For years, my cousin Lani has been the reigning queen of summer gatherings, always bringing this incredible Mexican corn dip. It’s the kind of dish that vanishes almost as quickly as it appears. Seriously, before I even think about grabbing a hot dog off the grill, I make sure to sneak in at least three times my share of this amazing dip. (Sorry, family, if you ever missed out – I was definitely in it to win it!)

Just a few weeks ago, my niece Ella specifically asked for this Mexican corn dip for her graduation party. Of course, I eagerly volunteered to make it, seeing it as my golden opportunity to finally get the exact recipe from Lani. She’s one of those effortlessly talented cooks who whip up incredible dishes without breaking a sweat. Meanwhile, in my kitchen, it’s a full-on scientific experiment: “Was that a quarter teaspoon of salt or a half?” Lani, on the other hand, just freestyles it, and everything turns out phenomenal. It’s truly a gift!

However, her “recipes” are notoriously difficult for a normal person (like me) to translate. When I’d ask, “Lani, can I get your recipe for ____?” she’d usually respond with, “Oh yeah, it’s super easy, you just take a little of this and a little of that, and add it until it’s like ____, you know?”
Sure, Lani. Thanks for the… inspiration! (One of the most popular recipes on my site actually came from my attempt to recreate a seemingly simple side dish she made for dinner one time. Thankfully, that one turned out pretty well.)

So, for this corn dip, I called her directly. Before I could even find a pen, she started rattling off ingredients. I frantically scribbled down “corn, butter, garlic, red onion, salt, pepper, paprika, mayo, cotija, and cilantro.” That was all I could manage to remember from her rapid-fire description.
But here’s the best part: Lani tasted my version of the dip at the party and declared it even better than hers! She might just be flattering me, but I’m absolutely taking the compliment. This recipe is now tried, tested, and Lani-approved.
Next on my quest is her guacamole recipe. I can already hear her: “Karen, just get some avocados and smash them up with lime juice and add some…” and I’ll be there, shouting, “BUT HOW MANY AVOCADOS, LANI?!” only for her to calmly reply, “CALM DOWN, IT’S JUST GUACAMOLE.” #charlatan (Update: It truly is embarrassingly easy, and it really is my favorite guacamole ever.)
What is Mexican Street Corn Dip (Elote Dip)?
If you’ve ever had the pleasure of tasting traditional Mexican street corn, or “Elote,” then you already know exactly why this dip is so incredibly delicious. For those who haven’t yet experienced the magic of Elote, imagine a perfectly grilled ear of corn, generously slathered with a creamy, zesty mayo, sprinkled with crumbly, salty Cotija cheese, a vibrant dusting of chili powder, and fresh cilantro. It’s a symphony of sweet, savory, tangy, and spicy flavors.
Now, take all those incredible elements and transform them into a convenient, dippable form. That’s exactly what Mexican Street Corn Dip is! It captures the essence of classic Elote – the sweet corn, the creamy richness, the salty cheese, and the aromatic spices – but presents it as an easy-to-eat appetizer perfect for any gathering. No more messy corn on the cob; just pure, unadulterated flavor scooped up with your favorite tortilla chips. Are you drooling yet? Let’s get cooking!

Essential Ingredients for the Best Mexican Street Corn Dip
While this recipe truly shines with fresh corn on the cob, don’t despair if it’s the middle of winter and fresh produce is scarce. Frozen corn is a perfectly acceptable substitute and will still yield a wonderfully delicious dip. The key is to get that lovely caramelization on the corn, which adds depth to the overall flavor profile. You can also easily adjust the spices and heat levels to match your personal preference. For a smoky kick, try using smoked paprika. If you love a bit of heat, a tablespoon of finely diced jalapeño can elevate the spice. Not a fan of cilantro? No problem – fresh scallions offer a great alternative, adding a mild oniony bite and a splash of green. Feel free to truly make this recipe your own!
Here’s a quick overview of the main ingredients you’ll need to create this fantastic street corn dip. For precise measurements and detailed instructions, remember to jump to the full recipe card at the bottom of the post!
- Fresh Corn on the Cob: Approximately 10 cobs will yield a generous amount of kernels. Grilling or roasting before cutting can add extra flavor dimensions.
- Red Onion: Adds a crisp, pungent kick and beautiful color.
- Salted Butter: Essential for sautéing the corn and creating that rich, savory base.
- Garlic: Minced garlic brings aromatic depth to the dip.
- Paprika: Provides a subtle smoky sweetness and vibrant color.
- Chili Powder: A classic Mexican spice blend that adds warmth and a mild kick.
- Kosher Salt: For seasoning and enhancing all the flavors.
- Freshly Ground Black Pepper: To taste, adding a fresh bite.
- Mayonnaise: The creamy binder that gives the dip its characteristic richness, just like authentic Elote.
- Cotija Cheese: A dry, crumbly Mexican cheese with a distinct salty flavor. It’s absolutely crucial for that authentic street corn taste.
- Cilantro: Fresh chopped cilantro adds a burst of freshness and color.
- Tortilla Chips: The perfect vessel for scooping up every last bit of this delicious dip!
How to Easily Make Authentic Elote Dip

Lani’s first piece of advice for this dip is to use more corn than you think you need – she recommends about 10 cobs for one bowl of dip. I know, it sounds like a lot, and you might be tempted to scale back. But trust me on this one, don’t! The rich, sweet corn flavor is the star, and having plenty ensures every bite is packed with deliciousness. Later, when you find yourself unable to stop scooping, you’ll be incredibly grateful you followed this advice and made the full recipe!

Begin by carefully husking your corn and then, using a sharp knife, slice the kernels off each cob. Yes, it can get a bit messy on your counter, but the unparalleled freshness is absolutely worth it! For safety and efficiency, make sure to sharpen your knife blade. A sharp knife makes a world of difference, allowing you to quickly and cleanly shave off the kernels.

Have you ever had Cotija cheese? If not, you’re in for a treat! It’s a dry, firm Mexican cheese with a wonderfully salty and slightly tangy flavor, often compared to Parmesan or feta. It’s absolutely delicious sprinkled over salads, barbacoa, tacos, and burrito bowls. Its unique profile is a must-have ingredient for authentic Elote dip. You typically find it sold in a round block in the cheese aisle or near the deli section of your grocery store. To prepare it, simply break off a chunk and use a fork to crumble it into fine pieces.
If Cotija cheese is unavailable, don’t worry! You can use feta or queso fresco as a good substitute. In a real pinch, even Parmesan cheese can work, though the flavor will be less authentic. However, for the best possible flavor, I highly recommend Cotija first, followed by feta, then queso fresco.

Finally, once your corn mixture has slightly cooled, you’ll incorporate the creamy mayonnaise, the crumbled Cotija cheese, and the fresh cilantro. Gently stir everything together until well combined. For those who aren’t keen on cilantro, you can certainly leave it out or substitute with finely chopped scallions. But if you’re a cilantro fence-sitter, I encourage you to give it a try in this dip – it adds a wonderful fresh brightness and a beautiful pop of color that truly elevates the dish.

How to Store Mexican Street Corn Dip
Proper storage ensures your Mexican street corn dip stays fresh and delicious for as long as possible. First, allow the dip to cool completely to room temperature before transferring it to an airtight container. This crucial step helps prevent condensation from forming inside the container, which can lead to a watery dip or affect its creamy texture. Once cooled, seal it tightly and refrigerate for up to 3 to 4 days. You might even find that the flavors deepen and meld together beautifully overnight, making it taste even better the next day!
When you’re ready for a second helping, give the dip a good stir to reincorporate any ingredients that may have separated. If you originally served it warm, you can gently reheat it in the microwave or on the stovetop. To truly revive its fresh flavors, add a squeeze of fresh lime juice or an extra sprinkle of Cotija or feta cheese right before serving. This will bring back that vibrant, zesty punch.
Important Food Safety Note: If you plan to serve this irresistible dip at an outdoor BBQ or picnic, please be mindful of food safety guidelines. Dips containing mayonnaise and cheese should not sit out at room temperature for more than two hours. If the ambient temperature is above 90°F (32°C), this time limit reduces to just one hour, as bacteria can multiply rapidly. To keep your dip safe and delicious, store it over ice or in a cooler when it’s not being actively served. I know, nobody likes a buzzkill, but safety always comes first!

Elote Dip Recipe

Ingredients
- 10 cobs corn, fresh
- 1/4 red onion, finely diced
- 1/2 cup salted butter, (1 stick)
- 2 cloves garlic, smashed and minced
- 3/4 teaspoon paprika
- 3/4 teaspoon chili powder
- 1 & 1/2 teaspoons kosher salt
- cracked black pepper, to taste
- 3 tablespoons mayonnaise
- 5-6 ounces Cotija cheese, crumbled
- 2-3 tablespoons cilantro, freshly chopped
- tortilla chips, for serving
Instructions
-
Begin by preparing your fresh corn. Husk the cobs and then, using a sharp chef’s knife, carefully slice all the kernels off of each cob. Next, finely chop one-quarter of a red onion.
-
Heat a large skillet over medium heat. Add the salted butter and allow it to melt completely, coating the bottom of the pan. Once the butter is melted, add the prepared corn kernels and the chopped red onion to the skillet.
-
Let the corn and onion cook for approximately 8-10 minutes, stirring occasionally. You want the corn to start developing a beautiful golden-brown color and slightly stick to the bottom of the pan, which indicates caramelization and enhanced flavor.
-
Add the minced garlic, paprika, chili powder, kosher salt, and freshly cracked black pepper to the skillet. Continue to cook for just 1 minute more, stirring constantly, until the spices are fragrant. Then, remove the skillet from the heat.
-
Allow the hot corn and onion mixture to cool slightly. It doesn’t need to be completely cold, but it should be warm rather than piping hot before you add the remaining ingredients.
-
While the corn mixture is cooling, finely chop your fresh cilantro. Take your block of Cotija cheese, place it in a bowl, and use a spoon or fork to crumble it into fine, distinct pieces.
-
Once the corn mixture has cooled slightly, transfer it to a large mixing bowl. Add the mayonnaise, crumbled Cotija cheese, and chopped cilantro. Stir everything together thoroughly until all ingredients are well combined and evenly distributed.
-
Your delicious Elote dip is now ready to serve! You can enjoy this versatile dip warm, at room temperature, or even chilled. Personally, I find it tastes best when it’s still slightly warm, as this brings out all the wonderful flavors. Serve immediately with plenty of tortilla chips for dipping.
Notes
How to store Mexican street corn dip
To store this Mexican street corn dip, make sure it has cooled to room temperature before transferring it to an airtight container. This helps prevent condensation, which can make the dip watery or affect its texture. Once cooled, seal it tightly and store it in the refrigerator for up to 3 to 4 days. The flavors often deepen and become even more delicious the next day.
When you are ready for round 2, give the dip a good stir to recombine any separated ingredients. If you originally served it warm, you can reheat it gently in the microwave or on the stovetop—just add a squeeze of fresh lime juice or a sprinkle of Cotija or feta cheese to liven it back up.
Note: If you’re serving this dip at an outdoor BBQ or picnic, be mindful of food safety. Dips like this should not sit out for more than two hours (or one hour if the temperature is above 90°F), as bacteria can grow quickly. Keep it chilled over ice or in a cooler when not being served to make sure it’s safe to eat later. Sorry to be a buzzkill, but safety first.
