As I type this from a bustling outdoor eating area at Whole Foods, fueled by a craving for delicious food, I can’t help but reminisce about past culinary adventures. My husband, Eric, and I are currently in the virtual queue for a U2 concert tonight. For those who know us, you know Eric’s U2 obsession is practically legendary. I’ve mentioned it before, and it’s always a fun backdrop to our lives.

While he’s buzzing with excitement for the music and, let’s be honest, probably swooning over The Edge, I’m secretly dreaming of bacon-wrapped hot dogs. No, they aren’t part of the concert menu (though imagine how incredible that would be!). But I know from experience that after the show wraps up around midnight, dozens of hot dog carts will magically appear, ready to sell me some overpriced, utterly delicious street food. It’s a tradition, almost as comforting as the Salisbury steak we’re about to dive into. In fact, I loved them so much, I even recreated the recipe for Bacon Wrapped Hot Dogs – they’re a must-try this summer!

The Ultimate Homemade Salisbury Steak Recipe

Now, let’s talk about something truly special that you absolutely need to make: Salisbury Steak. Seriously, get on it, stat! It’s wonderfully satisfying how we take humble ground beef, expertly fry it, and then elevate it to something grand enough to be called “steak.” Just a few weeks ago, I made an earlier version of this very recipe for my family. As we gathered around the dinner table, we naturally started debating the origins of Salisbury steak. I ventured, “German?” My mom speculated, “English?” My brother Nathan and I, in perfect unison, declared, “No way, it’s far too delicious to be British!” (No offense intended to my friends across the pond – truly! But if you’re feeling feisty, feel free to send me a genuinely delicious British recipe to set me straight. Just, please, no blood sausage. That would only confirm my biases!)

This recipe isn’t just about deliciousness; it’s about simplicity and rich, comforting flavors. It’s a hearty meal that feels both gourmet and incredibly approachable. The secret lies in the perfectly seasoned ground beef patties, pan-fried to a beautiful golden brown, and then simmered in a luscious, deeply savory mushroom gravy. It’s the kind of meal that wraps you in a warm hug, making it ideal for a cozy weeknight or a special Sunday dinner. Plus, it comes together in just 30 minutes, proving that incredible flavor doesn’t have to take all day. Get ready to add this Salisbury Steak to your regular dinner rotation – your taste buds will thank you!

What is Salisbury Steak? A Brief History

Our little family debate about Salisbury steak’s origins led us down an interesting rabbit hole! As it turns out, Salisbury steak is quintessentially American, and its creation is attributed to a rather eccentric physician named Dr. James Henry Salisbury. In the late 19th century, Dr. Salisbury was one of the earliest proponents of what we might now call a “health fad.” His peculiar dietary theories were centered around the belief that vegetables released “toxins” into the human body (a claim certainly not supported by modern science!).

He was utterly convinced that for optimal health, everyone should consume copious amounts of, wait for it, *boiled ground beef* – three times a day, no less! Can you imagine? Boiled ground beef for breakfast, lunch, and dinner? The thought alone is enough to send shivers down one’s spine. Thankfully, someone with culinary common sense intervened and significantly improved upon Dr. Salisbury’s rather unappetizing prescription. They introduced the brilliant idea of frying the ground beef patties and, perhaps most importantly, drenching them in a rich, savory mushroom gravy. It’s safe to say that this inspired culinary twist saved Salisbury steak from being relegated to the annals of history as a truly dreadful health food. We can all be grateful for that delicious transformation!

What Cut of Meat is Salisbury Steak? (Hint: It’s Not Steak!)

Despite its name, Salisbury steak isn’t actually a traditional cut of steak. This classic dish cleverly uses humble ground beef, transforming it into something incredibly delicious and comforting. We take seasoned ground beef, shape it into delectable patties, fry them until they’re beautifully browned, and then generously smother them in a rich, homemade mushroom gravy. It’s a brilliant way to enjoy a fancy-sounding, homey, and utterly satisfying comfort food dinner without the premium price tag of a true steak. Think of it as an elevated, gourmet hamburger patty, designed specifically to soak up all that incredible gravy.

Step-by-Step Guide to Making Homemade Salisbury Steak

You absolutely have to try this version of Salisbury steak. It’s not just another recipe; it’s a guaranteed crowd-pleaser that delivers incredible flavor with surprisingly little effort. The best part? It comes together in just about half an hour, making it perfect for those busy weeknights when you still crave a homemade, comforting meal. Let me walk you through how easily you can create this culinary masterpiece.

We begin by preparing our ground beef patties. This involves finely chopping some fresh mushrooms and onions, then mixing them into the ground beef along with panko breadcrumbs and a medley of other spices. The process is very similar to making meatballs or a classic meatloaf, aiming for a perfectly seasoned and tender mixture. Once combined, you’ll gently shape this mixture into elegant oval-shaped patties. The goal here is not to overwork the meat, which can lead to tough steaks. Instead of baking, we take a different, more flavorful approach: frying them until they achieve a gorgeous, golden-brown crust. This initial sear locks in juices and builds incredible flavor.

After the patties are seared, they’re set aside while you create the star of the show: the rich, savory mushroom gravy. In the same pan, you’ll sauté the remaining onions and sliced mushrooms until tender, then whisk in beef broth and a touch of flour to create a velvety, thick sauce. Finally, the beautifully seared patties are returned to the pan, nestling in that luxurious gravy. They’ll simmer gently, allowing the flavors to meld and the patties to cook through to tender perfection. The aroma alone will have everyone rushing to the table!

These Salisbury steaks truly are incredibly quick and satisfying. If you’re anything like me, you probably always have a pound of ground beef tucked away in your freezer or fridge, ready for action. Pair this dish with some crisp green beans or a fresh, simple salad, and dinner is effortlessly DONE. But, and I cannot stress this enough, for the complete, authentic, and utterly soul-satisfying experience, you absolutely MUST serve this with my Aunt Shirley’s Creamy Mashed Potatoes. This pairing is essentially non-negotiable; the potatoes are the perfect vehicle for soaking up every last drop of that glorious mushroom gravy. It’s a match made in comfort food heaven!

Yes, I know, it’s summertime, and I’m “supposed” to be posting light and refreshing salad recipes for you all. Boringggggg. (Which, incidentally, explains why I have only about 5 salads on my entire site.) But here’s a little secret: I recently created a salad that even *I* am head over heels in love with, and that truly means something! So, if I love it, you are guaranteed to love it too. It’s actually a fantastic copycat recipe from Buca di Beppo. (If you’ve ever been there, you know exactly which iconic salad I’m talking about!) [UPDATE! You can now find the recipe here for my incredible Apple Gorgonzola Salad.] But until you get around to making that, please, do yourself a favor and dive into some glorious Salisbury steak!

Storing and Reheating Your Salisbury Steak

One of the many great things about this homemade Salisbury steak recipe is that it makes for fantastic leftovers. You can easily prepare a larger batch and enjoy the comforting flavors for days to come, or even freeze some for a quick, future meal. Here’s how to properly store and reheat your Salisbury steak to maintain its deliciousness.

This delectable homemade Salisbury steak, complete with its rich mushroom gravy, will keep beautifully in an airtight container in the refrigerator for about 3-4 days. When you’re ready to enjoy it again, reheating is a breeze. You can simply warm individual portions in the microwave for a quick reheat, or if you prefer a stovetop method, gently heat them in a skillet over medium-low heat until thoroughly warmed through. Adding a splash of extra beef broth or water can help loosen the gravy if it has thickened too much in the fridge.

If you’re looking to extend the life of your Salisbury steaks even further, they freeze wonderfully. Allow the cooked steaks and gravy to cool completely after cooking. For best results, I recommend wrapping the individual Salisbury steak patties tightly in plastic wrap, then placing them in a freezer-safe ziplock bag or an airtight container. Freeze the mushroom gravy separately in its own ziplock bag or container. This separate freezing helps maintain the texture of both components. When you’re ready to enjoy them, simply transfer the frozen steaks and gravy to the refrigerator and let them thaw overnight. Once thawed, you can reheat them on the stovetop over low heat, stirring occasionally, or warm them gently in the microwave until hot and bubbling. This preparation makes for a perfect make-ahead meal that’s ready whenever you need a dose of comforting flavor!

Salisbury Steak FAQs: All Your Questions Answered

What is the difference between hamburger steak and Salisbury Steak?

While both dishes feature ground beef patties, Salisbury steak is a more refined and flavorful creation. A hamburger steak is typically just a plain ground beef patty, seasoned simply with salt and pepper, resembling a basic hamburger without the bun. Salisbury steak, however, elevates the experience significantly. Our recipe incorporates ingredients like eggs, panko breadcrumbs, minced onions and mushrooms, tomato paste, whole grain mustard, Worcestershire sauce, and even a touch of liquid smoke. These additions are crucial; they not only bind the patties beautifully but also infuse them with incredible tenderness, moisture, and a complex depth of flavor. Furthermore, a Salisbury steak is always served with a rich, savory mushroom gravy, which is a key component distinguishing it from a simple hamburger steak. This gravy is what makes it pair so perfectly with mashed potatoes, rice, or other hearty sides.

How do you keep Salisbury Steak from falling apart?

Keeping Salisbury steak patties intact during cooking is quite simple when you use the right binding ingredients. In this Salisbury steak recipe, the egg and panko breadcrumbs play a vital role in holding the ground beef mixture together. The egg acts as a powerful binder, while the panko breadcrumbs absorb moisture, helping to create a cohesive patty that holds its shape. As long as you include these essential ingredients and handle the mixture gently without overworking it, your Salisbury steaks should stay perfectly formed throughout the frying and simmering process, ensuring tender and delicious results without any crumbling.

A juicy Salisbury Steak with sautéed mushrooms and brown gravy is served over creamy mashed potatoes, garnished with chopped parsley. A spoon drizzles extra savory gravy over the dish.
Salisbury Steak sounds so fancy but it’s SO easy to make. They are basically mini meatloaves fried and served with mushroom gravy. It’s the perfect comfort food and only takes 30 minutes to make. You have to serve this with Creamy Mashed Potatoes to get the full effect!

Ingredients

For the steaks

  • 1 cup mushrooms, finely chopped
  • 1 large onion, chopped and divided
  • 1 & 1/2 pounds ground beef
  • 1 egg
  • 1/3 cup panko breadcrumbs
  • 2 tablespoons tomato paste*
  • 2 tablespoons whole grain mustard**
  • 1 teaspoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon liquid smoke, optional
  • 1 & 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon oil, for frying

For the gravy

  • 1 tablespoon butter
  • 2 & 1/2 cups sliced mushrooms
  • 1 teaspoon minced garlic
  • 2 & 1/2 cups beef broth***
  • 2 & 1/2 tablespoons flour
  • 1 teaspoon whole grain mustard**
  • 1 tablespoon Worcestershire sauce
  • parsley, to garnish
  • Creamy Mashed Potatoes, to serve with

Instructions

  • Begin by preparing your onions and mushrooms. Finely chop one large onion, then set aside approximately 1/4 cup of the finely chopped onion for your steak patties. The remaining chopped onion will be used for the gravy.
  • Next, finely chop one cup of mushrooms and add them to a large mixing bowl with the reserved 1/4 cup of finely chopped onion. Then, slice about 2 and 1/2 cups of additional mushrooms and set these aside to incorporate into your delicious gravy later. (For reference, I typically purchase about 1 pound of mushrooms for this recipe and use roughly 3/4 of it.)
  • Into the large bowl containing the finely chopped onion and mushrooms, add the ground beef, 1 egg, panko breadcrumbs, tomato paste, whole grain mustard, 1 teaspoon of minced garlic (jarred works perfectly for convenience), 1 tablespoon of Worcestershire sauce, 1/4 teaspoon of liquid smoke (if using), 1 and 1/4 teaspoons of kosher salt, 3/4 teaspoon of black pepper, and 1 teaspoon of onion powder.
  • Now, it’s time to get your hands dirty! Use your hands to thoroughly, but gently, combine all the meat mixture ingredients. While it might feel a bit unusual, using your hands is the most effective way to ensure everything is evenly incorporated without overworking the meat, which can result in tougher patties. This technique is also key for making tender meatloaf and flavorful meatballs.
  • Divide the seasoned meat mixture into 6 equal portions and carefully shape each portion into an oval-shaped patty, roughly 1/2 inch thick.
  • Heat a large skillet (cast iron works wonderfully here!) over medium-high heat. Add 1 tablespoon of oil to the pan and swirl it around to coat the bottom. Once the oil begins to shimmer, carefully add as many meat patties as will comfortably fit in a single layer without crowding the pan. Overcrowding can cause the patties to steam rather than sear and brown beautifully. You may need to cook the meat in 2 batches.
  • Sear the patties for approximately 2 minutes per side, until they develop a rich, golden-brown crust. Don’t worry if the patties are not fully cooked through in the middle at this stage; they will finish cooking later in the gravy.
  • Once seared, remove the patties (your “steaks”) from the skillet and transfer them to a plate. Repeat the searing process with any remaining patties.
  • With all the patties removed, add 1 tablespoon of butter to the hot skillet, allowing it to melt. Then, add the reserved chopped onion and sliced mushrooms that you prepared earlier. Sauté these vegetables for about 5 minutes, until the onions are softened and the mushrooms are tender. Add the remaining minced garlic and continue to sauté for another minute until fragrant.
  • In a separate glass measuring cup or small bowl, whisk together the beef broth and flour until no lumps remain. This creates a slurry that will thicken your gravy smoothly.
  • Slowly pour the beef broth and flour mixture into the skillet with the sautéed vegetables, whisking constantly to prevent lumps from forming. Stir in 1 teaspoon of whole grain mustard and 1 tablespoon of Worcestershire sauce. Continue to stir and cook over medium-high heat for a couple of minutes until the mixture begins to simmer and thicken into a rich gravy.
  • Gently return the seared Salisbury steaks to the pan, nestling them into the simmering gravy. Reduce the heat to a low simmer, cover the skillet, and allow the steaks to cook for another 5 minutes or so, or until they are cooked through and tender.
  • To finish, sprinkle generously with freshly chopped parsley for a burst of color and freshness. Serve your incredible homemade Salisbury steak immediately with my Aunt Shirley’s Famous Creamy Mashed Potatoes! You truly cannot beat this ultimate comfort food combination!

Notes

*For those recipes calling for odd tomato paste measurements, I highly recommend buying tomato paste in a tube (like this). It keeps fresh in the fridge, so you never have to deal with half-used cans of leftover paste going to waste!

**If you don’t have whole grain mustard on hand, Dijon mustard makes a fantastic substitute and works just as great in this recipe!

***For the most flavorful beef broth, I always, always use Better Than Bouillon Base. The ratio is simple: 1 teaspoon of beef base plus 1 cup of water yields 1 cup of rich broth. So, for this recipe, you’ll use 2 and 1/2 cups of water and 2 and 1/2 teaspoons of the base. It’s truly my secret weapon for adding deep, savory flavor to so many of my favorite recipes!
