- 2-3 small carrots
- 2 tablespoons butter
- 1 & 1/2 teaspoons chicken bouillon, *

Slice the cauliflower in half, then in half again. Cut off the stem from each quarter and discard. This makes it easier to process.

Chop the cauliflower into 1-inch pieces. Place about 1/3 of the cauliflower into a food processor and pulse in 1-second intervals until it resembles grains of rice. Avoid over-processing to prevent a mushy texture. Remove the riced cauliflower to a bowl and repeat twice more (you’ll typically do 3 batches per large head of cauliflower).

Peel 2-3 small carrots and roughly chop them. Add these chopped carrots to the food processor and pulse until they are finely minced and similar in size to the riced cauliflower.

Meanwhile, in a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken bouillon and stir until it dissolves and is fragrant. Once hot, add the riced cauliflower and carrots to the skillet.
