These Pumpkin Cupcakes are made extra moist and flavorful thanks to the addition of browned butter! Top them off with a sophisticated Maple Pecan Buttercream Frosting and you have autumn’s new favorite cupcake. They would be a perfect Thanksgiving dessert if your family is not into pie!

Ingredients

For the cupcakes

  • 3/4 cup butter, (1 and 1/2 sticks)
  • 1 & 2/3 cups flour, spooned and leveled
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 cup pumpkin puree, *not pumpkin pie filling
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla
  • 2 eggs
  • 1 batch Maple Pecan Frosting, click for the recipe
  • toasted pecan halves, for topping
  • maple syrup, to garnish

Instructions

  1. Preheat your oven to 325 degrees F (160 C) and position an oven rack in the center. Line two muffin tins with 18-20 paper cupcake liners.
  2. In a 2 or 3 quart saucepan, melt 3/4 cup butter over medium heat. Stay attentive and stir occasionally. The butter will bubble and form a thick white foam. This foam will then recede, and you’ll begin to see small brown “bits” forming at the bottom of the pan. Stir these bits and take a moment to smell the nutty aroma. Once you see brown specks and smell that distinctive nutty scent, your butter is browned. Remove it from the heat immediately, as it can go from browned to burned very quickly. Set aside to cool slightly.
  3. In a large bowl or the bowl of a stand mixer, whisk together 1 cup pumpkin puree (ensure it’s not pie filling), 1 cup brown sugar, and 1/2 cup granulated sugar until well combined. Stir in 1/2 teaspoon vanilla. Add the eggs one at a time, beating thoroughly after each addition to ensure full incorporation.
  4. Once the browned butter has cooled to a warm, but not hot, temperature (hot butter could curdle the eggs), pour it into the pumpkin mixture and stir vigorously. Make sure to scrape the bottom and sides of the bowl to fully integrate the browned butter and its flavorful bits.
  5. In a separate medium bowl, whisk together the dry ingredients: 1 and 2/3 cups flour, 2 teaspoons baking powder, 1 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon cloves. Gradually add this flour mixture to the wet batter in increments, stirring gently after each addition. Mix only until just combined; avoid overmixing. A few small lumps are acceptable, but ensure there are no visible streaks of dry flour. Overmixing can lead to tough cupcakes.
  6. Divide the batter evenly among the prepared cupcake liners, filling each with approximately 1/4 cup of batter.
  7. Bake the cupcakes at 325 degrees F (160 C) for 18-20 minutes, baking one pan at a time in the center of the oven. To check for doneness, insert a toothpick into the center of a cupcake; it should come out clean. Alternatively, gently press your finger into the top of a cupcake – if it springs back immediately, it’s done. If your finger leaves an indentation, bake for a couple more minutes. (If you only have one muffin tin, cool it in the fridge for a few minutes before baking the next batch.)
  8. Within 3-4 minutes of removing the cupcakes from the oven, carefully transfer them to a wire cooling rack to cool completely. This step is crucial to prevent the bottoms of the cupcakes from becoming soggy. Exercise caution to avoid burning yourself.
  9. Once the cupcakes are completely cool, frost them generously with Maple Pecan Frosting! Click here for the detailed recipe. For a professional touch, I use a pastry bag and a large star tip, but you can also snip the corner off a ziplock bag or simply frost them with a butter knife for a rustic look!
  10. For an extra flourish, top each frosted cupcake with a toasted pecan half and a drizzle of maple syrup. This step is entirely optional but highly recommended for an added layer of flavor and elegance.

Notes

*This recipe yields 18-20 cupcakes with 1 cup of pumpkin puree. If you wish to double the recipe to make 35-38 cupcakes, you can use 1 (15-ounce) can of pumpkin puree. While this is slightly less than 2 full cups, I’ve tested it, and it works perfectly. Remember to also double the frosting recipe if you double the cupcakes.
