Pan-seared salmon always feels so fancy, but it is really easy to make, and fast! Cherry tomatoes star in this dish, along with marinated mozzarella and oregano.
Ingredients
- 4 (4-oz) salmon fillets, fresh or frozen
- Salt and pepper, to taste
- 2 teaspoons flour
- 1 & 1/2 tablespoons olive oil*
- 1 medium shallot, sliced
- 2 cloves garlic, smashed and sliced thin
- 2 (12-oz) cups cherry tomatoes, red or yellow**
- 1/2 cup pitted Kalamata olives
- 12 ounces marinated mozzarella balls***
- 1 tablespoon fresh oregano, to garnish (optional)
Instructions
- If using frozen salmon, thaw it completely. Pat the salmon fillets dry thoroughly on both sides with paper towels.
- Season the skin side of the salmon generously with salt and pepper. If your salmon has no skin, season both sides. Lightly sprinkle about 1 teaspoon of flour evenly over the seasoned side (usually the skin side).
- Heat a wide skillet (cast iron works beautifully) over medium-high heat until very hot. Add 1 and 1/2 tablespoons of olive oil to the pan.
- Carefully place the salmon fillets, skin side down, into the hot skillet. Sear for about 3-4 minutes, or until the skin is deeply golden brown and crispy. Before flipping, sprinkle the un-seared side of the salmon with salt, pepper, and the remaining 1 teaspoon of flour.
- Flip the salmon fillets and cook for another 1-2 minutes, just until the salmon is barely starting to flake in the center. Avoid overcooking to keep the salmon moist. Remove the cooked salmon to a plate and cover it loosely to keep warm (a microwave acts as a temporary warming drawer if not turned on).
- If the pan is dry, add a little more olive oil. Reduce the heat to medium and add the sliced shallots. Sauté for 1-2 minutes until softened. Add the thinly sliced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
- Wash the cherry tomatoes and halve any particularly large ones. Add the tomatoes to the pan with the shallots and garlic. Cook for 3-5 minutes, stirring occasionally, until the tomatoes begin to soften and a few have burst, releasing their juices.
- If desired, halve the Kalamata olives. Stir them into the pan with the tomatoes and immediately turn off the heat.
- Return the pan-seared salmon fillets to the skillet, nestling them among the tomatoes and olives.
- Allow the mixture in the pan to cool slightly before adding the marinated mozzarella balls. You want them to soften gently but not fully melt and lose their shape.
- Garnish generously with fresh oregano leaves, or sprinkle with 1-2 teaspoons of dried oregano if fresh is unavailable.
