The secret is balancing the creamy base with lemon (zest and juice), vinegar, and a touch of sugar. Those elements make the flavors pop and stop the slaw from tasting flat. You can also use this recipe as a quick fix for prepackaged coleslaw—add lemon zest and juice, a little extra vinegar, and a pinch more salt and spices to wake it up.

Zest and juice a lemon into a bowl with the mayo and sour cream. If you have a microplane, zesting is a 30‑second task and worth it for the extra citrus aroma.
Add the remaining dressing ingredients and whisk until smooth. If you have caraway or celery seed, they add a nice earthy note, but they’re optional.

Toss in one bag of the angel-hair cabbage and some shredded carrots, then add the green onions and dill (if using). The factory-shredded cabbage has very thin pieces that give the ideal texture; remove or slice any oversized end pieces if needed.

Stir everything with a rubber spatula until the dressing has coated the vegetables. It may look slightly dry at first — the cabbage will release moisture as it sits and the dressing will distribute evenly.

Once combined, add the second bag of cabbage and mix again. Let the slaw chill for at least 10 minutes to allow the flavors to meld; 30–60 minutes is even better.

Ingredients
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 teaspoons lemon zest, from 1 large lemon
- 1/4 cup lemon juice, from the same 1 large lemon
- 1 tablespoon granulated sugar
- 1 tablespoon whole grain mustard, or Dijon
- 3 tablespoon white vinegar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon caraway seeds, optional
- 1/4 teaspoon celery seeds, optional
The vegetables:
- 2 (10-ounce) bags angel hair cabbage
- 2 large carrots, peeled and shredded
- 1/4 cup green onions, minced
- 2 tablespoons fresh dill, finely chopped (optional)
Instructions

In a large bowl, whisk together 1/2 cup mayonnaise, 1/2 cup sour cream, 2 teaspoons lemon zest, 1/4 cup lemon juice, 1 tablespoon sugar, 1 tablespoon whole-grain mustard (or Dijon), 3 tablespoons white vinegar, 3/4 teaspoon kosher salt, and 1/2 teaspoon black pepper until smooth.
