Grilled Tomato, Basil & Mozzarella Salad (Caprese Salad Recipe)

This is my new favorite salad! Grilled Tomato, Basil, & Mozzarella Salad is basically a Caprese salad recipe, but even better because we are grilling the tomatoes and ciabatta for the ultimate flavor punch. A creamy basil-lemon dressing tops it off! Hooray for summer food! Hooray for bread in salad! Because we all know that’s the best part.

Ingredients

For the Dressing:

  • 1 cup mayonnaise
  • 2/3 cup buttermilk
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 small clove garlic, crushed with a knife
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 bunch fresh basil

For the Salad:

  • 1 head romaine, rinsed, dried, and chopped
  • 12-16 ounces ciabatta bread
  • Soft butter, for ciabatta
  • Grilling skewers (metal or wood)
  • 2 dry pints cherry tomatoes, any color
  • 12 ounce tub marinated mozzarella balls, drained (save oil for tomatoes/marinade)
  • Salt and pepper, to taste
  • 1/2 cup fresh basil, thinly sliced

Instructions

  1. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  2. Prepare the Dressing: In a blender, combine mayonnaise, buttermilk, lemon zest, lemon juice, garlic, salt, cayenne, and basil. Blend until smooth. Transfer to a jar or dressing dispenser. This makes a little over 2 cups.
  3. Preheat your grill to medium heat.
  4. Prepare the romaine lettuce: Wash and dry thoroughly (a salad spinner works great!), then chop into bite-sized pieces. Place in a large serving bowl.
  5. Split the ciabatta bread in half lengthwise. Spread the cut sides generously with soft butter. Set aside.
  6. Spear all of the cherry tomatoes onto several skewers, leaving about 1/4 inch of space between each tomato for crisping. Place skewers on a baking sheet, drizzle with the reserved oil from the mozzarella balls (or olive oil), and season with salt and pepper. Rub oil onto tomatoes with your hands.
  7. Lightly oil your grill grates to prevent sticking. Place the tomato skewers on the grill. If space allows, add the buttered ciabatta halves cut-side down. (If not, grill ciabatta in batches.)
  8. Grill the tomatoes and bread for about 2 minutes. Remove the bread once it has visible char marks and is golden brown. Continue grilling the tomatoes for another 1-3 minutes until they are softened and nicely charred on the edges. Watch carefully to avoid burning.
  9. Remove grilled items from the grill. Chop the ciabatta into bite-sized pieces. Add the grilled tomatoes (off skewers) and chopped ciabatta to the bowl with the romaine.
  10. Add the thinly sliced fresh basil and the drained mozzarella balls to the salad.
  11. Toss everything together gently. Dress with as much of the basil dressing as desired (you likely won’t need all of it).
  12. Serve immediately. If you don’t think you will eat it all right away, leave out some of the bread and tomatoes and store separately until you want to make a new salad.
