As the leaves begin to change and a crispness fills the air, my mind inevitably drifts to all things autumn – especially the delicious seasonal produce. This time of year, thoughts of apple picking adventures and the search for the perfect Halloween costume often go hand-in-hand. While some might be drawn to elaborate sewing projects, my goal usually revolves around creative yet wonderfully easy ideas. My kids are still at an age where they’re open to suggestions, allowing for some delightfully simple, homemade costumes (like my tried-and-true Jelly Belly bag with colorful balloons!). The trick is finding that sweet spot between imaginative and achievable, especially when faced with requests like a chameleon costume, which would undoubtedly challenge my less-than-zero sewing skills!

Embracing the fall spirit wholeheartedly, a recent trip to Apple Hill provided ample inspiration. Picture a vibrant array of apple orchards, much like a pumpkin patch but brimming with crisp, juicy apples and the irresistible scent of fresh apple cider. The apple cider there is truly exceptional, and their apple cider donuts are simply divine. It was during this trip that I indulged in some truly remarkable caramel, which, despite its price, sparked a culinary quest to recreate that perfect, tooth-friendly caramel at home. (Success! My homemade caramel and caramel apples are now legendary amongst friends and family – no broken teeth involved!)

The Ultimate Fall Dinner: Pan Seared Pork Chops with Apple Cider Glaze

Inspired by the bounty of autumn, especially the exceptional apple cider and fresh apples from our trip, I created this delightful recipe for Pan-Seared Pork Chops with a vibrant Apple Cider Glaze. It’s a dish that perfectly encapsulates the cozy, comforting essence of fall. The concept of pork chops and apples together is a culinary classic for a reason; the savory richness of pork finds its ideal counterpart in the sweet, slightly tart notes of apples. This harmonious pairing is further enhanced by roasted sweet potatoes and tender onions, creating a complete and satisfying meal.

The star of the show, beyond the perfectly cooked pork, is undoubtedly the roasted vegetables and fruit. Sweet potatoes, a personal favorite, become incredibly tender and slightly caramelized in the oven, their natural sweetness brought to life with a hint of cinnamon and brown sugar. If you love roasted sweet potatoes as much as I do, you’ll know that a good recipe can stand on its own – in fact, my Roasted Sweet Potatoes and Brussels Sprouts is one of the most popular recipes on my blog for a reason!

This dish not only tastes incredible but also fills your kitchen with the most amazing autumn scents, instantly making your home feel warm and inviting. It’s a complete meal that offers diverse textures and flavors – from the tender pork and crisp apples to the soft, sweet potatoes and pungent onions – all brought together by that irresistible apple cider glaze.

Ingredients for Your Apple Cider Pork Chop Dinner

Gathering your ingredients for these apple cider glazed pork chops is straightforward. Many items are likely already in your pantry, especially if you enjoy cooking with seasonal produce. For the best results, select firm, ripe apples that hold their shape well when cooked, such as Gala, Fuji, or Honeycrisp. The quality of your apple cider also makes a difference in the depth of flavor for the glaze, so choose a good quality, unfiltered cider if possible. Below is a detailed list, but for specific measurements and instructions, jump to the full recipe card at the bottom of the page!

For the Roast:

  • Sweet potato
  • Onion
  • Apples (Gala, Fuji, Honeycrisp recommended)
  • Garlic
  • Olive oil
  • Cinnamon
  • Garlic salt
  • Kosher salt
  • Pepper
  • Brown sugar

For the Pork Chops & Glaze:

  • Pork chops (thin or thick cut)

Expert Tips for Perfectly Seared Pork Chops Every Time

Achieving moist, tender, and perfectly golden-brown pork chops is simpler than you might think. Follow these essential tips for the best results:

Prepare the Pork Chops for Even Cooking. Before searing, it’s crucial to prepare your pork chops properly to ensure they cook evenly and develop that beautiful crust. One common issue is curling, which often happens due to the strip of fat along the edge. To prevent this, take a sharp serrated knife and make two or three small slits (about 1/2 inch deep) into the fat line on the edge of each chop. This simple trick, learned from Cook’s Illustrated, releases the tension in the fat, allowing the chop to lie flat in the pan. While not a deal-breaker if you skip it, it significantly improves the sear and overall texture. You can even do this post-sear if you notice them curling!

A chef's knife making two small slits in the fat along the edge of a raw pork chop, demonstrating a technique for even cooking.

Don’t Crowd the Pan. For that coveted golden-brown crust and deep, rich flavor (the Maillard reaction!), your pork chops need room to breathe. When you overcrowd the pan, the temperature drops, and the meat begins to steam rather than sear. This results in pale, less flavorful chops. If you’re cooking for a crowd or have a smaller skillet, work in batches. It might take an extra few minutes, but the superior sear is absolutely worth the effort. Aim for at least an inch of space between each chop.

Master the Temperature for Tender Pork. The absolute secret to moist pork chops is to avoid overcooking them. Pork chops cook quickly, especially thinner cuts, and even a few extra minutes can turn them from juicy to dry and tough. The safe internal temperature for pork is 145°F (63°C). However, meat continues to cook after it’s removed from the heat (this is called carryover cooking). For the juiciest results, pull your pork chops off the heat when they reach around 135-140°F (57-60°C), then tent them loosely with foil and let them rest for 5-10 minutes. During this resting period, their internal temperature will rise to the perfect 145°F, and the juices will redistribute, ensuring every bite is succulent. Always use an instant-read meat thermometer for accuracy – it’s your best friend for perfectly cooked pork!

Storing and Reheating Your Apple Cider Pork Chops

This dish makes for fantastic leftovers, perfect for a quick lunch or another easy dinner. The roasted vegetables and apple cider glazed pork chops will stay fresh in an airtight container in the refrigerator for about 2-3 days. For best results, allow the meal to cool completely before storing.

While technically safe to freeze, I generally don’t recommend freezing these pork chops and roasted vegetables. The texture of the pork can become slightly drier, and the sweet potatoes and apples might turn a bit mushy or mealy upon thawing and reheating. However, if you find yourself with extra and need to store them for a longer period, they can be safely frozen for up to 2 months when sealed tightly in a freezer-safe bag or container. To reheat, gently warm in a skillet over medium-low heat with a splash of chicken broth or apple cider, or in the oven at a low temperature (around 300°F) until heated through.

With a little bit of planning and these simple steps, you can have these flavorful apple cider pork chops on the table in about 45 minutes, much of which is passive roasting time for the vegetables. Frequently Asked Questions About Apple Cider Glazed Pork Chops

What is the secret to moist pork chops?

The ultimate secret to achieving consistently moist and tender pork chops lies in precise temperature control. Overcooking is the most common culprit for dry, tough pork. Use an instant-read thermometer and cook the pork chops just until they reach the safe internal temperature of 145°F (63°C), pulling them off the heat slightly before if you plan to rest them.

What apples go well with pork chops?

For pairing with pork, opt for apples that are both sweet and firm, capable of holding their shape during cooking without turning to mush. Excellent choices include Gala, Fuji, Honeycrisp, or Braeburn. Their natural sweetness provides a delightful contrast to the savory notes of the pork and the tang of the apple cider glaze.

Are pork chops better in the oven or on the stove?

Both oven and stove-top methods can yield delicious pork chops, as long as you prioritize proper cooking temperature to prevent dryness. The primary advantage of cooking pork chops on the stove (pan-searing) is the ability to develop a beautiful, caramelized crust through the Maillard reaction, which adds incredible depth of flavor that roasting alone can’t quite achieve. You can finish them in the oven if they are very thick, but starting with a sear is highly recommended.

How do I cook pork chops so they don’t dry out?

Put away old notions of overcooked pork. The key to preventing dry pork chops is a meat thermometer! Cook your chops to an internal temperature of about 135-140°F (57-60°C) when measured at the thickest part. Immediately remove them from the heat and tent loosely with foil for 5-10 minutes. This resting period allows for carryover cooking, where the temperature will naturally rise to the perfect 145°F (63°C), and juices will redistribute, resulting in incredibly tender and moist pork. Never cook past this temperature, or you risk a dry outcome.

Close-up of pan seared pork chops topped with a glossy, brown sauce and garnished with chunks of roasted sweet potatoes and apples, finished with a sprinkle of fresh herbs.
These Pan Seared Pork Chops offer an easy weeknight dinner solution. Done in minutes, they’re glazed in a savory apple cider sauce and served with cinnamon-spiced roasted apples and sweet potatoes. Your home will instantly smell like autumn!

Ingredients

For the Roast

  • 1 large sweet potato, peeled and chopped into 1-2 inch chunks
  • 1 medium onion, sliced into wedges
  • 2 large apples, cored and sliced into 8 pieces each (leave peel on)
  • 2 cloves garlic, smashed
  • 1/3 cup olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon garlic salt
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper, or to taste
  • 2 tablespoons brown sugar

For the Pan Sear & Glaze

  • 4-5 pork chops*
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 cups apple cider
  • 1 cup chicken broth
  • 1 & 1/2 tablespoons apple cider vinegar
  • 2 tablespoons dijon mustard
  • 3 tablespoons whole grain mustard
  • 1 tablespoon soy sauce
  • 3 tablespoons butter
  • fresh thyme , or rosemary to garnish

Instructions

  • Preheat your oven to 400 degrees F (200°C). Line a large baking sheet with foil or parchment paper for easy cleanup.
  • Prepare your vegetables and fruit: Chop the sweet potato into 1 or 2-inch chunks. Peel the onion and slice it into thick wedges. Core the apples and cut each into about 8 slices (leaving the peel on adds color and texture). Smash the garlic cloves gently with the side of a chef’s knife.
  • Add the prepared sweet potato, onion, apples, and smashed garlic to the lined baking sheet. Drizzle with 1/3 cup of olive oil.
  • In a small bowl, combine the cinnamon, garlic salt, kosher salt, pepper, and brown sugar. Sprinkle this spice mixture evenly over the ingredients on the baking sheet. Use your hands or a wooden spoon to thoroughly mix everything, ensuring all pieces are well coated with oil and spices. Spread the mixture out in a single layer on the pan.
  • Roast in the preheated oven for approximately 30 minutes, or until the sweet potatoes are tender enough to easily pierce with a fork and the apples are softened. Remove from the oven and keep warm while you prepare the pork chops.
  • Meanwhile, prepare the pork chops: Pat them thoroughly dry with a paper towel and season generously with salt and pepper on both sides. To prevent curling during searing, use a sharp serrated knife to make 2 shallow slits (about 1/2 inch deep) into the line of fat on the edge of each chop. (Refer to the photo in the blog post for a visual guide). This technique ensures the pork chop cooks evenly.
  • Heat a large, heavy-bottomed skillet (cast iron works wonderfully) over medium-high heat. Once hot, add about 1 tablespoon of olive oil to the pan.
  • When the oil begins to shimmer, carefully place the pork chops into the skillet one at a time, ensuring there is ample space (about an inch) between each chop. Sear over medium-high heat for approximately 2 minutes per side, until a beautiful golden-brown crust forms. If you have more than 4 pork chops, work in batches to avoid overcrowding the pan, which can lead to steaming instead of searing.
  • Once seared, remove the pork chops from the skillet and transfer them to a plate. Set aside.
  • Using the same skillet (don’t clean it, those browned bits add flavor!), add the apple cider, chicken broth, apple cider vinegar, dijon mustard, whole grain mustard, and soy sauce. Bring the mixture to a boil, then reduce the heat to a simmer (it should still be gently bubbling).
  • Allow the glaze to simmer for about 5 minutes, or until it has slightly thickened. Stir in the 3 tablespoons of butter and continue simmering until the butter is fully melted and incorporated.
  • Return the seared pork chops and any accumulated juices from the plate to the skillet with the glaze. Cover the skillet and continue to simmer for an additional 5 to 15 minutes, depending on the thickness of your pork chops. Thin-cut chops will finish cooking much faster than thick-cut ones. The pork should reach an internal temperature of 145°F (63°C). For accurate cooking, always use a meat thermometer to avoid overcooking. If using thin chops, you might remove them as soon as they reach temperature to prevent toughness, allowing the sauce to reduce further if needed.
  • Serve the tender pork chops immediately alongside the warm roasted sweet potatoes and apples. Drizzle generously with the apple cider glaze from the pan. For convenience, you can also transfer the roasted vegetables directly into the skillet with the pork chops and glaze before serving.
  • Garnish with fresh sprigs of thyme or rosemary for an aromatic and beautiful finish.

Notes

*I used thin-cut pork chops for this recipe, which totaled about a pound of meat. If you prefer to use thick-cut pork chops, they will also work wonderfully. The initial searing time can remain the same, but you will need to increase the cooking time in the apple cider mixture until they reach an internal temperature of 145°F (63°C) for perfect doneness.

How to store apple cider pork chops

These pork chops and roasted veggies will keep well in an airtight container in the fridge for 2-3 days. While not ideal for freezing due to potential changes in the texture of the pork and vegetables, you can safely freeze them for up to 2 months if necessary, ensuring they are sealed tightly in a ziplock bag or freezer-safe container.
