BBQ Chicken Bowls are my new go-to summer meal. They bring all the best flavors of a backyard cookout into one healthy, delicious bowl—grilled BBQ chicken, roasted sweet potatoes, baked beans, corn, crisp coleslaw, and a wedge of cornbread. Finish with BBQ sauce and ranch for the ultimate combo. These are perfect made from cookout leftovers, too.

My thirteen-year-old made me laugh the other day with a random question about “buying a ticket ahead of time” so he could go speeding. Teenage logic is endlessly entertaining—this kind of goofy chatter always lightens the drive home.
This is my new dinner favorite
I’ve been loving bowls lately—basically a simple way to combine a main and sides into one satisfying plate. I wanted to capture summer cookout flavors, so I created this BBQ Chicken Bowl. It was a huge hit at my house: flavorful spiced chicken, roasted sweet potatoes seasoned with the same rub, and a variety of sides to build a complete meal. It’s easy to assemble and flexible depending on what you have on hand.

Make this bowl with any BBQ leftovers
This bowl is an excellent way to repurpose leftover cookout food. Instead of letting baked beans, coleslaw, or extra chicken sit unused, turn them into a hearty bowl the next day. The chicken and sweet potatoes pair well with many sides—use whatever you already have: salads, dips, potato or macaroni salads, or leftover beans. You can also mix homemade components with store-bought sides if you want to save time.

Essential ingredients
The bowl pulls together components you may already know and love. Prepare as many elements as you like ahead of time to streamline dinner:
- Chicken: Thighs are my preference for flavor and juiciness, but breasts work fine.
- Sweet potatoes: Roasted and seasoned with the same spice rub as the chicken.
- Coleslaw: A light, lemony slaw makes a bright base for the bowl.
- Cornbread: A moist, slightly sweet cornbread wedge is a nice contrast—store-bought is fine if you’re short on time.
- Pickled red onions: A tangy garnish that brightens every bite.
- BBQ sauce: Use homemade or your favorite store brand for saucy flavor.
- Ranch dressing: Creamy ranch pairs beautifully with BBQ sauce.
- Baked beans: Canned beans are convenient and add comforting flavor—use any cooked beans you like.
How to make a BBQ chicken bowl
Below is an overview of the steps. Most items can be made ahead and stored until you’re ready to assemble.

1. Combine the spice rub in a small bowl. If you already have a favorite BBQ rub, use that instead.
2. Toss diced sweet potatoes with oil and several tablespoons of the spice rub, then roast at 425°F for about 25 minutes until tender and browned at the edges. Keep warm.
3. Rub the remaining spice mix over the chicken and let it rest for at least 10 minutes for the flavors to settle in.

4. Cook the chicken on the stovetop or on the grill. For stovetop cooking, heat a 12-inch sauté pan until hot, add oil, and sear the chicken without crowding the pan. Let it cook undisturbed until it releases easily, then flip and finish until the internal temperature reaches about 160°F for thighs (or follow recommended times for breasts). Rest, then slice.

5. Prepare the greens by chopping romaine and tossing with chopped cilantro if you like. Heat the baked beans on the stove or in the microwave, and have coleslaw and cornbread ready.

6. Assemble each bowl: a bed of romaine and cilantro, roasted sweet potatoes, a scoop of coleslaw, a scoop of baked beans, a wedge of cornbread, and sliced chicken. Garnish with pickled red onions, corn, and jalapeño slices. Drizzle BBQ sauce and ranch before serving.

Ranch and BBQ sauce together are my favorite pairing—they add creaminess and tang that balance the smoky spices.
What to serve with this chicken bowl
These bowls are a full meal on their own, but if you want to expand the spread or feed a crowd, serve them alongside light salads or a fruit salad for dessert. Fresh, simple sides like carrot salad or a strawberry cucumber salad complement the BBQ flavors nicely.

How to store leftovers
Store components separately to preserve texture and flavor. Refrigerate chicken, sweet potatoes, coleslaw, baked beans, and corn in separate airtight containers for up to five days. Keep cornbread wrapped or in a container at room temperature for 2–3 days, or freeze it for longer storage.
To reheat, warm chicken, sweet potatoes, and beans gently in the microwave or in a skillet until heated through. Add cold coleslaw and fresh toppings at the last minute. Many cooked components—chicken, sweet potatoes, beans, and BBQ sauce—can be frozen in individual bags for two to three months; thaw overnight in the fridge before reheating.

More all-in-one dinners
Meals that combine protein, vegetables, and a starch into a single bowl are efficient, nutritious, and easy to customize. They make great weeknight dinners and portable lunches.

- 1 1/2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon mustard powder
- 1/4 teaspoon cayenne pepper, or more to taste
- 2 tablespoons brown sugar
For the sweet potatoes and chicken
- 1 1/2 pounds chicken thighs or breasts
- 1 large sweet potato, chopped
- 1 tablespoon vegetable oil for sweet potatoes
- 1 tablespoon vegetable oil for chicken
To assemble the bowls
- 1 head romaine lettuce, chopped
- 1/2 cup cilantro, chopped (optional)
- 1 batch coleslaw (or store-bought)
- 1 (28-ounce) can baked beans
- 1 1/2 cups frozen corn, thawed
- 1 batch cornbread, optional
To garnish
- Pickled red onions, optional
- 1 jalapeño, sliced
- BBQ sauce, homemade or store-bought
- Ranch dressing, homemade or store-bought
Instructions
- Prep: This recipe shines when made from leftover cookout items, but you can prepare everything fresh. Make coleslaw, pickled onions, and cornbread ahead if desired. Thaw 1 1/2 cups frozen corn.
- Make the spice rub: Combine the salt, pepper, paprika, garlic powder, onion powder, chili powder, cumin, mustard powder, cayenne, and brown sugar in a small bowl.
- Marinate the chicken: Place the chicken in a bowl and rub with about 4 tablespoons of the spice mix. Let sit at room temperature for 10 minutes to let the flavors settle.
- Roast the sweet potatoes: Preheat the oven to 425°F. Peel and chop the sweet potato into 1-inch pieces, toss with 1 tablespoon oil and about 3 tablespoons of the spice rub, and spread on a rimmed baking sheet. Roast for about 25 minutes until browned and tender.
- Cook the chicken – stovetop: Heat a large sauté pan over medium-high heat for a few minutes. Add 1 tablespoon oil, then place the chicken in the hot pan without crowding. Sear undisturbed until it releases easily, 3–4 minutes per side, then reduce heat and cook until the internal temperature reaches about 160°F for thighs. Let rest 5 minutes before slicing.
- Cook the chicken – grill: Preheat the grill to medium-high, oil the grates, and grill the chicken 3 minutes per side to sear. Lower the heat and continue cooking until the thickest part registers about 155°F, then rest and slice.
- Greens and sides: Chop the romaine and cilantro and toss together. Warm the baked beans on the stove or in the microwave.
- Assemble: On a plate or shallow bowl, arrange romaine and cilantro, roasted sweet potatoes, coleslaw, a scoop of baked beans, a wedge of cornbread, and sliced chicken. Garnish with pickled onions, corn, and sliced jalapeños. Drizzle BBQ sauce and ranch over the top.
- Storage: Store components separately in the refrigerator for 3–5 days. Freeze cooked chicken, sweet potatoes, beans, or BBQ sauce in individual bags for 2–3 months; thaw overnight before reheating.
Notes
Nutrition: Nutrition information shown does not include coleslaw, cornbread, baked beans, or garnishes.
Spice rub yield: The rub makes about 7 tablespoons. You can swap in a favorite store-bought BBQ rub if you prefer—just add salt if the blend does not include it.
Salt note: If you only have table salt, use roughly 2 1/4 teaspoons instead of the kosher salt amount listed.
Chicken breasts: If using breasts, follow standard breast cooking times and rest before slicing.
