The Simple Joys of Family and Food

Life often delivers its greatest joys in the simplest moments, sometimes accompanied by unexpected laughter. Just last weekend, my kids, Charlotte and Truman, had the pleasure of their great-grandparents visiting. Nana, at 82, bravely took on the task of reading a children’s Star Wars book to them. Now, my children are absolute fanatics when it comes to Star Wars, a universe Nana admits she’s not too familiar with. The reading session turned into an impromptu pronunciation lesson, with Charlotte meticulously correcting Nana’s charmingly heavy Minnesotan accent. “Nana, it’s Princess Leia, not Lia!” she’d insist, every single time.

Note Bumpa is asleep, as usual. Even during lively Star Wars readings, some things remain constant!

Listening to a “Star Wars virgin” navigate the galaxy with a Minnesotan lilt was pure comedy gold. I literally had to escape to the kitchen to stifle my laughter, while Eric, ever the archivist, covertly captured a six-minute video of the entire endearing exchange. This is, after all, the same Nana who famously pronounces “chimichanga” as “Chickamunga.” These are the cherished family moments that remind us to appreciate simplicity and joy, much like the simple pleasure of a homemade fudge pop.

From Seattle’s Rich Hot Chocolate to Melty Fudge Pop Bliss

A few weeks prior, Eric and I explored Seattle, and a must-visit spot on our list was a highly recommended chocolate shop in Pike’s Place Market, famous for its “European” hot chocolate. We were curious, so we sought it out. Upon ordering, I was initially disappointed to discover it was only served in a small 4-ounce cup. I thought, “Surely I’ll need two!” But oh, how wrong I was. Eric and I shared just one, and even then, we could barely finish it. It wasn’t just hot chocolate; it was an experience. Imagine drinking pure, rich, melted chocolate – that’s precisely what it was like. If you ever find yourself in Seattle, you absolutely have to try it for an unparalleled chocolate indulgence.

That incredibly rich, melted chocolate experience in Seattle was truly inspiring. And now, I’ve found a way to recreate that fudgy, intense chocolate goodness in a refreshing, summer-friendly format: these 3-Ingredient Fudge Pops. There’s something magical about savoring them just as they start to melt, transforming into a divine, liquid chocolate treat that rivals any gourmet hot chocolate. The very thought of drinking hot cocoa in the summer heat makes me cringe, but a slightly melty fudge pop? Pure bliss! (Though, to be fair, Seattle was rainy and cold, making hot chocolate perfectly appropriate there.) These pops capture that luxurious chocolate flavor in a way that’s perfectly suited for warmer weather, making them an ideal indulgence for any chocolate lover.

Serving 3-Ingredient Fudge Pops - A delightful and easy frozen dessert

The Simple Trio: Key Ingredients for Perfect Fudge Pops

The beauty of these creamy, dairy-free fudge pops lies in their simplicity. You only need three core ingredients to achieve that rich, satisfying chocolate flavor and perfect frozen texture. Let’s break down why each component is essential:

1. Instant Chocolate Pudding

This is the star that provides the deep chocolate flavor and helps achieve the desired consistency without needing to cook a custard base from scratch. Instant pudding mixes are formulated to thicken quickly when combined with liquid, making them ideal for a no-fuss recipe like this. Be sure to use a good quality instant chocolate pudding mix for the best flavor. While the mixture won’t set as firmly as traditional pudding with almond milk (more on that below), it provides the essential flavor and body for freezing into perfect fudge pops.

2. Sugar

Sugar is crucial for balancing the intensity of the chocolate and ensuring a palatable sweetness. It also plays a role in the texture of frozen treats, helping to keep them from becoming too icy. The amount used in this recipe creates a perfectly sweet yet not overpowering popsicle, allowing the rich chocolate flavor to shine through.

3. Cold Almondmilk (Unsweetened Almond Breeze Almondmilk Coconutmilk recommended)

(Apparently I’m the worst pudding-pourer in the world, but the taste is all that matters!)

The choice of liquid is what makes these fudge pops dairy-free and wonderfully inclusive. Unsweetened Almond Breeze Almondmilk Coconutmilk is an excellent choice for its creamy texture and neutral flavor, allowing the chocolate to be the dominant note. Using cold almond milk is key as it helps the pudding mixture start to thicken more effectively during mixing. This recipe is a fantastic option for those avoiding dairy, whether due to allergies, intolerances, or personal preference. The almond milk provides the necessary liquid without compromising on taste or the luxurious creaminess you expect from a fudge pop.

Mixing the 3-Ingredient Fudge Pop mixture - Preparing for a dairy-free treat

Dairy-Free Delight: The Magic of Almond Milk

One of the most appealing aspects of this recipe is its dairy-free nature, making it accessible to a wider audience. I have a friend who recently discovered a milk allergy, and finding delicious, easy-to-make dairy-free treats can sometimes be a challenge. Thankfully, with the widespread availability and versatility of almond milk, it’s easier than ever to enjoy classic desserts like these fudge pops without any dairy. Almond milk provides a light, refreshing base that beautifully complements the chocolate, creating a pop that’s both indulgent and guilt-free for those with dietary restrictions.

It’s important to note, however, that while almond milk works perfectly for freezing into pops, it won’t allow instant pudding to set into a traditional spoonable pudding consistency. Instant pudding relies on the specific proteins in dairy milk to properly gel and thicken. So, if you happen to have any leftover mixture after filling your molds, it will remain a delicious, thick chocolate liquid. But hey, if you’re anything like me and wouldn’t mind pouring that unset chocolate goodness over some Oreos and eating it like cereal, then we’re definitely going to be great friends!

3 Ingredient Fudge Pops from The Food Charlatan
These super chocolate-y fudge pops are made from 3 simple ingredients: chocolate pudding, sugar, and almondmilk. They have the perfect consistency. An easy summer treat, and something the kids can help with!

Ingredients

  • 1 package instant chocolate pudding, 6 oz
  • 1/4 cup sugar
  • 3 & 1/2 cups Unsweetened Almond Breeze Almondmilk Coconutmilk, COLD

Instructions

  • In a large bowl or stand mixer, beat together all the ingredients for about 2 minutes. Be sure to scrape the sides and bottom of the bowl thoroughly to ensure everything is well combined. The mixture will thicken somewhat, but it won’t achieve the ultra-thick consistency of regular instant pudding made with dairy milk.
  • Carefully pour the creamy chocolate mixture into your chosen pop molds. Fill them to just below the brim to allow for expansion during freezing.
  • Freeze the molds for about an hour. After this initial freeze, if your molds don’t come with built-in sticks, gently push wooden popsicle sticks into the partially frozen mixture. This timing ensures the sticks stand upright and are centered.
  • Continue to freeze for another 6-8 hours, or until the fudge pops are completely solid and firm. For the best texture, an overnight freeze is often ideal.
  • Once frozen, enjoy your delicious fudge pops! For an extra touch of relaxation, eat them outside, perhaps sitting on a porch swing, letting the summer breeze enhance the experience.

Notes

If you have leftover pop mixture, just a heads up that it won’t set up into pudding due to the almond milk.

Tips for the Best Dairy-Free Fudge Pops

  • Use Cold Almond Milk: Starting with chilled almond milk helps the pudding mixture thicken more efficiently and ensures a smoother, creamier base for your pops.
  • Scrape the Bowl Thoroughly: When mixing, make sure to scrape down the sides and bottom of your bowl with a spatula. This prevents any dry pockets of pudding mix and ensures an even, consistent texture throughout.
  • Don’t Overfill Molds: Leave a small amount of space at the top of your popsicle molds. Liquids expand when they freeze, and this prevents your pops from overflowing.
  • Wooden Sticks for Authenticity: If your molds don’t have reusable sticks, inserting wooden popsicle sticks after about an hour of freezing helps them stand upright and securely in the center of your pops.
  • Patience is Key: While prep is quick, adequate freezing time (6-8 hours or overnight) is crucial for fully solid, perfectly textured fudge pops that won’t fall apart.
  • Easy Release: To easily remove frozen pops from their molds, run the molds under warm water for a few seconds. This will slightly loosen the edges and allow them to slide out effortlessly.
  • Get Creative with Flavors: While these 3-ingredient fudge pops are fantastic on their own, don’t hesitate to experiment. Add a splash of peppermint extract for mint chocolate fudge pops, a teaspoon of instant espresso powder for a mocha twist, or even a swirl of dairy-free peanut butter before freezing for a nutty flavor.

Perfect for Any Occasion

These incredible 3-ingredient fudge pops are not just for sweltering summer days. They are a versatile treat perfect for a multitude of occasions. Looking for a thoughtful, homemade surprise for Father’s Day? These pops are an ideal candidate! The “dump and stir” method ensures even the youngest chefs can participate, creating a gift from the heart that Dad is sure to appreciate. They’re also fantastic for summer barbecues, pool parties, or simply as an easy after-dinner dessert that satisfies any chocolate craving. Their dairy-free nature means they can be enjoyed by almost everyone, taking the guesswork out of catering to different dietary needs.

Frequently Asked Questions About Dairy-Free Fudge Pops

Can I use other types of dairy-free milk?

Yes, while almond milk is recommended for its neutral flavor and creamy texture, you can experiment with other dairy-free alternatives like soy milk, oat milk, or cashew milk. Keep in mind that the flavor profile and final consistency might vary slightly. Always use cold milk for best results.

Can I reduce the amount of sugar?

You can try to reduce the sugar if you prefer a less sweet treat. However, sugar also contributes to the texture, helping to prevent the pops from becoming too hard and icy. Reducing it too much might affect the creaminess.

How long do these fudge pops last in the freezer?

When stored in an airtight container or freezer bag, these dairy-free fudge pops can last for up to 2-3 weeks in the freezer. Be sure to wrap individual pops if not using a sealed container to prevent freezer burn.
