups strawberries, hulled and sliced
- 1/2 cup sugar
- 1-3 teaspoons lemon zest
For the shortcake:
- 2 cups all purpose flour, spooned and leveled
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest from 1 lemon
- 1 & 1/4 cups heavy cream
- 1/4 cup lemon juice, fresh
For the Lemon Whipped Cream:
- 2 cups heavy whipping cream, cold
- 1/4 cup granulated sugar
- 2 tablespoons lemon zest
- 4 teaspoons lemon juice, fresh
Instructions
- Preheat your oven to 400°F (200°C). For best results with whipped cream, chill your stand mixer bowl or another large mixing bowl and the beaters in the fridge or freezer if space allows.
- In a medium bowl, gently combine the sliced strawberries with 1/2 cup sugar and 1 teaspoon (or more, to taste) lemon zest. Mix well and place in the refrigerator to macerate while you prepare the shortcake.
- In a separate medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, salt, and zest from 1 lemon. Use a fork to gradually stir in the 1 & 1/4 cups heavy cream. Be careful not to overmix. While there are still a few flour-y spots remaining, add the 1/4 cup fresh lemon juice. Continue to combine with just a few turns until the dough barely comes together.
- Lightly grease an 8×8 inch (20×20 cm) baking dish with nonstick spray. Evenly spread the shortcake batter into the prepared pan.
- Bake for approximately 18-20 minutes at 400°F (200°C), or until the edges are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes.
- Carefully lift the shortcake from the pan and transfer it to a wire rack to cool further.
- Once sufficiently cooled, cut the shortcake into 6 equal pieces. Then, using a serrated knife, split each piece horizontally to create two layers. (For a more traditional look, you can use a biscuit cutter to create round shortcakes if preferred).
- Prepare the lemon whipped cream: Retrieve your chilled mixing bowl from the fridge. Add the 2 cups of cold heavy cream and beat on high speed until it starts to thicken. Gradually add in the 1/4 cup granulated sugar, 2 tablespoons lemon zest, and 4 teaspoons lemon juice. Continue beating on high until stiff peaks form.
- To assemble each serving, place the bottom half of a shortcake on a plate. Top generously with the macerated strawberry mixture, followed by a dollop of the lemon whipped cream. Place the top half of the shortcake on top, and finish with another swirl of lemon whipped cream and a few extra strawberries, if desired. Enjoy immediately!
