Effortless S’mores Cheesecake Bliss

Decadent No-Bake S’mores Cheesecakes: A Sweet Escape for Any Season

Life, much like a perfectly toasted marshmallow, is full of delightful surprises and occasional, slightly scorched moments. Take, for instance, a recent home improvement endeavor involving built-in bookshelves. The plan was brilliant, I thought, to paint the shelves outdoors in the backyard, allowing them to dry faster under the open sky. What could possibly go wrong? Well, the sun, it turns out, has a mischievous sense of humor and an uncanny ability to find exposed skin.

After hours of diligent bending, stretching, and transforming plain wood into crisp white, I was left with more than just freshly painted shelves. I also sported a rather distinctive, bright red sunburn line precisely where my shirt met my shorts – a “homemade tramp stamp,” if you will. The irony wasn’t lost on me; achieving domestic bliss sometimes comes with unexpected, and frankly, hilarious, consequences. It was definitely a super classy look, adding an unintentional splash of color to my otherwise monochromatic painting attire.

Sharing this sartorial sunburn tale with my witty sister-in-law, Sandi, I jokingly asked if my level of “trashiness” could possibly reach new heights. Her quick response offered a reassuring, yet equally amusing, perspective: “Oh yeah. It could be a tube top sunburn. Or worse, a sunburned crack.” And just like that, context was restored, and my personal aesthetic crisis was averted. Let’s all count our blessings for what we don’t have, shall we? And on that note, let’s swiftly pivot our thoughts away from such distressing imagery and towards something far more delectable and universally appealing.

Embracing the Flavors of Autumn and Beyond

As the air turns crisp and the leaves begin their magnificent transformation (or in California, we simply feel the subtle shift in breeze and dream of actual autumn foliage), my excitement for all things pumpkin-spiced and autumnal reaches its peak. I’m practically counting down the days until I can dive headfirst into my favorite pumpkin recipes – pumpkin bread, pumpkin pie, pumpkin lattes, pumpkin muffins, pumpkin soup, you name it! Isn’t fall just the absolute best season? The cozy sweaters, the festive decorations, the comforting aromas filling the kitchen, the warmth of spiced drinks… it truly is a magical time of year that invigorates the senses and calls for hearty, warming dishes and comforting desserts.

Even though I now reside in sunny California, where scarves are often more of a fashion statement than a necessity, that won’t deter me from fully embracing the autumnal aesthetic. You can bet I’ll be donning my favorite scarves, sipping on warm beverages, and fully immersing myself in the spirit of the season, regardless of the thermometer. It’s about the feeling, the traditions, and the delicious seasonal bounty. What’s your favorite part of fall? Is it the vibrant colors, the festive holidays like Halloween and Thanksgiving, the change in wardrobe, or perhaps the comforting array of seasonal treats and flavors that grace our tables?

These S’mores Cheesecakes offer a unique bridge between summer’s carefree spirit and autumn’s comforting embrace. They embody the warmth of a campfire and the rich, indulgent flavors perfect for a cool evening. The beauty of a no-bake recipe means less time in a hot kitchen and more time enjoying the beautiful weather, whatever season it may be. Whether you’re hosting a get-together, need a quick dessert for a potluck, or just want to treat yourself, these cheesecakes are an absolute winner. They are the epitome of simple elegance and undeniable deliciousness, making them a go-to for any occasion that calls for a truly satisfying sweet ending.

S’mores have truly transcended their summer bonfire origins. These decadent No-Bake S’mores Cheesecakes are the ultimate proof – a universally loved treat that brings joy year-round. Rich, creamy, and surprisingly easy to make, they’re the perfect individual dessert for any occasion.

Ingredients

Crust

  • 4 tablespoons butter, 1/2 stick, melted
  • 2/3 cup graham cracker crumbs

Chocolate Ganache

  • 4 ounces semisweet chocolate chips
  • 3 tablespoons heavy cream

Cheesecake

  • 1/2 cup whipped cream cheese, at room temperature
  • 1/2 cup marshmallow fluff, about half of a 7 oz jar
  • 1/3 cup sweetened condensed milk
  • 2 teaspoons vanilla extract

Topping

  • 1/2 cup marshmallow fluff, use the other half of that 7 oz jar
  • 3 marshmallows, cut in half and toasted

Instructions

  1. In a small bowl, combine the melted butter and graham cracker crumbs until they are thoroughly moistened and resemble wet sand. This mixture will form the foundational crust for your cheesecakes. Divide the crumb mixture evenly among six small individual serving containers, such as mini glass jars or ramekins (approximately 4 oz capacity). Press the crumbs firmly into the bottom of each container to create a compact base. If you wish to reserve some graham cracker crumbs for a decorative sprinkle on top later, set a small amount aside now, or simply prepare a little extra for this purpose.
  2. To prepare the rich chocolate ganache, gently heat the heavy cream in a small saucepan over medium heat. Watch carefully and remove it from the heat just as small bubbles begin to appear around the edges – you don’t want it to boil vigorously. Immediately add the semisweet chocolate chips to the warm cream. Let the mixture sit undisturbed for about 30 seconds to a minute; this allows the residual heat from the cream to melt the chocolate. Then, stir the mixture until all the chocolate chips are completely melted and you have a smooth, glossy ganache. Carefully spoon approximately one teaspoon of this warm ganache on top of each prepared graham cracker crust.
  3. Now, for the star of the show: the creamy cheesecake filling. In the bowl of an electric mixer, beat the room-temperature whipped cream cheese on medium speed until it’s wonderfully smooth and creamy, with no lumps remaining. Next, prepare the marshmallow fluff. For ease of handling, remove all foil from the top of your marshmallow fluff jar and microwave it for about 8 seconds. This brief warming makes it more pliable. Add half of the warmed marshmallow fluff (about 1/2 cup) to the cream cheese mixture and beat until thoroughly combined and light. With the mixer set to low speed, slowly pour in the sweetened condensed milk and vanilla extract. Once incorporated, increase the mixer speed to high and beat until a smooth, airy cheesecake batter forms. Carefully spoon this luscious cheesecake mixture on top of the chocolate ganache layer in each serving container, leaving a slight space at the top for additional chocolate and marshmallow toppings later.
  4. For an extra touch of decadence, add another teaspoon of the remaining chocolate ganache on top of the cheesecake layer. If desired, sprinkle some reserved graham cracker crumbs for texture and visual appeal. Place the individual cheesecakes in the refrigerator and allow them to chill for a minimum of 4 to 6 hours, or preferably overnight, to set properly. When you are ready to serve these delightful treats, take the other half of your marshmallow fluff (about 1/2 cup), warm it slightly again in the microwave if needed, and gently spoon about a tablespoon or so on top of each cheesecake. For the classic toasted marshmallow finish, cut three large marshmallows in half. The easiest way to toast them for these cheesecakes is using a kitchen torch or holding them briefly over a gas burner on your stove; they will puff up beautifully. Be careful not to over-broil them in an oven, as this often results in only one side toasting and they can deflate, looking like “deflated top hats” as I once experienced! Place a toasted marshmallow half on top of each cheesecake. Finish with an extra sprinkle of graham crumbs if you like, and serve immediately to enjoy this irresistible S’mores creation!
