- 3/4 teaspoons lime zest, or to taste
- 1 & 1/2 tablespoons lime juice, fresh
- 1 & 1/2 tablespoons mayonnaise
- 1 & 1/2 teaspoons honey
- 1/4 teaspoon black pepper, freshly ground, or to taste
- salt , to taste
- 4 cups baby kale or regular kale, chopped
- 1 & 1/2 cups ruby red grapefruit sections, about 2 large grapefruit
- 1/2 cup red onion, thinly sliced
- 1 14-oz can hearts of palm, rinsed, drained, and cut diagonally into 1/4-inch slices
- 1 small red Chile, seeded and thinly sliced
- 1 avocado, ripe, cut into thin wedges
Instructions

In a small bowl, whisk together the oil, lime zest, lime juice, mayonnaise, honey, and pepper, and salt to taste.

In a salad bowl, toss together kale, grapefruit, red onion, hearts of palm, and red chile. Gently top with the avocado. Serve with dressing, or toss it in the bowl. You can also arrange the salad on 6 individual plates.
Notes
If you are nervous about the red chile, you can omit it and add hot sauce to the dressing for some flavor.
