Everybody loves pepperoni, right? These super tender meatballs with a little bit of a pizza kick are easy and so good!
Ingredients
- 1 (6-oz) package sliced pepperoni
- 8 ounces mushrooms
- 1/4 medium onion
- 2 cloves garlic
- 1 pound ground beef
- 2 eggs
- 3/4 cup milk
- 3/4 cup panko breadcrumbs, or quick oats
- 1 & 1/2 teaspoons salt
- 3/4 teaspoon pepper
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 450 degrees F (230°C).
- Add the pepperoni to a food processor.* Pulse thoroughly until it is completely ground. Transfer to a large bowl.
- Add the mushrooms, onion, and garlic to the food processor and pulse until finely ground. Despite its questionable appearance, add this mixture to the bowl with the pepperoni.
- Add the ground beef, eggs, milk, breadcrumbs (or quick oats), salt, pepper, and paprika to the bowl.
- Line a large baking sheet with foil and coat generously with nonstick spray.
- Using your hands, thoroughly combine the mixture. While it may feel a bit messy, this method ensures better incorporation of ingredients and results in more tender meatballs than using a spoon.
- Form the meatball mixture into balls slightly smaller than a golf ball. Ensure they are uniform in size for even cooking.
