Strawberry Panzanella Salad: A Sweet & Savory Spring Delight

Just yesterday, I journeyed back to my hometown of Manteca to visit my parents. It’s a place that holds countless memories for me, a nostalgic backdrop where childhood unfolded. As my mom and I sifted through old boxes filled with forgotten treasures and remnants of my past, a wave of nostalgia washed over me. For those unfamiliar, Manteca means “lard” in Spanish – a charmingly ironic name for a town that raised a food enthusiast like me, especially when I’m about to share a salad recipe featuring glorious fried bread!

A recent comment on my blog, “I am so glad to have found you, and these cookies, although my bum is not,” truly made me smile, Abbie. I empathize with the struggle of resisting delicious food, but growing up in a place literally named “Lard” perhaps predestined my appreciation for indulgent ingredients. So, yes, even this fresh, vibrant strawberry salad is elevated (or “ruined,” depending on your perspective!) by the sheer brilliance of fried bread. And believe me, it’s worth every single bite.

A Walk Down Memory Lane

The act of decluttering can be surprisingly profound. Are you a meticulous keeper of mementos, or do you prefer a minimalist approach? Personally, I tend to discard things without much hesitation, yet somehow my home always feels perpetually full. Despite my usual disposition, my mom managed to convince me to preserve a few relics from my past during our recent box-sifting session. Each item unearthed told a story, a small fragment of a life lived, evoking forgotten moments and cherished feelings.

Adorable childhood photo of the author as a baby and kindergartener

Among the discoveries were these gems: a photograph proclaiming the “Fattest Baby/Cutest Kindergartener” award – a testament to my early culinary inclinations, perhaps? It’s amusing to see how some traits manifest so early in life!

Birthday celebration photo with the author and Uncle Jim sharing a cake

Then there was this delightful snapshot of me and my Uncle Jim, celebrating our shared birthday. The cake, clearly dominating the frame, might suggest it was all mine, despite sharing the special day! Such simple joys are often the most vivid memories.

Childhood photo of the author and brother Nate playing POGS and singing 'There's a Hole in the Bucket'

And POGS! Remember those? What a blast from the past! This photo also captures my brother Nate and me in a legendary performance of “There’s a Hole in the Bucket, Dear Liza.” The unfiltered joy and innocent creativity of childhood are truly irreplaceable.

Sister Nikki in a vintage dress and on top of the family station wagon, White Lightning

While I’m not in these particular photos, I had to share them. This is my sister, Nikki, showcasing an incredible dress and hair combo, perfectly framed by All The Stonewash denim that was all the rage. The image on the right features Nikki atop “White Lightning,” our trusty family station wagon. When I sent her this photo, she promptly recalled it: “I remember that. December of 1998. The shoes were popular in 1988 btw. Posterity will hardly notice the difference.” Her wit remains as sharp as ever, and I think she’s absolutely right – some fashion statements are truly timeless, in their own way.

A humorous poem about food and the author in London

I genuinely guffawed reading this poem – it’s a clear case of “like mother, like daughter” when it comes to a shared love for good food! On the right, that’s me in London, where I traveled with my high school choir as the piano accompanist. Or, perhaps, that was merely my cover identity for a secret life as a culinary superhero. One can never be too sure.

It’s an odd sensation, seeing your entire life narrative contained within a few cardboard boxes. Baby announcements nestled beside high school term papers, a letter from a congressman congratulating my parents on my birth (was that a standard practice back then? So wonderfully peculiar!). This year marks my 10-year high school reunion. Initially, I was hesitant about attending, but after this profound trip down memory lane, sifting through these tangible pieces of my history, I find myself genuinely wanting to reconnect and relive a bit of that past.

The Star of Spring: Strawberry Panzanella Salad

Enough reminiscing! Let’s talk about Panzanella. Are you already a fan of this incredible Italian bread salad? My friend Kate recently raved about an “AMAZING” version she tasted at a restaurant, and I was instantly inspired to recreate it with my own twist. When she popped over during my photo shoot, I asked for her expert opinion. Her response was immediate and enthusiastic: “MORE STRAWBERRIES!” Her philosophy? More strawberries than greens. And honestly, that sounds exactly like my kind of salad. This delightful recipe embodies the fresh, vibrant spirit of spring, making it a perfect addition to any seasonal menu.

The Magic of Fried Bread: A Game Changer

Now, let’s address the elephant in the room – or rather, the glorious, golden-brown crouton in the salad. Can we talk about fried bread for a moment? Why isn’t this a more common practice? I’ve dabbled in frying dough and tortillas, so why did it take me so long to consider frying bread? Most croutons are traditionally baked, but when Kate suggested frying, I wasn’t about to argue with genius. And I’m so glad I didn’t. This truly is the best. thing. ever.

The resulting texture is unparalleled – crispy on the outside, yet still tender within, absorbing just the right amount of rich olive oil. It transforms the entire salad, adding a depth of flavor and satisfying crunch that baked croutons simply can’t replicate. My husband, Eric, and I even devoured the warm leftovers drizzled with syrup one morning. I’m already brainstorming ways to incorporate this brilliant idea into future breakfast creations; just you wait!

Why This Panzanella Shines for Easter and Beyond

This Strawberry Panzanella Salad is more than just delicious; it’s incredibly practical, especially for special occasions like Easter. The fried bread, a key component, can be prepared up to a day in advance and stored at room temperature, maintaining its delightful crispness. In fact, you can prep the entire salad ahead of time, holding off on adding the fresh mozzarella until just before serving to ensure it stays moist and flavorful. And, of course, keep the fried bread separate from the other ingredients until the very last minute to prevent it from becoming soggy. This thoughtful preparation means less stress and more enjoyment when your guests arrive.

This spring salad is mostly made up of strawberries and fried bread. FRIED BREAD. Oh, and fresh mozzarella to seal the deal. It’s easy to make ahead, so this makes a perfect side dish for Easter!

Ingredients

  • 2 cups olive oil
  • 1 pound loaf of french bread, day old works great
  • salt and pepper to taste
  • 8 to 16 ounces mixed greens of your choice
  • 2 pounds strawberries, hulled and quartered
  • 3 ounce bunch of basil, chiffonade*
  • 16 ounces fresh mozzarella
  • balsamic vinaigrette, I like Newman’s Own

Instructions

  1. In a high-sided skillet, heat olive oil over medium heat.
  2. While the oil gets hot, slice the bread into bite-size cubes.
  3. Test a piece of bread in the oil. If it immediately starts to bubble, it’s ready.
  4. Fry the bread in several batches. Stir the bread frequently so it doesn’t stick to the pan. When the cubes are golden (about 3-4 minutes), remove with a slotted spoon to a paper-towel lined plate. Sprinkle with salt and pepper immediately. At this point, you can store the bread for up to 24 hours on the counter.
  5. When you are ready to serve the salad, add the greens to a large salad bowl. (Use however much you want–it’s totally up to you. A traditional panzanella has no greens.)
  6. Add the strawberries, basil, and mozzarella, and toss gently. Add as many croutons as you think you will eat, or all of them if you anticipate finishing off the salad. (Once the croutons are combined with the salad, they will start to get soggy, so if you anticipate leftovers it’s best to add them a little at a time.)
  7. Dress the salad with balsamic vinaigrette and serve immediately.

Notes

*To chiffonade basil: Stack the leaves, roll them tightly, then slice thinly into ribbons.
