It’s the foundational ingredient that makes those sandwiches legendary, and it’s equally stunning as a standalone roast.

What Exactly is Mojo Pork?

First, let’s clear up the pronunciation: it’s “moe-ho,” not “moe-joe.” In Spanish, the verb “mojar” means “to wet,” and that’s precisely what we do with this pork – we drench it in an exquisitely flavorful, citrus-herb marinade. Mojo pork is a cornerstone of Cuban cuisine, famed for its distinctive tangy, garlicky, and herbaceous profile. This traditional dish embodies the essence of Cuban home cooking: simple ingredients yielding complex, unforgettable flavors.

The magic of Mojo lies in its marinade. It’s a powerful blend designed not just to flavor the meat but also to tenderize it, resulting in a roast that’s incredibly juicy and fork-tender. This method of slow-roasting a marinated pork shoulder is a testament to culinary tradition, passed down through generations, ensuring every bite is a journey to the sun-drenched streets of Havana.

Key Ingredients for the Perfect Mojo Pork

The beauty of this Cuban Mojo Pork recipe lies in its accessible yet impactful ingredients. Each component plays a vital role in creating the signature flavor profile. Here’s a deeper look at what you’ll need to gather:

  • Extra Virgin Olive Oil: The base of our marinade, helping to carry flavors and keep the pork moist.
  • Orange Zest: Provides an intense burst of citrus aroma and essential oils.
  • Fresh Orange Juice: Offers a sweet and tangy acidity that tenderizes the meat.
  • Fresh Lime Juice: Adds a sharper, brighter tang, crucial for balancing the flavors and mimicking traditional sour oranges.
  • Cilantro: Finely chopped, it brings a fresh, herbaceous note.
  • Mint Leaves: A surprising but delightful addition that adds a cool, aromatic complexity to the marinade.
  • Minced Garlic: The heart of Cuban flavors, providing a pungent, savory depth. Don’t skimp on the garlic!
  • Oregano (fresh or dried): Contributes earthy, peppery undertones.
  • Ground Cumin: A classic spice in Cuban cooking, offering warmth and a distinctive savory aroma.
  • Kosher Salt and Pepper: Essential for seasoning the pork and enhancing all the other flavors.
  • Pork Shoulder (Boston Butt or Picnic Roast): The ideal cut for slow roasting, ensuring incredible tenderness.

Choosing the Best Pork Cut for Mojo

Navigating the meat aisle can sometimes feel like a puzzle with all the different labels: Pork Shoulder, Boston Butt, Picnic Roast, Blade Roast, Pork Butt. The great news is that for this recipe, many of these terms refer to the same part of the pig – the upper shoulder – which is absolutely perfect for Mojo Pork. This cut, rich in intramuscular fat and connective tissue, breaks down beautifully during slow roasting, resulting in exceptionally tender and juicy meat.

Whether you choose a bone-in or boneless pork shoulder, both will yield delicious results. A bone-in cut often imparts a deeper, richer flavor to the roast, while a boneless cut offers convenience for carving. Whichever you select, ensure it’s a single, solid piece, typically around 3.5 to 4 pounds, to allow for even marination and cooking.

Mastering Cuban Mojo Pork: A Step-by-Step Guide

Crafting this flavorful Cuban Mojo Pork is a straightforward process, but understanding each step ensures a perfect roast every time. Here’s a detailed overview of how to achieve culinary perfection (for full instructions, please refer to the recipe card below):

  • Prepare the Marinade: Begin by combining all the vibrant marinade ingredients. If you have a food processor, it’s excellent for finely chopping the fresh herbs and garlic quickly. Otherwise, meticulous hand-chopping will work just as well. The goal is to release the maximum flavor from the citrus zest, fresh juices, cilantro, mint, garlic, oregano, and cumin.
  • Marinate the Pork: Place your pork shoulder in a large resealable bag or a non-reactive dish. Pour the aromatic Mojo marinade over the pork, ensuring it’s completely coated. This step is crucial for both tenderizing the meat and infusing it with those incredible Cuban flavors. Allow it to marinate in the refrigerator for at least a few hours, but ideally overnight (12-24 hours) for the deepest flavor penetration.
  • Season and Sear: Once marinated, remove the pork from the bag and pat it dry. Discard the excess marinade. Generously season the pork with kosher salt and freshly ground black pepper. Preheat your oven to a high temperature (425ºF). Place the pork on a wire rack set over a rimmed baking sheet. This initial high-heat roasting creates a beautiful, caramelized, and crispy crust.
  • Slow Roast to Perfection: After about 30 minutes at high heat, reduce the oven temperature to a lower setting (375ºF). Continue roasting for another 90 minutes to 2 hours, or until a meat thermometer inserted into the thickest part of the pork registers 160ºF. This two-stage roasting method ensures a crispy exterior while allowing the interior to become incredibly tender and juicy without drying out.
  • Rest the Roast: Once cooked, remove the pork from the oven. Transfer it to a cutting board, cover it loosely with aluminum foil, and let it rest for a minimum of 20 minutes. This resting period is vital, as it allows the juices to redistribute throughout the meat, resulting in a more succulent and flavorful roast. Skipping this step will cause all those precious juices to run out when you cut into it.
  • Carve and Serve: Finally, carve the rested pork against the grain into desired slices or shred it for sandwiches. Serving it immediately allows you to enjoy the full warmth, aroma, and tenderness of this authentic Cuban delight.

Expert Tips for Unforgettable Mojo Pork

Achieving the best results with your Roasted Cuban Mojo Pork is all about paying attention to a few key details. Here are my top tips and tricks to ensure your roast is nothing short of spectacular:

  • Bone-in vs. Boneless: Flavor vs. Convenience: While the recipe calls for boneless, don’t hesitate to use a bone-in pork shoulder. The bone infuses the meat with extra flavor and moisture during cooking, often resulting in an even juicier roast. Boneless, however, is easier to carve and manage. Both are delicious options!
  • Marination Time is Non-Negotiable: This is arguably the most critical step for a truly flavorful and tender Mojo Pork. The longer the pork marinates, the more thoroughly the citrus, garlic, and herbs penetrate the meat, breaking down tough fibers and imparting deep flavor. Aim for at least 6-8 hours, but ideally, let it sit overnight (12-24 hours) in the refrigerator. Resist the urge to shorten this step!
  • The Two-Stage Roasting Method: Starting the roast at a high temperature (425ºF) for the first 30 minutes is key to developing that coveted crispy, golden-brown crust. After this initial sear, reducing the temperature to 375ºF allows the pork to cook slowly and evenly, ensuring it becomes fall-apart tender without drying out. This technique locks in moisture and builds layers of texture.
  • Always Use a Meat Thermometer: The only reliable way to know if your pork is perfectly cooked is by checking its internal temperature. Insert a meat thermometer into the thickest part of the roast (avoiding the bone, if present). For pork shoulder, aim for an internal temperature of 160ºF. This will result in meat that is safe, tender, and juicy.
  • The Indispensable Resting Period: Once cooked, do NOT slice into your pork immediately. Transfer it to a cutting board, tent it loosely with foil, and let it rest for at least 20 minutes. During this time, the muscle fibers relax, allowing the juices that have migrated to the center of the roast to redistribute throughout the entire piece of meat. This ensures every slice is incredibly juicy and flavorful.
  • Slice Against the Grain: When carving your roast, always cut against the grain of the meat. This shortens the muscle fibers, making each bite much more tender and less chewy. It’s a simple technique that makes a big difference in the final eating experience.
  • Achieve an Extra Crispy Skin (Optional): For an even crispier skin, consider scoring the fat cap of your pork shoulder in a crosshatch pattern before marinating. Ensure the skin is thoroughly patted dry before roasting, and during the high-heat phase, you might even consider a quick blast under the broiler (watch carefully!) if it needs an extra push.

How to Serve Your Cuban Mojo Masterpiece

This versatile Cuban Mojo Pork is fantastic on its own, but it truly shines when incorporated into traditional Cuban dishes. Its rich, tangy, and savory flavors make it a perfect centerpiece for a variety of meals.

Most famously, Mojo Pork is the star ingredient in authentic Cuban sandwiches (Cubanos). These iconic sandwiches feature layers of sliced Mojo pork, ham, Swiss cheese, pickles, and mustard, all pressed and toasted to golden perfection. The combination of textures and flavors is simply legendary, and it’s what truly made me fall in love with Cuban cuisine after watching the movie “Chef.” (Yes, the recipe for this pork and the sandwiches are both inspired by the chef hired for the movie – how cool is that?)

Beyond sandwiches, consider serving your Mojo Pork with classic Cuban sides such as:

  • Congri or Moros y Cristianos: A delicious rice and black beans dish cooked together, infused with savory seasonings.
  • Yuca con Mojo: Boiled yuca (cassava) topped with extra Mojo sauce, offering a delightful starchy contrast.
  • Fried Plantains: Both sweet plantains (maduros) and savory green plantains (tostones) are excellent accompaniments.
  • White Rice and Black Beans: A simple yet satisfying staple that lets the pork’s flavor take center stage.

Don’t limit yourself to traditional pairings; Mojo pork also makes incredible tacos, burrito bowls, or even a flavorful addition to salads. Its robust flavor profile makes it adaptable to many culinary creations.

Storage and Reheating Cuban Pork

Having leftover Cuban Mojo Pork is a delight, as its flavors often deepen with time. Proper storage ensures you can enjoy it for days to come:

  • Refrigeration: Store leftover Mojo pork in an airtight container in the refrigerator for 3-4 days. For best results and to prevent drying out, it’s often better to store larger pieces or whole sections of the roast rather than pre-sliced meat.
  • Freezing: For longer storage, Mojo pork freezes exceptionally well. Wrap individual portions tightly in plastic wrap, then place them in a freezer-safe bag or container. It will last in the freezer for up to 3-4 months. Thaw overnight in the refrigerator before reheating.
  • Reheating for Best Flavor and Texture:
    • Oven Method (Recommended): For optimal results, preheat your oven to 375°F. Wrap the pork (whether a whole piece or slices) tightly in aluminum foil with a splash of broth or water to maintain moisture. Heat for 10-20 minutes, or until thoroughly warmed through. This method helps retain moisture and can even re-crisp the exterior slightly.
    • Microwave Method (Quick): If you’re in a hurry, microwave slices on a plate, covered with a damp paper towel, in 30-second intervals until warm. Be mindful not to overheat, as this can dry out the pork.

Cuban Pork Recipe FAQs

What does Mojo Pork taste like?

Mojo pork offers a truly distinctive and memorable flavor profile. It’s incredibly fresh and vibrant, thanks to the dominant citrus notes from orange and lime. This brightness is perfectly balanced by the pungent, savory depth of generous amounts of garlic, complemented by herbaceous undertones from cilantro and mint, and a warm, earthy finish from cumin and oregano. The meat itself is fall-apart tender, incredibly juicy, and often boasts a delightful crispy crust.

Where does Mojo Pork come from?

Mojo pork is a traditional Cuban pork roast, deeply rooted in the island’s culinary heritage. The concept of “mojo” (marinade or sauce) itself has influences from the Canary Islands, but Cuba developed its own unique citrus and garlic-based version, which became central to dishes like “Lechon Asado.” It’s a staple at Cuban celebrations and family gatherings, cherished for its rich flavor and tender texture.

What is mojo sauce made of?

The quintessential Cuban Mojo sauce is typically made with a blend of key ingredients: sour orange juice (or a combination of fresh orange and lime juice as a substitute), a substantial amount of minced garlic, extra virgin olive oil, fresh oregano (or dried), ground cumin, and often fresh cilantro and mint. While recipes can vary slightly from family to family, these core components are what give Mojo its characteristic tangy, garlicky, and aromatic flavor punch.

What is Lechon Asado?

Lechon Asado translates to “roasted pig” or “roasted pork” in Spanish and is the national dish of Cuba. It traditionally refers to a whole roasted pig, especially during festive occasions. However, in everyday cooking, “Lechon Asado” often refers to a smaller pork roast, typically a pork shoulder, that has been marinated in a Cuban Mojo sauce and then slow-roasted until incredibly tender and flavorful, often with a crispy skin.

Can I make Mojo pork in a slow cooker?

Absolutely! While this recipe focuses on roasting for a crispy crust, Mojo pork can be adapted for a slow cooker. Marinate the pork as instructed, then transfer it to your slow cooker with a small amount of liquid (like chicken broth or more orange juice). Cook on low for 6-8 hours or on high for 3-4 hours, until fork-tender. You won’t get the crispy crust this way, but the flavor will still be fantastic for shredding.

Is Mojo Pork spicy?

Traditional Cuban Mojo pork is generally not spicy. Its flavor profile is characterized by tanginess from citrus, pungency from garlic, and herbaceous notes. However, you can certainly add a touch of heat if you prefer by incorporating finely minced jalapeños or a pinch of red pepper flakes into the marinade.

Cuban Mojo Marinated Pork sliced on a cutting board, ready to serve.
A traditional Cuban roasted pork recipe that is very simple, yet packed with tons of flavor! There is nothing to this pork except an amazing marinade, but it is honestly some of the best meat I’ve ever put in my mouth. Just look at that crust!

Equipment

  • Food processor
  • Meat thermometer
  • Baking sheet

Ingredients

  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup cilantro, finely chopped
  • 1/4 cup lightly packed mint leaves, finely chopped
  • 8 garlic cloves, minced
  • 1 tablespoon minced oregano, or 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • Kosher salt and pepper
  • 3 & 1/2 pounds boneless pork shoulder, in one piece*

Instructions

  • If you have a food processor: Add the orange juice, cilantro leaves, mint leaves, and smashed (not minced) garlic cloves, and pulse until everything is finely chopped. Add this mixture to a ziplock bag, along with the rest of the oil, zest, lime juice, oregano, and cumin.
  • If you don’t have a food processor: In a large ziplock bag or non-reactive dish, combine olive oil, orange zest, orange juice, lime juice, finely chopped cilantro, finely chopped mint, minced garlic, oregano, and cumin. Stir well to mix all ingredients thoroughly, then add the pork shoulder.
  • Ensure the pork is fully coated in the marinade. Seal the bag (or cover the dish), place it in a baking dish (to catch any leaks), and refrigerate overnight, or for a minimum of 6-8 hours.
  • Preheat your oven to 425 degrees F (218°C). Place a wire rack (like a cooling rack) over a rimmed baking sheet.
  • Remove the pork from the marinade, pat it thoroughly dry with paper towels (this helps with browning), and discard the remaining marinade. Season the pork generously on all sides with kosher salt and freshly ground black pepper.
  • Place the seasoned pork on the prepared wire rack. Roast at 425 degrees F for 30 minutes. The exterior should develop a beautiful, lightly browned, and crispy crust.
  • Reduce the oven temperature to 375 degrees F (190°C). Continue to roast for another 1 hour and 20-30 minutes, or until a meat thermometer inserted into the thickest part reads 160°F (71°C).
  • Carefully transfer the roasted pork to a clean cutting board. Cover it loosely with aluminum foil and let it rest for at least 20 minutes before carving. This crucial step ensures the pork remains juicy.
  • Carve the pork against the grain into slices or shred it as desired. Serve immediately and enjoy your authentic Cuban Mojo Pork!
