  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup cocoa powder (Dutch-processed or natural, depending on desired depth)
  • 1/2 cup water
  • 1 cup buttermilk (essential for moistness and flavor)
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract (for an extra tropical hint)
  • 1/2 cup salted butter, softened to room temperature
  • 1 cup granulated white sugar
  • 1 cup packed brown sugar
  • 2 large eggs

For the Coconut Custard:

  • 1 cup Almond Breeze Almondmilk Coconutmilk Vanilla Unsweetened (or your preferred coconut milk beverage)
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 egg yolks
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon coconut extract

Instructions

  • To prepare your baking pan, preheat your oven to 350 degrees F (175 C). Thoroughly grease a bundt pan, ensuring every crevice is coated. For a clean finish, lightly dust the greased pan with a little cocoa powder instead of flour; this prevents white marks on your beautiful chocolate cake.
  • In a medium-sized bowl, carefully sift the 2 cups of cake flour. Sifting ensures a lighter, more tender crumb for your cake. Stir in the baking soda and salt, ensuring these dry ingredients are well combined. Set this aside.
  • In a separate medium bowl, whisk together the cocoa powder, water, buttermilk, 1 teaspoon of vanilla extract, and 1 teaspoon of coconut extract until smooth. This creates a flavorful wet mixture that will later be incorporated into the batter.
  • Using a large mixing bowl or a stand mixer fitted with the paddle attachment, beat the softened salted butter until it’s light and fluffy. Make sure to scrape down the sides of the bowl occasionally to ensure even mixing. Add both the white and brown sugars and continue beating for another minute until thoroughly combined and creamy. Incorporate the 2 large eggs, beating them in very well one at a time, again scraping the sides of the bowl to ensure all ingredients are fully integrated.
  • Alternately add the wet and dry ingredients to the butter mixture. Begin by adding half of the cocoa mixture, beating until just combined. Then, add half of the sifted flour mixture and beat again. Repeat this process with the remaining cocoa mixture and flour mixture. Mix until everything is just combined, being careful not to overmix, which can lead to a dry cake. Always scrape down the sides of the bowl after each addition to ensure a homogenous batter.
  • Carefully pour the rich chocolate cake batter into your prepared bundt pan, ensuring it’s evenly distributed. Place the pan into the preheated 350-degree F (175 C) oven.
  • Bake the cake for approximately 32-36 minutes. The exact baking time may vary based on your oven, so start checking for doneness around the 30-minute mark. The cake is ready when a wooden toothpick inserted into the center comes out clean, and the edges of the cake have just begun to pull away slightly from the sides of the pan.
  • Once baked, remove the cake from the oven and let it cool in the pan for exactly 15 minutes. This cooling period is crucial for the cake to set and ensures it will release cleanly from the pan. After 15 minutes, gently loosen the edges of the cake with a thin knife or offset spatula, then invert the cake onto a wire cooling rack or a decorative cake plate to cool completely.
  • While the cake is finishing up its baking or cooling, begin preparing the luxurious coconut custard sauce. In a medium saucepan, combine the Almond Breeze Almondmilk Coconutmilk (or your chosen coconut milk beverage) with the heavy cream. Place the saucepan over medium heat and stir in the granulated sugar.
  • Stir the liquid mixture occasionally for about 4-5 minutes, allowing the sugar to dissolve completely and the liquid to heat through until it’s just about to reach a boil (you’ll see small bubbles forming around the edges). Meanwhile, in a small separate bowl, vigorously whisk together the 4 egg yolks.
  • To prevent the egg yolks from curdling, you need to temper them. This means slowly bringing their temperature up to match the hot milk mixture. Gradually add about half a cup of the hot milk mixture to the whisked egg yolks, whisking constantly and vigorously as you pour. Once tempered, slowly pour the entire egg yolk mixture back into the saucepan with the remaining hot milk, continuing to whisk constantly to ensure a smooth, creamy custard without lumps.
  • Continue to cook the custard over medium heat for another 7-10 minutes, stirring frequently, until it just barely starts to boil. At this point, the custard should visibly begin to thicken. In a very small bowl, combine 1 tablespoon of cornstarch with 1 tablespoon of COLD water to create a slurry. Add this cornstarch slurry to the custard in the saucepan and stir continuously. If the custard starts to bubble or “pop,” reduce the heat to low to prevent scorching.
  • Keep stirring the custard over low heat until it reaches your desired thickness. A good indicator is when you can drag your whisk across the surface and see distinct marks, or when the custard coats the back of a spoon without running off too quickly. This consistency ensures a luxurious, rich topping for your cake.
  • Remove the thickened custard from the heat immediately. Stir in the salt, almond extract, and the additional coconut extract. The extracts enhance the flavor, while the salt balances the sweetness. Allow the custard to cool slightly before drizzling.
